Coffee Cake with Almond butter topping and Walnuts
winter聽season recipe is here! Coffee Cake it's moist and tender cake topped with Almond Butter and crunchy toasted Walnuts, perfectly suits the cold weather. The rich coffee flavour elevates morning with almond butter and walnuts add nutty flavour to the cake.This cake is wholesome breakfast, a big piece of cake and a glass of warm milk and you are good to go because it has coffee,bake with multigrain flour finally topped with almond butter and walnuts.

Recipe :
Dry Ingredients
2 cups of Multigrain Flour / whole wheat flour.
陆 cup + 2 tablespoon jaggery Powder.
2 tablespoon of chia seeds.
4 tablespoon Instant coffee powder.
1 teaspoon baking powder.
1 teaspoon baking soda.
录 teaspoon salt + 1 pinch of salt.
100gm roasted unsalted almonds.
2 tablespoon unsweetened cocoa powder.
10-12 pieces of whole walnuts.
Wet Ingredients
戮 cup canola oil or any other neutral oil.
录 cup white vinegar / apple cider vinegar.
1 teaspoon vanilla Extract.
陆 cup milk ( dairy / non dairy)
6 tablespoon room temperature water.
Procedure
Grease a round cake moulds with cooking spray or oil and line it with parchment paper.
In small serving bowl add chia seed ground and water mix it and keep it aside that's chia eggs will use it later .
Now heat milk in saucepan and add instant coffee powder mix it ,keep it aside.
In a medium size bowl sieve together flour,baking powder baking soda salt, Keep it aside.
Preheat the oven at 200 degree Celsius.
In large bowl add chia egg Canola Oil, jaggery Powder and whisk it with help of hand whisk for about 5 min or if you are using hand blender then for about 2 - 3 min .
Now add coffee mix , dry Ingredients , vinegar one at a time into large mixing bowl in small portions.
Transfer the batter into the cake mould then put it in the oven in middle rack and bake it for about 40-50 min at 180 degrees Celsius in convection mode.
Once the cake is done take out insert a toothpick into the cake and check if it comes out clean.
Once the cake is completely cool demould it and place it on the wire rack and fill the pipping bag with almond butter and make pattern on top or just spread it evenly with spatula and top it with chopped walnuts.
Almond butter
In a food processor jar add almonds ,pinch of salt ,cocoa powder, 2 tablespoon jaggery Powder and grind it for about 5 minutes make sure the butter is little bit liquidy like chocolate ganache.
