Low Carb Brownies
These brownies are ridiculously easy to make, and are nice and moist. Just make sure you store them in an air-tight container so they don’t dry out! Bonus: microwave them for about 10 seconds for a little slice of heaven. These are not the light and fluffy kind of brownies, but the more dense type.
Feedback from my coworkers (who also do low carb!): “They are decadent and hit the spot!” “It has a very mild coconut taste, but not overwhelming. They’re really tasty.”
Ingredients
¾ cup almond flour (about 85g)
1 scoop chocolate protein powder
6 Tbsp unsweetened cocoa powder
½ cup (8 Tbsp) coconut oil
1 tsp vanilla extract
¾ cup Swerve sweetener (or erythritol)
2 large eggs
pinch of salt
Optional: ¼ - ½ cup unsweetened almond milk.
Directions
Preheat oven to 350F degrees. In a small size bowl, mix together the almond flour, protein powder, and Swerve. Set aside. In a medium-large bowl, beat together the eggs, salt, and vanilla extract. Heat the coconut oil just enough to melt it, and beat it together with the eggs. Slowly add the dry mixture into the egg mixture and mix well until everything is completely mixed together. If your mixture feels a little bit dry, you can add some almond milk – but you want this to be a rather thick mixture, not a runny batter.
Grease an 8x8 pan (as you can see from my picture, I forgot to grease the pan, ugh!) and scoop the brownie mixture into the pan. Spread it as evenly as you can using a greased spoon (so that the batter won’t stick to the spoon).
Bake at 350F for 25-30 minutes, until a toothpick comes out of the center clean. Definitely check them at 25 minutes and only cook them longer if absolutely necessary. You may want to check them, and then turn off the oven and let them sit inside for a few minutes if they’re almost done. If you overcook them, they will loose their moisture.
Makes 18 square brownies.

Beans and Greens
Earlier this week I ran through each nutrient, as well as foods having those nutrients in large amounts. I came up with a fairly short list of foods I wanted to make up the majority of my diet. Pinto beans are on the top of my list, as is spinach, discovering that the bulk of any diet should be built upon dried beans and green leafy vegetables.
This wasn’t a thoroughly investigated topic. As a matter of fact, I pulled my information from only one place, The World’s Healthiest Foods. I decided my top five foods from the world’s healthiest foods were lentils, pinto beans, salmon, sunflower seeds, and cooked spinach. However, if you just concentrate on eating legumes, field greens, and fish, you’ll be at the peak of health and spend very little money doing so.
For more variety though, I have a bigger list:
Asparagus, Avocado, Barley, Beef, Beet Greens, Black Beans, Bok Choy, Broccoli, Brown Rice, Brussels Sprouts, Cashews, Chicken, Cod, Collards Greens, Dried Peas, Eggs, Garbanzo Beans, Greens Peas, Kale, Kidney Beans, Lamb, Lentils, Lima Beans, Mushrooms ( Crimini & Shiitake), Mustard Greens, Navy Beans, Oats, Peanuts, Pinto Beans, Pumpkin Seeds, Romaine Lettuce, Sardines, Sesame Seeds, Shrimp, Soybeans, Spinach (cooked), Sunflower Seeds, Sweet Potatoes, Swiss Chard, Tempeh, Tofu, Tuna, Turkey, Turnip Greens,
Notice what this list of foods is lacking - grains! With the exception of barley, there are no grains at the top of the worlds healthiest foods. There’s also no fruit, and very little nuts and vegetables. That’s not to say that you shouldn’t eat these, but they should be the focus. Eating with the seasons would be the best way to incorporate a wide variety of different foods.
With all that said, the recipe below is extremely healthy and pretty darn cheap too. I added six ounces of cubed chicken to increase the protein content and used spinach instead of kale.
Dr. Axe’s Crock-pot Turmeric and Curry Pinto Beans with Bone Broth and Kale
1 pound dry pinto beans 6 cups bone broth 1 ½ teaspoons sea salt 1 tablespoon freshly grated ginger root 1 teaspoon turmeric 1 teaspoon curry 3 garlic cloves, peeled and minced ¼ cup fresh cilantro ½ teaspoon cinnamon Fresh ground black pepper to taste 1 bay leaf 1 teaspoon apple cider vinegar 2 cups chopped kale or spinach

. Photo by @hshphotos “At the turn of the 20th Century there were 3-5 million elephants on earth. Today, there are approximately 415,000 left. A recent census found that there are approximately 100 elephants killed each day and it has been estimated that by the year 2050 there will be none left. The world needs to wake up before it’s too late. We can’t let these magnificent animals be left only in our memories. May the gentle giants win this war against humanity. #wildlife #nature #potd #elephants #savetheelephants #wild #flowers #racingextinction #beautiful #purple https://www.instagram.com/p/BnGQayJFrpN/?utm_source=ig_tumblr_share&igshid=1mij74516ctcz
