My birthday is coming up on Thursday (July 18th) so today we went up to see my aunt and uncle so that we could go to dinner to celebrate! My in-laws came, too 🤗🤗🤗 I've been struggling with staying on track lately, and was dead set on staying keto through the festivities. My aunt had a ton of keto options for lunch! There were deli meats, cheeses, olives, a Greek salad, and shrimp. Then for dinner we went out and I had halibut topped with baby scallops and shrimp in a light tomato sauce with a side of broccoli rabe (hold the potatoes). 🐟🍤🥬 They brought our some dessert and sang me happy birthday, and I'm pleased to report that I didn't have any of the ice cream! Knowing that it would be unlikely that I'd have time to grab an actual meal at Heathrow in between flights, I opted to scarf down a @burgerking bacon king sans bun + pickles, ketchup, and mustard - because #ketowoe for the win, even when #traveling - in front of my gate before flying from Edinburgh to London. I adore fast food when traveling in the UK/Europe. It's SO MUCH BETTER than it is in the USA. Just my humble opinion! The only snag? They didn't give me any napkins or a fork/knife... Trying to be #ecofriendly perhaps? There wasn't an area to collect those things so I assumed they were in the bag... 🤷🏻‍♀️🤦🏻‍♀️ It was a truly lovely experience dripping grease all over myself and smearing ketchup/mustard all over my face (that I shouldn't have put makeup on in the first place today) before 14 hours of flying/waiting in airports alone. The people on my Edinburgh ➡️ London flight were kind enough to NOT tell me that I had grease all over the bottom of my chin. That was a fun revelation I experienced mid-landing in London. 😣 When this journey is over, I'll look back and laugh. For now, I'm both delighted and annoyed by my new perfume 🍔 I'll stick to iced coffee and water while in Heathrow. PS - don't try and mix collagen with your iced coffee. It will end in disappointment. You'll be happy to have something cold that will perk you up one moment and make you gag the next 👍🏻 What's your most embarrassing travel story?! I could use some cheering up 🤣 In all seriousness, the burger was delicious and I'm happy to have ensured that I got in plenty of protein before the flights. Treated myself to a lovely dinner on my own after I finished up at my conference today! I brought a book and kept it keto/very low carb - just because you see something on the plate doesn't mean I ate it (all) 😉 I started with a small serving of mixed olives and steamed mussels in a Thai seafood broth with lemon, ginger, and coconut milk - out of this world delicious! 😋 For my main course I enjoyed lamb rump over buttery greens and a turnip fondant (didn't really eat the turnip though). For dessert I sipped on unsweetened royal earl grey tea and picked at a cheese plate! I absolutely demolished the blue cheese and brie and that small serving of red grapes - I love the combo of blue cheese and grapes. I had two of those gluten free crackers with the brie. I ate most of the cheddar, but stopped when I was full 🧀🍇 I was so relaxed - I took my time and enjoyed every. single. bite. I left feeling amazing and refreshed. Then I wandered around the city for a bit, and now I'm back in my tiny hotel room in pjs, makeup free, and sleepy. I love Edinburgh 🤗 I've grown to really love dining out alone these days - I bring a book and just completely lose myself in it. I barely even hear the other patrons having their conversations and I really take my time eating, not having to keep up with anyone else. First dinner in Oxford! I'm so excited to go to sleep after... I've been up for 30+ hours at this point. Flight was a nightmare, I had to wait in the hotel lobby for 4.5 hours for my room to be ready. Enjoying one last cup of coffee at home with all of my conveniences... later today I leave for my work trip to the UK! 🛫 I'll be flying into London (arriving early tomorrow) and staying in Oxford so I that can visit with my team on Monday and Tuesday.
