Baking of day
Hello ! For those who are interested, I made a Foccacia with sourdough and yeast (in my own way) today. And guess what ?
I share with you the process
Above all, I work with old wheat flour, and the flour I used today is wholemeal flour. (I can assure you that it works, prove 👇👇)
To get started, you will need the following ingredients : - Flour (500g) - Salt (9g) - Whole grain mustard (50g) - Yeast (preferably a quality fresh yeast) (25 g) - Fermented dough (prepared the day before) (100g) - Sourdough (refreshed the day before) (sourdough can also be an option) (100g) - Potato flakes (45g) - Rice flakes (60g) - Millet flakes (20g) - Olive oil (125g) - And of course water (500g)

here : potato flakes, rice flakes and millet flakes in the same container, sourdough and fresh yeast Step 1 : Pour your water first into the tank. Then the flour, then... other ingredients, except olive oil ! (Save the olive oil for later)

Then, start the kneading, (five minutes on the timer) Step 2 : Take a clean bin.

Practical advice : don’t forget to watch your mix. Because according to the temperature and humidity of the room, but also flour. You can also have small surprises, like me today :

You see ? The dough did not mix well. But it doesn’t matter, peel the dough with a horn (yes, that’s what we call it), and put it back in the mix. (if the five minutes have already passed, add three minutes)
Step 3 : Take your 125g of olive oil and pour it during kneading (do not put all at once, allow time for the dough to drink the oil)

P.A : If at the end of kneading, the dough seems too soft, almost liquid, add a little flour. Step 4 : Put your mixed dough in the oiled bin

Then, you will make flaps (so fold the dough on itself)

Well, there I show you the process with one hand (and I can assure you that it is not easy... 😬)
Step 5 : Protect the dough by covering it with a plasticized film. Like here👇

Then, let it rest for 30 minutes at room temperature. And what can you do in the meantime ? Well : dishes, friends ! Go, go, go ! After 30 minutes, if the dough seems too soft, redo a flap. Then let the dough rest for 60 minutes.
Step 6 : After all this waiting time, take a cooking hob, lay a sheet of baking paper, then... oil it (Not too much, otherwise it will no longer be a sheet of baking paper, but a sheet of wallpaper to stick to the wall.) (Don’t do that either.)

After, spread the dough on the cooking hob. Then, cover it with a plasticized film. After that, you’ll let it swell for an hour and a half. (It will not swell much, do not expect to see a pillow on the cooking hob)
Step 7 : (I hope you have not thrown away or put away the olive oil, because you will still need it.) Preheat your oven to 250 degrees. In a small container, pour a little olive oil, and dip your fingertips into it to make small holes in the dough, as you see here.

The filling can be according to your preferences, for my part, I put ratatouille, mozarella, eggs (because not enough mozarella), black olives and herbs (oregano and thyme).
Then put your foccacia in the oven, then lower the temperature to 240 degrees. Cooking time varies depending on the oven, but usually cooking is 17 to 20 minutes. And voilà !

She's our wild lesbian daughter and may or may not be based off one of my best friends irl idk who knows ;3. Also she's dating her wonderful gf Fundip and they're planning on engagement soon xoxo
And lastly is emo wannabe villian boy Mutligrain Oven Bread (R) who would probably thanos the entire SR and UR population if he could, cause he's fucking tired of people being seen as a lesser person just because they're not labeled as the same ""quality"". He'll never get over the fact that they find rares to be useless compared to SR and UR, which is fucking valid cause everyone should be of equal worth, but he learns to express his frustrations healthily and safely through character development and is one of my faves.

“NO NO NO NO NO NO NO NO NO!” Abigail screamed at the wait staff of her wedding reception. She rubbed her temples urging herself to calm down. It might’ve been the happiest day of her life but an outside observer would never know it with her behavior. Abigail was typically a very kind, intelligent and driven woman but weddings just had a way of bringing out the worst in some women. Abby started micro managing everything, going over ever single word of every speech and every grain of salt in the food. She wouldn’t leave the tailor alone when he started on her dress. She called the old man everyday and must’ve had him redo the dress a dozen times. She even refused to pay for it because of all the trouble, she came home angry because his wife had cursed her out in some other language but she wrote a nasty review on yelp and she forgot the whole thing.
“Well don’t worry about it man, I’m sure she’ll even out during the honey moon. So, you two…”“Barry you know how devout she is, for christ’s sake we all went to catholic school together.” Ryan said unable to hide all of his frustration.“Ok ok, just asking. I better skedaddle back to the kitchen, Bridezilla is headed this way.” Ryan turned to see his bride walking over to him. He hoped she had a nice cool down and from the look on Abby’s face that seemed likely. She almost floated toward him with her hands clasped in front of her and her chin held high.
“I’m sorry honey. I just really want this day to be perfect, and I know I’m a little high strung but I think I’ll be ok now.” Abigail said full of sincerity.“I know babe, it’s finally time to relax and just enjoy our lives together.” Ryan said. Just then a young usher trotted up to the pair.“I’m sorry Mrs. Pressman but do you know where there are more napkins? We seem to be out.” He said. Abigail turned to him with no change int her face “Out? We are out of Napkins? Did you hear that sweetie? No napkins. Isn’t it grand? Isn’t it amazing? None, zip, zero napkins at all! Isn’t that the greatest mother fucking thing you’ve ever heard!?” Abigail yelled, still with a wide smile on her face.
The entire reception was shocked into silence by her behavior. Abigail then began to spin and dance by herself and humming the wedding march. She twirled over to the food table and bumped into it. “Oh look, all this food it going to go to waste now that we don’t have any napkins better get rid of it!” She finished by grabbing fistfuls of her wedding cake and shoveling it down her throat. It only took her five minutes to devour the towering confection and she moved on the ham and the shrimp and steadily gobbled down as much food as she could, People moved to stop her as she went but halted when they saw what was happening to her.
The ordinarily fit woman seemed to be plumping up a bit. Before Abby’s dress clung to her slim torso and accentuated her full breasts but now it looked like it pinched and bulged everywhere. Her arms thickened with every piece of shrimp and looked more flabby. Her dress fit less and less as she went on, the hips flaring out as her panties and lingerie tore from the added fat. Her bust outright giving up as her fat tits fell out and continued to fatten up. The stitching on her waist snapping one by one as her belly surged out and fell over her hips in front of her.
Finally her mother moved over to her and tried to stop her daughter from becoming a fat pig (a little late by the way). “Abigail! Stop this right now, look at yourself!” She said.“Oh mom, don’t worry I know what to do.” Abigail grabbed her mother by the shoulders and planted a messy kiss on her mouth. “This’ll make up for the napkins” she said and pushed her mother to her knees. She tore the rest of her dress away leaving her totally naked, as pulled her mothers face into her groin and began to vigorously hump her mothers shocked expression. This went on for five minuets before she let her go and moved onto the next nearest person falling down and humping the leg of her best friend Kate.
Abigail went on “making up for the napkins” until she had humped nearly everything in the area including her brothers dogs. Nobody seemed to have the will to make the chubby woman stop. The priest had managed to avoid her by running over the podium, Abigail stopped when she say the microphone stand. She grabbed the micro phone and began speaking, it took her a few more minutes until she realized she was holding the mike upside down. “Hehe sorry everybody, I’m such a total ditz right?” She said between obnoxious snorting laughter. “But now everybody should be happy and all the food is gone so now we don’t need napkins! Everybody’s happy! Now me and the hubbs are gonna contia…conte…concert the marriage! That means we’re gonna fuck and fuck and fuck and fuck!”
Abigail dropped the mike and skipped straight toward her new, confused (and just a little aroused) husband. She excitedly jumped up and down, her belly and tits bouncing up and down and said “Let’s make some babies babe!”

EXCEPT, we’re adding a little DOUBLE dose of veggie action because they are Low Carb Keto Philly Cheesesteak Stuffed PEPPERS with CAULIFLOWER RICE.
You’re not mad about cauliflower rice anymore. I feel it.

Except maybe that pumpkin and spice like we just talked about because I’m still over here eating slices of low carb keto pumpkin cheesecake for dessert, after my Low Carb Keto Philly Cheesesteak Stuffed Peppers. But, that’s beside the point.
How to Make Stuffed Bell Peppers
Cut the peppers in half and scrape out the seeds and membranes. Place in a large pot and cover with water.
Bring the water to a boil and cook until the peppers just begin to soften, about 2-3 minutes.
While waiting, make your caramelized onions and Saute your beef and cauliflower rice
Drain the peppers and pat them dry. Then, fill the peppers with the mixture and then place them into a large baking pan. Cover them with cheese and bake them at 350 degrees for 10 minutes
Broil for 2-4 minutes, until the cheese is golden brown and bubbly.
Voila! Philly Cheesesteak stuffed bell peppers

These Low Carb Keto Philly Cheesesteak Stuffed Peppers with cauliflower have all the flavors of your favorite sandwich in a healthy, low carb, easy meal!
Ingredients
For the onions:
1 Tbsp Olive oil
2 Large onions sliced about 1/2 thick
Salt
For the peppers:
6 Small Green bell peppers, halved and seeds/membranes removed
1 Tbsp Olive oil
1 Lb Beef top sirloin steak, sliced very thinly against the grain* (and large chunks of fat removed)
2 cups Cauliflower, cut into small florets
Salt
12 Oz Provolone cheese, sliced
Instructions
In a large pan, heat the 1 Tbsp of olive oil on medium heat until shiny. Add in the sliced onions. and a pinch of salt and stir until they are coated in the oil. Cook, stirring every so often, until the onions are caramelized and golden brown, 30-45 minutes. If you have a very hot stove, you may need to turn the heat to medium low, as you don't want them to burn. Don't stir too often, as you want the bottom to caramelize properly.
While the onions cook, place the prepared peppers in a large pot and cover with water. Bring to a boil and boil for 2-3 minutes, until they just begin to soften. Drain and place on a layer of paper towel, gently patting any of the water off.  Arrange the peppers in a 9x13 inch pan and turn your oven to 350 degrees.
Heat the remaining 1 Tbsp of oil in a large pan on medium heat. Cook the sliced steak until golden brown, draining out the excess fat. Transfer to a plate.
While the beef cooks, place the cauliflower into a large food processor and process until "rice like." Place it right into the pan that the beef was in and cook on medium heat, stirring occasionally, until golden brown.
Once cooked, add the beef and caramelized onions into the pan and sprinkle with sea salt. Stir until well mixed.
Stuff the peppers with the mixture and top each pepper with a slice of cheese (1 oz cheese per pepper half).  Bake until the cheese is melted and the peppers are tender, about 10-15 minutes.  Turn the oven to high broil and cook an additional 2-4 minutes until the cheese is golden brown.

Brewery Visit – Legacy Caribbean Craft Brewery @legacybrewery
Opa-Locka is an interesting place. 
It’s north of Miami, it’s a bit on the rough side, and the entire place is themed to Arabian Nights.
Seriously. For a city named after a Seminole phrase and created by aviation pioneer Glenn Curtiss, the entire place is distinctly Moorish-flavored, in a sort of Busch Gardens-esque sort of way. 
It’s also a city that is just emerging from a significant corruption scandal from city government, a situation that caused the ownership of Legacy Caribbean Craft Brewery no endof headaches when moving their facility to an industrial park across from Opa-Locka Municipal Airport. 
I was first introduced to Legacy at the New Times Beerfest a few years ago. In that time, they opened a place, closed it, moved it, and are starting to ramp up their production and footprint from a 3 BBL system in the back. 
Going to the brewery, it’s noticeably covered in artwork, many of which are slated to be icnonography for their upcoming bottle releases. One of those paintings is a portrait of Miguel Diaz, family patriarch and brewer in his Dominican Republic homeland. 
Legacy’s founder and head brewer Ismael Fernandez took Don Miguel’s spirit (and some of his recipes), tweaked them a bit for South Florida, and is riding a wave of incredibly tasty beers out of a rather adorably-dressed tap room, assisted by his younger brother Hector. 
Some of what I tried when I was there was a redo of the beers I had when I first met them, and some were brand new. Starting with the flight, from L to R:
Gypsy Voodoo (Pale Ale, 6% ABV) – Of the pale ales I tried, this was the more classic of the two. Slightly darker malt bill with a more pronounced caramel flavor, with a floral bouquet of hops that aren’t aggressively bitter at all. 
Chica (Blonde Ale, 5% ABV) – A classically trained, true-to-style blonde ale. Very satisfying. 
Tallulah (Wheat Ale, 4.8% ABV, 13 IBU) – I can’t go as far as to call this a witbier, since the beer 1) is a bit darker than the extremely pale wheat and 2) there’s no orange. But the spice game is strong with this beer, with coriander combning with Grains of Paradise and more. Refreshing and interestingly complex.  
Mulato (Porter, 5% ABV) – In a word, yes. This recipe is based on one from Don Miguel, perfected (and stolen) after years of brewing on Hispanola. As a porter, te rich, oven roasted malts (as in their oven at home and their roasting) combined with Colombian coffee make for a deeply satisfying brew that I simply need a growler of in my life right now. 
Different Strokes (Pale Ale, 5.7% ABV, 44 IBU) – This is the more Florida of the two pale ales, with a lighter grain bill combining with fresh local fruits for a sweeter, drinkable beer with a more fruity hop character that still isn’t overassertive. 
Legacy’s just one of those breweries I love writing about, since they combine a significant love of family and cultural background with quality beers and a focus on making a product they are proud of. They are starting to ramp up their participation in local beer festivals, so it won’t be too hard to find them without going to Opa-Locka. 
But Opa-Locka itelf is worth the drive.
