Recipe for Potica (nut roll)

Ingredients for the dough:
500 g white flour
30 g yeast
120 g butter
80 g sugar
3 yolks
2,5 dl milk
rum
lemon or orange peel
vanilla essence
salt
Put flour in abowl, sifted if you like, add salt. In a cup dissolve the yeast in water or milk and in another cup mix the eggs, sugar, rum, vanilla essence, lemon or orange peel. Healt milk, melt fat.
Add hot milk to the flour, stir and add the mixture of eggs, sugar, rum and aromas. Stir again, add dissolved yeast and fat and stir into a medium thick dough. Knead until it is elastic inside and smooth on the outside. Make sure the dough does not stick to the bowl and that it is not too hard. Cover the dough with a PVC sheet and leave to rise. Dough should always rise at room temperature. With rising the quantity of the dough should double. Knead it once and roll it out and spread it with the filling.
Ingredients for the filling:
500 g ground walnuts
100 g sugar
100g honey
1 dl milk
2 eggs
vanilla essence
ground cinnamon
ground cloves
lemon peel
rum
Melt honey in tepid milk, and then add one half of walnuts, sugar, eggs, aromas, spices and rum. Spread the filling on the rolled-out dough and sprinkle with the other half of walnuts. The temperature of the filling should be equal to that of the dough. Roll tightly, put in a mould, prick and leave to rise. Before baking, coat with a thin layer of milk and egg mixture – make sure the holes are not stopped.
Bake 50 minutes at 190°C.

1. Bled, a fairytale town in the Julian Alps with a glacial lake and an island in the middle.
Not to miss: Bled castle perched on the rocks 100 m above the lake, an island in the middle of the lake (you can visit by the « pletna » boat), Bled Vintgar gorge,  Bled cream cake «Kremšnita ». Our favourite: Walking around the lake, rowing on the Bled lake, eating Kremšnita and exploring the villages around it by bike. Eventhough it can get quite crowded in Bled during the summer time, it is worth a visit.

2. Ljubljana, the capital of Slovenia, with only 280.000 people. Small town centre enables you to discover the capital on foot. Not to miss: Ljubljana castle above the city (only a ride with a lift or a short walk away from the main market), old city centre, the cathedral, Three bridges and Prešeren square, Dragon bridge, Franciscan church, Zvezda park and Kongresni square, National library, Tivoli town park, Opera house. Our favorite: Cafés on the banks of the river Ljubljanica, main city market.

3. Postojna cave in the Karst region – 21 km of passages, galleries and halls with limestone sculptures that offer a unique experience of the underground world. Home of a human fish or olm, living only in the darkness of the cave. More than 34 milion visitors in nearly 200 years.
Not to miss: Predjama castle (10 km from Postojna, picturesque and mysterious castle perched in a 123 m high cliff for more than 700 years). Our favorite: Electric train that takes you into the depth of the cave.

4. Piran, ancient small town on the Adriatic Coast, with narrow winding streets, houses huddled close together, influenced by the Venitian architecture. Not to miss: Tartini square (named by Guiseppe Tartini, famous composer and violinist). Our favorite: Walks through the numerous narrow streets, sun bathing on the terrases of beach cafés.

5. Lipica stud farm, home of over 400 white Lipizzaner horses, founded in 1580 and it is one of the oldest stud farms in the world.  Visitors to Lipica can enjoy the real life of the stud farm that reflects the centuries of tradition of horse breeding: guided tours of the farm, training sessions and performances of classical riding school, riding courses or nostalgic carriage drive. Not to miss: Performance of classical riding school. Our favorite: Horse riding school.
