Senshi is probably the most fandomized character in Dungeon Meshi, and while I don't exactly mind it, I do think he has more depth than that. I find all his little quirks and idiosyncrasies to be fascinating; he's very stubborn and set in his ways about things that seemingly don't matter, he thinks about things that other people don't, he has a deeply set value system that informs everything he does. He cares A Lot, like, this man cares So Much. That's the kind of person you have to be to drop everything to help a random group of adventurers save one woman. But because he feels so strongly about things, he can also be surprisingly immature at times (although he's also the character most likely to admit he was wrong about something). I think part of that is because he's lived in the dungeon on his own so long that he's not used to working with other people. He will extend empathy and friendship to almost anyone, but he does things his own way, and he doesn’t always feel the need to explain his way of thinking because again, he's usually on his own. He's both incredibly wise and kind of childish in ways that seem contradictory at first, but make more and more sense the more we learn about him. Major kudos to Ryoko Kui's writing and pacing to make that transition so seamless and have all those details from his backstory click into place perfectly. And on a wider thematic level, Senshi is kind of a perfect counterpart to characters like Thistle (or any other dungeon lord). Senshi understands the dungeon in ways that even its creator doesn't. Although everyone is scrambling to take control of the dungeon, Senshi is the one who actually takes care of it. He's the one who thinks about things like nutrition and proper sleep and the ecosystem, all those things that it's easy to ignore when you get swept up by the grandeur of it all. He's the most important character to have present in a story that explores life and death and hunger. His constant, invisible presence holds everything together.

So I've been thinking lately about how Mithrun is Kabru's dark mirror (more on that another time- it needs its own post), and I thought it interesting that one of their parallels is that they were both cared for by Milsiril, but in opposite directions. She took Kabru in as her foster after he was orphaned and tried to convince him not to become an adventurer. On the flip side, she helped rehabilitate Mithrun specifically so that he could rejoin the Canaries.
And I kept wondering: why?
For Kabru, obviously she loves him a whole lot- despite any other shortcomings in their relationship, I do believe that.

So I get why she tries to convince him not to go dungeoning, and, failing that, at least prepares him as thoroughly as she can.
But why help Mithrun? She used to hate Mithrun, but after realizing what a secretly twisted person he was, she actually thought of him more positively (oh, Milsiril). So it wasn't as if she held the kind of grudge that might motivate her to make his already-depleted life even more miserable by sending him back to the dungeons. And it wasn't that she felt bad for him either, since she didn't visit Mithrun for the first ~20 years of his recovery.
The Adventurer's Bible says that Utaya was the impetus for Mithrun returning to the Canaries, but Milsiril is the one who made the trip to see him and tell him about it.

Why would Milsiril work so hard to get her old coworker back into fighting fit? Why encourage him to return to such a dangerous lifestyle, when she was the one who chose not to mercy-kill him?

That last panel is such a crazy thing to hint at and then never elaborate on. Without it we could have just thought that Milsiril wanted the Canaries' work to continue without her, even if it seemed out of character. I think some people even assume she's just a natural caretaker as a foster mom and handwave it to include nursing Mithrun too. What could Milsiril's suspicious motives be? What does she gain from Mithrun joining the Canaries that isn't an altruistic desire to see dungeons safely sealed? Feeling a sense of responsibility for the work she left behind isn't an ulterior motive.

My theory is: Milsiril, knowing that Mithrun was empty save for the burning desire to face the demon again, wound him up like a clockwork doll and pointed him back at the dungeons.
Hoping that he'd eliminate the biggest threat to Kabru's life, before it was too late for him.

i got so deeply enraptured with trying to figure out which restaurant jobs the dunmeshi cast would have that i forgot to check the speed on the industrial strength floor mixer i was using at MY kitchen job and sprayed mayo everywhere. anyways.
senshi would be the senior sous chef that everyone likes and respects way more than the actual chef. he does menu planning and uses cool local ingredients that put the restaurant on the food scene map. the boss you wish you had. laios is a dishwasher but he REALLY REALLY wants to learn line so he spends a lot of time asking the cooks questions. comes in on his day off to watch senshi do menu planning. friends with all the waitresses even though they think he's kinda weird b/c he's too busy being a freak to back of house crew to bother them. chilchuck is the prep lead. he's the best at precision so his consistency is through the roof and his knife work is perfect. the prep hall is his domain and he's got all these janky ways of making it accessible bc the kitchen wasn't built for halflings. champion of worker's rights and makes sure all the first aid stuff is properly organized.
marcille is the front of house manager who's been working there since she was a teenager. sometimes shitty customers will underestimate her and try to fuck with the waitstaff but she takes no nonsense whatsoever. new hires will think she's got beef with the cooks but their banter is just next level. bffs with senshi. (edit: she's in magic school but also has a fuckass minor in management so she's perpetually trying to bring in her course theories while everyone rolls their eyes and carries on). falin i think works mostly with senshi to procure the uncommon ingredients he wants to use. she's also trained as a bartender so she'll step in occasionally but most of the time she's off talking to suppliers or tending the herb gardens out back.
the mad sorcerer is the head chef and he only works opening shift so no one ever sees him and cannot for the life of them tell what he contributes to the kitchen.
the restaurant is called the dungeon.
