Alright, I’m curious… For my fellow fans of the traditional Captain Hook (not OUAT’s Killian), what was it about the character that initially drew you in? Which version first caught your attention? At what point did you look at him and go, “Okay, yup, adding this guy to my list of favs”?
For me, it was when I first watched the Disney film around age 12. In particular, I think it was the scene following the events at Skull Rock when Hook is sick in his cabin that really got to me. We don’t often see scenes in the earlier hand-drawn Disney films that show the villain in a sympathetic light. But Hook? In that moment, he was very broken, very human. And I was intrigued. I read Barrie’s novel shortly thereafter and found that the original character was also interesting and complex. Before long, I was checking out any new form of Peter Pan media I could get my hands on…and the rest is history!

Watching Fox's Peter Pan and the Pirates, it's abundantly clear the pirates have no idea how long they've actually been in Neverland.
The play Peter Pan came out in 1904 and the kids are clearly Victorian. At one point the kids try to teach Peter Victorian manners (they fail...he took "ice breaker" literally).
Hook is dressed in 18th century fashion and plays the Harpischord, which was a popular instrument for that time period.
Furthermore, any time Hook thinks Peter is dead, he tells everyone to sail for The Spanish Main.

It was a common area for pirates, up until the early 19th century. The war for Mexican Independence was 1810. Britain took possession of Florida in 1763 as part of some negotiations. The Spanish Main was no more by the time Wendy and her brothers were even born.
He also tried to annex Neverland in the name of the British Empire, and was decieved when Peter and his friends were dressed up as French musketeers. The uniforms the boys were wearing while pretending to be musketeers was from 1727

All this while (in one episode) disliking his birthday because he believes it's bringing him closer to death, and wanting the source of Peter's eternal youth. Not only does that indicate he doesn't realize he's stopped aging, but he probably hasn't been keeping track of how long he's been there or his age.
I don't think he knows he's been there two centuries. I don't think he noticed the passing of time much at all.
EDIT: Ok, he mentioned Queen Victoria in "Dr. Livingstone" and he has Victorian era novels. So he's not COMPLETELY out of the loop. He must have a limited amount of contact with the outside world.
Double edit: In the finale when he meets adult Pan and fails to recognize him, he asks if Peter served in the royal navy in "The war of 12" most likely referring to the war of 1812, so he more likely landed in Neverland in the early 19th century.
.....that or he occasionally leaves Neverland, which would explain why he has a lot of late-Victorian literature, as well as where he keeps getting gold to bury from.

In my free time I like to take panoramic shots from the show and turn them into one long image. This one is from The Rake.
I had to do some fiddling with this one. The shot of Peter was two in-betweens, so I had to clean him up to make him presentable.

A Comparative Analysis of Hook's Ship and Cabin in Popular Media Portrayals
Part 2: Fox’s Peter Pan and the Pirates
Fox’s Peter Pan & the Pirates, being a television series rather than a film, has way too many episodes to comb through them all shot by shot, so I would like to start off this post by thanking @masterhallmark for sharing some of the best shots of Hook’s cabin with me. Unfortunately, the quality of most images associated with this version that are available online is not great, so it’s hard to get a good look at certain details but we’ll make do.

Like Disney’s Jolly Roger, this version of Hook’s ship would appear to be a galleon. However, while Disney’s ship looks fairly realistic, Fox’s appears more like one that you might assume a child would dream up. From the outside, Hook’s cabin looks as though it has at least three separate levels—though we never see more than one on the inside. The sides of the hull bulge, as though so heavy laden with treasure that it might literally burst like a balloon if one isn’t careful. The bow is decorated with two gigantic iron claws, reminiscent of Hook’s own, and in some shots, seems to have a bowsprit that splits into three separate branches…almost in the shape of a large crossbow.

Then, of course, we have Billy Jukes’ favorite canon, Long Tom, that is formed in the shape of a large white tiger. It is fascinating and intimidating, to be sure, but probably not like anything that would have been found on the majority of actual pirate ships.

Hook’s cabin itself isn’t too excessively lavish, though it is very large, with plenty of space for a desk, a walk-in closet (?), a full-sized bed, a couch, a shrine for his mother’s portrait (behind the purple curtain), and Hook’s “harpsichord”…which more closely resembles a pipe organ with pipes twisted into the shape of a hook. These last two items are especially telling… It is heavily implied by other characters that Hook’s mother is hideous to all but Hook himself, but we as the audience never actually see what the portrait looks like—only the characters’ shocked and dismayed expressions. This seems very much like what you might expect if a child was telling a story about something they have been “forbidden” to look at (for example, an adult family member’s phone or laptop) or somewhere they have been told not to go because it is off-limits by a parent (such as a neighbor’s yard behind a privacy fence). The child has no concept of what the adult might possibly be protecting them from and has a hard time envisioning it…so thar space in their mind remains blank. Likewise, most modern children have no idea what a harpsichord looks like. At best, they may have been told that it looks somewhat like a piano, and if asked to draw one, it wouldn’t be surprising if the child came up with something like the (highly impractical) instrument we find in this Hook’s cabin.

Add to all of that the fact that this Hook TOWERS over all the other grownups in Neverland and that this version of the island itself looks practically impossible on a map, and I would argue that Fox’s Hook—and indeed, Fox’s Neverland as a whole—is the product of Wendy’s (or Peter’s) imagination.

Some Fox's Peter Pan and the Pirates headcanons

Judging from Captain Hook speaking only of his mother in terms of parentage, he was raised by a single mom. His father was a wealthy man not in James's life, but regularly sent money to financially support them to keep his mother quiet about the affair
Captain Hook is from the early 18th century, but keeps limited contact with the outside world, hence why he has Victorian novels, knew Queen Victoria's name, and where he still gets treasure from.
He's not great at keeping track of major historical events and what year it is, though, because he honestly is in denial of how long he's been in Neverland. He briefly left Neverland to fight in the war of 1812, realized he's been there almost a century, then stopped keeping track.
Neverland is unofficially set up into three main territories between the three human factions. Peter rules the skies, the Indians rule the land, the pirates rule the sea. Again, though, this is unofficial.
At some point after Wendy and her brothers leave, a copy of JM Barrie's "Peter and Wendy" makes it to Neverland. This ends up being the main reasons Peter is able to remember them, though it's considered inaccurate of certain details. Unlike the book, Fox's Hook doesn't die, as in the show Peter actually cares a great deal the one time we see Hook get eaten and uses a wish to undo it.
The episode "First Encounter" is one of many versions of Hook's landing in Neverland Peter tells, as his memory is notoriously bad. The things that remain consistent are Hook landing because of a storm, Peter thinking Hook killed the Lost Boys, and Peter cutting off Hook's hand in retaliation.
When Hook tells people how they met, he insists Peter is making up the part about trying to intentionally feed the boys to the crocodile, insisting he did not yet consider them enemies. He doesn't deny capturing them for labor, however.
Celebrating your birthday is what causes people to age in Neverland, which is why Peter banned them. The pirates don't catch on until they realize Hook stopped aging while the rest of them continue.
Someone else brought this headcanon up and I agree wholheartedly: Hook actually really wanted a wife and kids prior to landing in Neverland. Wendy looks too much like his former fiance Cecilia, and so he views Wendy as the daughter he was denied having. He'll never admit this to Wendy, though.
The only one of Shakespeare's works Hook doesn't care for is "Taming of the Shrew" mainly because of his mother's distaste for the play.
(Fun fact: Even in Shakespeare's day the play was disliked and highly controversial. One of Shakespeare's sucessors even wrote a play where Petruchio is tamed called "The Woman's Prize" or "Tamer Tamed")
Captain Hook's grudge against Captain Patch wasn't fully about the money. It was more about Hook being told he and Patch would be "brothers in arms" only for Patch to declare Hook's rank to be no higher than the lowest ranking crewmates in the heat of their argument about the dividing of the treasure. Had Patch not said that, Hook would not have resorted to violence.
