Canning on Electric Ceramic Top Stoves & Pressure Canning Beans

It's been a hot second folks but I have a new post! and hopefully a somewhat manageable schedule of ideas to share!
So this week I have a new video up on my YouTube on tips and things to consider when canning on an electric ceramic top stove and then I walk you through pressure canning some dried beans.
Be sure to head over and check the video out in full for all the info, but if you just want to know what you need to consider when canning on an electric stove, keep reading!
The heat resistance glass section is only over the elements where the glass is intended to become hot. So if you are moving a pot off the stove, you DO NOT want to drag it (it can scratch) and you DO NOT want to put it on glass that is not an element. Even putting it on an element may cause issues because it is a sudden change in temperature AND the element may not be able to handle the weight....but more on that in a bit.
I REPEAT...DO NOT DRAG YOUR POT!
Check with the manufacturer on weight restrictions. Some stove tops have one general weight rating on ALL the elements, some do not. My particular stove SAYS any element can be used, but someone I emailed from the company directly said that it would be best to JUST USE THE FRONT MULTISIZED element. So make sure you check
Radiant heat ceramic top stoves cycle the element on and off so it is not a steady heat. This means you might just want to keep an eye on your canning while it is going to make sure it stays boiling the way you want if water bathing, or that the rocker is keeping the right pace of you are pressure canning.
Make sure you can handle lifting a fully loaded pot. When you need to remove the pot from heat, you can't just turn it off like a gas stove, and remember you cant drag it across the stove top. Before starting, make sure you are able to move the fully loaded pot off the stove without hurting your self. If you are pressure canning make sure you can do it smoothly as the pot is under pressure.
You need a flat bottom pot! The regular black and white flecked ones that have a raised edge to minimize the stove top contact is NOT what you want. This ring creates a pocket of air on the stove (because remember its a flat surface not a gas element) and this can cause your stove top to crack.....ask me how I know this....
The flat bottom part of the pot that makes contact with the stove top should not extend beyond the element more than 1 inch all around. Again, this is due to weight and where the heat resistant glass is.

It's official!
We have passed the Eastern Ontario Health unit inspection so I am clear to open up my gluten free bakery and begin selling our teas and other goodies.
So keep an eye out for teas, dried herbs, herbed salts, and baked goods.

Geez it’s been busy! Starting to settle in but it’s a been a bit overwhelming. Started planning the vegetables and fruit for the year. Probably won’t be doing anything permanent until we see the property in the summer. But the annual veggies will be in an existing garden so we can see what grows well as we are now in a different, colder zone. So mix of everything! Including these random seeds I forgot to label so they will be a surprise plant. Some berries will get their forever homes this year because they can kind of go anywhere with good light and soil. The permanent home of the veggies will be the front so we have less grass to cut, but we will probably have to clear trees. A permanent herb garden outside the front door will also be set up and then we will scout for an area in the bush to clear for an orchard. Oh! And also plans to clear a good couple of feet around a giant pond on our property and see if we can clean it up and maybe eventually stock it. Potato and Ramp Wild Turkey Chowder

Some hunters I have met mentioned that when they harvest a turkey they just breast it out. Meaning they keep the breast meat, but don’t have a use for the legs or thighs as they find them tough. Which really, they are. Wild turkeys run to evade predators, fly, climb. They are definitely not their sedentary grocery store cousins. but I love the legs and thigh because they make and amazing soup. So here is a recipe to for you folks to try in hopes that you might find a new use for the rest of that prized bird.
INGREDIENTS
2 tablespoons butter
1 cup ramps, chopped
3 cloves garlic, minced
2 lb potato (910 g), cubed
1-2 turkey legs and thighs (depending on the side of your bird and how much meat you want in the soup
salt, to tastepepper, to taste
6 cups water
2 cups cream or milk
2 sprigs fresh thyme
1 bay leaf
DIRECTIONS
In an instapot, dump in the potatoes, water, thyme and bay leaves. Place the turkey legs and thighs on the top.
Seal the instapot and cook on high for 15 minutes.
While the instapot is cooking heat the butter in a pan.
Add the ramps and garlic and saute until soft. Set aside
Once the timer goes off, “quick release” the instapot.
Remove the turkey and set it aside
Remove the thyme and bay leaves
Using and immersion blender, puree the potatoes and broth.
Add in the cream/milk and cooked ramps and garlic.Stir
Shred the turkey, making sure to remove all the tendons. Personally, I normally dispose of the skin, but you can also pan fry it until crispy and use it as a topping on the soup.
Add the turkey to the soup and stir again.
Add salt and pepper to taste.
For toppings you can use fresh chives, sour cream, olive oil, or hot sauce.

Beginners Guide to Tomatoes

So you want to grow tomatoes. Awesome! There are so many things you can make with tomatoes. BBQ sauce, pasta sauce, salsa, chutney, just preserve them and so much more.
There are also so many different types of tomatoes like little grape or cherry tomatoes, big beefsteaks, saucy San Marzanos...
Since this is just a beginners guide to tomatoes I’m just going to share some general information about caring for tomato plants that is pretty much universal no matter the plabt you chose. The big thing is to know if if your tomato plant is determinate or indeterminate because that will determine how you care for it. 
A determinate tomato will give you an early crop and fruit all at once. They grow to a particular size and then once flowers form, the shoot stops growing. Because the plant is meat to grow to a set size and produce a set amount of fruit, you don’t really need to worry about pruning them. I still always recommend cutting of the bottom branch or two though because it prevents the plant from getting rot of fungus from splash back during a rain fall. These are also easy to grow in pots with a cage because of their set size.
An Indeterminate tomato will keep growing and producing until weather is no longer favourable and requires staking because of how tall they can get. Again, I will cut off the bottom few branches on these to again prevent rot or fungus. I will actually, once the plants get taller, cut off the bottom 1 foot of branches. I will also make sure I am removing any suckers that start to grow because it takes energy from the plant, rather than using it to grow fruit. So plucking these off can give you a higher yield. What a sucker is, is a little growth in the “elbow” of the leaf and stem

If you want to extend your harvest or have plants to share, you can let these suckers grow to about 4-6 inches big and then pluck them off. Plant the sucker in some dirt and give it some water and root hormone. After about 2 weeks you should have some solid root growth so you can transfer it to a larger pot. After another two weeks you should have a sturdy enough plant to replant in the garden.
