Because I think the Razor Crest was built more for bulk efficiency as a gun ship than it was built for speed (though it’s nothing to sneer at there), I think Mando’s ability to maneuver it is a large part of why and how he’s capable of doing so well in dog fights and running from the cops. It can take a hit and keep on moving, and Mando knows his ship well enough that he can make those split second calls and pilot how he needs to.
The N-1 is fast and responsive on the controls, but it’s got nothing in bulk or armor as far as defense is concerned, and it also has nothing by way of storage or cargo capabilities. Its defense is simply being fast enough to evade getting shot. Mando the character was designed to take a hit and keep moving forward, purposefully armored in a way that allows him to endure a fight— The Crest was designed to reflect its owner, the N-1 not so much
With that analysis in mind, I think it’s much more likely that cowboy!Mando’s Crest in an old west au is actually a mule, not a horse. The N-1 might be the fastest stallion alive, but it’s nothing compared to a mule that’s say, half mammoth Jack and half Belgian mare. I think the biggest horse on record, Brooklyn Supreme, was a Belgian if that gives you an idea of size and silhouette
Big, strong, smart, all-terrain half-draft horse that can endure a rough trail and hard work hauling outlaws is much more in line with what purpose it would serve his character. A mule has the best qualities of both animals, and it’s still going to be intimidating to come up against. Mando’s an endurance hunter, and he needs a steed that reflects and enables that

I wanna see "Real-Life", Classic Boba Fett wielding an Amban Phase-Pulse Rifle from "The Mandalorian" using Source Filmmaker because he still used them before Din Djarin in "The Holiday Special" Cartoon and its not like we'll ever see Boba use them in like some New Season for Mandalorian or TBOBF Show anyway...
(also the mandalorian amban phase-pulse rifle look somewhat like the ee-tr3 concept rifle from star wars 1313, which makes it even more fitting for boba fett to wield din djarin's rifle, just saying...)

“Stand back.” Din said out of habit, and waited until he heard Grogu’s telltale shuffling behind him. He waited another five heartbeats before slowly cranking up the dial in front of him, starting from zero and slowing down at the sixth notch. Familiar humming filled the corner of his office that he had designated as a workshop.
Din reached to his side and picked up a naked wire to connect two of the missing pieces, listening for a change in the frequency, and clicked his tongue with satisfaction as the amplitude finally evened out. After days of false starts, finally some progress.
“Patu.” Grogu said from behind him.
“Yeah. Soon. There are still some parts that we need to find, and none of them are manufactured anymore.” Din replied, and cranked the dial to the seventh notch. “Hear that? If I gave it any more power it would arc between the two ends and fall apart. And there is barely enough voltage in there to stun a jawa, let alone a ravinak.”
Din carefully reduced the voltage, then in a moment of weakness, put his finger between the two prongs on the end of the weapon to dissipate any remaining charge, earning himself a fairly bright arc and a numb finger.
“Ow.” he said, somehow surprised at what he surely knew would happen.
Once all the cables had been disconnected, Din collected the parts of the soon-to-be rifle, wrapped them individually in their respective cloths and put them back into the armory. Soon, he thought to himself. One day, soon, he would be vaporizing jawas again.

not that I’m necessarily complaining, though. he’s so sexy when he fights with it - and all the corrupted din fics, oh my god
I love him when he’s the main character of a story that isn’t a big tale. Love him when he’s just a man learning to balance murder and being a father. The way he goes from ruthless bounty hunter to man who begrudgingly helps out and ends up making friends along the way is exactly what I love most about the mandalorian.

Awwww, what a fun request from way back! I went digging and found it!
The moment you read the chapter title you scrunch down more in your blankets, feeling like you’re spying on Mando. There’s a table of contents for the recipes, including a series of fortified breads and drinks. What interests you most, though, is the forward to the chapter:
There are four tenets to Mandalorian cuisine, and to impress one you must understand the reasoning behind them. 
And because you asked so kindly, let me pull out another little quote for you!
The child’s strange eating habits aside, you worried quietly about Mando’s own diet. Sure, you didn’t know what he ate on hunts, but you suspected it was very little if anything at all. He’s not a scrawny little boy either; your arms struggle to wrap around his waist, his thighs and biceps powerful and muscular. It may be something he’s used to, going without, but you know how to make food economically. With your shopping list you’re easily spending a third less on food with an abundance of better quality.
Time to give Mando a home cooked meal (or seven!). Thank you for getting me all gooey about my favorite spaceman again ma Chérie!

“Stay still.”
You couldn’t help it, it wasn’t exactly comfortable sitting in the lap of someone with full armor on. His deep, slightly crackled voice in your ear was another reason you couldn’t sit still. The cool beskar was pressing on your skin as you heard him let out a deep sigh, causing you to shiver slightly. “You said you wanted to try this with someone... Why not me?” He asked softly. You could feel his eyes burning through your skin, staring into your soul. You hesitated to answer as your eyes wandered over to the blaster on the floor and the Amban sniper rifle still attached to his back. This man was indeed dangerous, your brain scrambled with thoughts of how many ways this man could kill you. But instead, he chose to grab you by the hips and put you in his lap. Another sigh, this one a sigh of comfort, comes from his voice filter, his gloved hands rubbing your hips with a gentleness you never knew Mandalorians had.
“You won’t be trying this with anyone else.” He ordered, his voice still soft as not to wake the Child.

something I’ve noticed while rewatching other star wars properties after having watched andor is that it’s difficult to watch them without thinking about andor, almost as if andor has produced a new interpretive lens for the star wars universe. and I’m setting aside all comparisons of narrative quality or pacing or cinematography for a moment, because I don’t mean those things.
for example, rewatching the mandalorian, din’s amban rifle is really cool. it’s a weapon that is illegal to have in the new republic, and it functions not only as a mid-to-long range weapon, it also acts as a fairly heavy duty taser. now as I said, this weapon is very cool. I like it a lot! but its function and existence is meant to be separate from who din is as a person - the fact that he has a weapon that doubles as a taser is not meant to be a commentary on his character aside from “this guy is a badass.” to be fair, I think what it’s meant to be is a tool of his trade - he’s a bounty hunter, he hunts people, tasers are handy for that. but there is no larger observation being made about the type of person who would use a weapon like that, or the type of society that would produce a weapon of that kind. there is no discussion in the mandalorian about how the specific economic and social demands being made of din require him to use what is by all accounts an incredibly vicious (and outlawed) weapon to “just do his job.” that is a settled matter that is not intended to be part of the narrative arc of the story.
but in andor, a taser prod is used as a weapon by the prison guards in narkina-5, and in fact the entire floor the prisoners stand on acts as a kind of collective spatial taser. these are not just meant to be narrative obstacles for our hero to overcome, they are actively saying something about the institution that uses it - that the very fact of their existence is evil, that a society who produces those types of weapons are making a particular kind of statement about how they view control and punishment of the people they govern. tl;dr, andor is making that kind of weapon political, and is asking the audience to consider it not just as a tool of the empire but as an ideological expression of the empire itself.
and so to get to the point I’m trying to make, I think a lot of things in star wars are very much settled matters. while the canon seems to constantly be re-litigated and retconned, fundamental premises are not really considered questionable or up for debate, especially a lot of the established visual traditions. and I think what andor is doing is presenting the audience with these very questions - it is reinvigorating the politics of star wars by insisting that a lot more things in the universe are up for debate, that they are politically and socially produced by the fictional societies and cultures and governments that exist in star wars, and every piece of equipment and clothing and relationship says something about those fictional people. it is asking you to view star wars as a universe that is infused with political meaning, and that politics is not a discrete category that things like tasers or prisons or arranged marriages or administrative process can be separated from. to take down the empire in andor, you don’t just have to remove the head of state or kill all the stormtroopers; you need to destroy all the tasers, too
