RIBBONED RAW SALAD WITH WHITE WINE VINAIGRETTE YIELDS 4 INGREDIENTS - SALAD SweeTango Apples – cored and ribbon-cut 2pc Persian Cucumber – trimmed and ribbon-cut 2pc Heirloom Carrots – peeled, trimmed, and finely sliced using a peeler 4pc Radishes – rinsed, trimmed, and finely sliced 4pc Arugula – rinsed and spun or pat dry 4cups Fresh Mint – rinsed and leaves tripped 2pc Almond Slices – toasted 1cup Extra Virgin Olive Oil to taste Flaked Sea Salt to taste Fresh Ground Black Pepper to taste TECHNIQUE 1. Gently combine ingredients on a platter or divide between 4 plates, dress with vinaigrette INGREDIENTS – VINAIGRETTE Shallot – peeled and finely sliced 1pc White Wine Vinegar ½cup 125ml Whole Grain Mustard 1tbsp Wildflower Honey 1tbsp Extra Virgin Olive Oil 1½cups 375ml Flaked Sea Salt to taste Fresh Ground Black Pepper to taste TECHNIQUE 1. In a mixing bowl vinegar, mustard, honey, salt and pepper, whisk to incorporate 2. GINGER-LIME CAIPIRINHAS YIELDS 1 INGREDIENTS Cachaça (distilled spirit from sugar cane) 60ml (2oz) Fresh Ginger – peeled and sliced ¼” pc Lime – rinsed and quartered, plus thin wedges for garnish 1pc Raw or Turbinado Sugar 2tsp TECHNIQUE 1. Add fresh ginger, a quartered lime wedge and sugar in a rock glass 2. Using a muddler press down and twist the ginger, and limes to release the juice and the oils from the peel 3.
