Very happy that @hi_collar has #shochu. This daytime coffee shop and night time sake bar has now gotten a hard license. To respect their sake roots I ordered Tori Kai, the only shochu produced as a true ginjo sake - yellow koji & a 40+ day 3 step fermentation at low temperature. The resulting shochu is elegant, refined, and luscious.
