The tea that we almost lost.🤷 ⠀ 👩‍🎓Anji Bai Cha (White tea from An Ji, 安吉白茶) is a unique green tea from the Zhejiang Province, An Ji county. It has been around since the Song dynasty, at the time it was so rare that only high-ranking officials had access to it. Anji Bai Cha is collected from Bai Cha tree which develop snow white, almost translucent, velvet buds in early spring. after 20 days the buds turn green. Because of this the tea is traditionally called Bai Cha, but it is made using green tea manufacturing technology. ⠀ Over time the tea industry significantly decreased in An Ji and Bai Cha almost completely disappeared. There is no specific information as to why this happened. In 1982 a “snow white” 100 year-old-tree (from which Anji Bai Cha is made) was found. 15 years later tea technicians in China were able to propagate this tree by cutting.Today there is a relatively large volume of Anji Bai Cha being produced and it already has a pretty large “fan club”. ⠀ This tea is best brewed in a tall glass (if you are in the mood for something fancier: try champagne glasses 😉 ) . Use gentle water of 75-80℃.. Begin by thoroughly warming up your brewing vessel of choice by washing it with water. Now pour in the water for brewing and add 2-3 grams of tea. And we’re done! Anji Bai Cha means white tea of Anji. The tea is from Anji in Zhenjiang Province but is actually a Green Tea with very low chlorophyll content in it’s leaves and after the first infusion the leaves turn a very pale, almost white shade of green with a green stripe down the middle. The tea is very sweet and very relaxing and is my favorite Green Tea.
