In the basement of a loft-style building in TriBeCa that houses a vet, a dog swimming pool, an eye-and-ear infirmary, and a two-Michelin-starred restaurant, there is a working farm.
Farm.One is a hydroponic facility, which means that the plants do not grow in soil. Many of these farms are located indoors, in controlled environments, with artificial lighting.
The new two-room space, which opened in November in a former cycling studio for high-altitude training and an old storage area, is only 1200 square feet. There is no fresh air or natural light; there is not even a window. Yet the venue can grow around 580 varieties of rare herbs and flowers (200 at a time) that supply New York’s top restaurants. Le Turtle, Le Coucou, Mission Chinese Food, and The Pool get regular deliveries from Farm.One, sometimes several times a week.
“I wouldn’t want to pay for a space with great retail frontage,” said Robert Laing, the farm’s chief executive and founder. “All we need is a floor drain, water, power, temperature control, and the ability to seal the space so bugs don’t get in.” The farm does deliberately bring in a few types of insects that are beneficial for plants, like ladybugs. “You can buy them on Amazon,” he said.

Seeds are planted in materials like coconut husks and are put in a tray so water and nutrients can circulate below them. LED lights above simulate the sun. Growing time is not long; many plants, like microgreens, are ready in a little over a week.
People who find it weird to eat food grown in a basement have no reason to worry, said Neil Mattson, associate professor and greenhouse extension specialist at Cornell University. “There is nothing icky about it. Plants don’t care whether they get light from the sun or the lamps. It’s the same thing.”
Matthew Hyland, the chef and owner of Pizza Loves Emily, a client of Farm.One, agreed. “A hydroponic garden in general is an amazing thing,” he said. “It’s lit nicely; it smells good in there; the temperature is nice; everything about it is very pleasing.”
The plants grow on shelves that can be expanded or contracted like the stacks in a university library (this setup almost doubles the growing space.) On one level there might be anise hyssop, an herb with tiny lavender-colored flowers and square stems that tastes strongly of mint and licorice. On another, mustard green, a plant that tastes a lot like spicy horseradish. The colors are so diverse and vibrant that the head horticulturalist, David Goldstein, has taken to arranging them on trays for parties.

Mr. Laing, a British-Australian entrepreneur with a sharp sense of humor, can walk around the farm and tell you exactly what every variety is and to whom it is being delivered. “This is my favorite,” he said, pulling off a leaf of papalo. “Crush it up a little bit in your hand and smell it first — there is cilantro, citrus peel. It’s super fresh and quite grassy.” He paused. “I never want to sell software again.”
In a previous life, Mr. Laing worked in Japan, where he started a translation software company. After eight years he turned his attention to his true passion: food. He took culinary classes and visited farmers’ markets across the world, discovering many rare herbs he had never heard of along the way. “And I was someone I thought knew about food,” he said. So he started researching ways to bring these herbs to chefs.
Farm.One grew out of this research. In April 2016 the new company started growing products at a small indoor farm at the Institute of Culinary Education, also in Lower Manhattan, on Liberty Street. By August, the farm had its first client: Daniel Boulud’s Daniel. By the end of the summer, the herbs had sold out, which led Farm.One to open a second location this fall, at 77 Worth Street.
For $50, New Yorkers can take a tour of the farm, tasting dozens of rare flowers while sipping a glass of prosecco, and they are given a box of herbs to take home. Farm.One also offers seminars on the basics of hydroponics, and any herbs and flowers not snapped up by chefs are available for purchase through its website. Mr. Laing is discussing bringing the farm to other cities.

Mr. Laing attributes the farm’s success to two factors: Rare products and low overhead. “Pluto basil can be sold for $40 a pound as opposed to $10 to $15 for regular basil,” he said. And since the farm is small, the cost of expensive LED lights is minimized. Larger hydronic farms like FarmedHere in Chicago have had to close.
Farm.One is also poised to cash in on the Instagram-driven food world, where chefs are willing to pay extra money for novelty items like rare herbs and flowers. Mr. Hyland, for example, is besotted by pluto basil. “They are really beautiful looking on a pizza with the little leaves everywhere,” he said. “Customers know it’s a custom-made product.”
Atera, the restaurant upstairs at 77 Worth, brings certain customers down to the farm for tours. It also offers one course in which the chef, tableside, dresses a dish with the herbs sourced from the basement. “Everyone gets pretty excited,” said Matthew Abbick, the restaurant’s general manager.
Farm.One is not the only place chefs can procure these herbs; chef farms or wholesalers in California or Ohio ship a variety of rare products across the country. However, New York chefs like that the greens at Farm.One are grown locally and haven’t been sitting in a warehouse or delivery truck for days. “Farm.One snips the herbs in the morning for an afternoon delivery,” said Victor Amarilla, the executive chef at Le Turtle. “I actually see my delivery guy walking up now. I see him twice a week.” Farm.One boasts on its website that delivery is just a 30-minute bike ride away from 90 percent of the restaurants in the city.

At Atera, a restaurant housed in the same building as Farm.One, there is a course in which the chef, tableside, dresses a dish with the herbs sourced from the basement.
There are also the environmental benefits. The farm recycles and reuses water, purging it every three weeks, which minimizes waste. But there are downsides. Studies show that in general, the environmental costs of lighting and heating indoor farms are significantly higher than shipping something across the country that’s been grown in the California sun. “We know it’s an issue and we are working on it with things like getting more efficient LED lights,” Mr. Mattson said.
Other insiders say that hydroponic farming is essential, especially as climate change makes growing seasons volatile and unreliable. “One of the most important things people will need to do over the next 100 years with climate change is bring food creation and cultivation back to cities where people are moving,” said Dan Nelson, an entrepreneur in Brooklyn who is researching the urban agriculture movement and who took a Farm.One seminar on hydroponics. “That’s my humanity-level thesis,” he added.
The New York City Council is currently exploring Bill 1661, a piece of legislation to define urban agriculture and bring about industry standards that will help it advance.
The main concern of chefs, though, is having ingredients they can cook with today. And many are applauding Farm.One’s contribution to their operations.
“New York has the greatest summer vegetables and fruits and leafy greens, and in the winter, we are in a real dead zone,” said Mr. Hyland. “Having a product year round that we can really be proud of, would be a great win for New York City food.”

He adds: “While we don’t know yet how shopping behaviours will shift after lockdown truly lifts, it’s evident that brands can no longer make assumptions about consumers – whether about what they’ll buy, when, or who they are.   Lockdown week 1: Adjusting to change
Panic buying in the supermarkets and social distancing triggered a switch to buying foodstuffs online. Searches for ‘Food & drink’ on ebay.co.uk increased 473% year on year (YoY)*, while searches for ‘Cat food’ and ‘Dog food’ jumped 633% and 467% respectively.

Lockdown week 2: Finding that work/ life balance

Wholesale changes in shopping behaviours illustrated the need for new remote workers to settle in to working from home and keep home-schooled kids entertained. Searches for ‘Barbecues’ and ‘Garden lighting’ rose 256% and 246% YoY respectively, while searches for ‘Fence panels’ grew 169%.

  Klinkhammer concludes: “Last year’s trends or even recent behaviours may be useful for background, but the ‘freshness’ of data is becoming an important gauge of quality. Now more than ever, brands can’t afford to waste spend by serving ads to audiences that won’t be interested in them. Brands need real-time insights to help them understand the changes in consumer behaviour in the here and now and ensure that they’re able to engage with the right shoppers with a relevant message and in a brand-safe environment. The technology already exists to provide these insights – and marketers’ enhanced need to demonstrate efficiency and ROI will accelerate its uptake.”

Green Ideas for Children This Holiday Season
The holiday season is fast approaching and there are many ways to spread the good cheer to our children by not only giving green toys but also teaching them green practices.
If you're children like mine ask every two seconds while watching a cartoon "I want that!" "No I want that!" "Wait, wait, I want that!" You are not alone. There are toys from crying babies that can eat and talk to full size robots that can move around with a touch of a button. Bikes and trikes, scooters, and mini toy cars. Lets not even mention the stocking stuffer toys that are itty bits of plastic that are used as filler that will soon get thrown away.
Also you soon realize that after giving all your children toys and gifts that after a week or two most of them lay in the toy room and not picked up again for months or never. Then the next Christmas comes along and more toys are added and more and more until finally there are so many toys with missing pieces, broken arms and ripped out pages that they get thrown away. It can be a never ending cycle of buying more and wasting more. Not just your money but also the earth.
I would like to offer some green present ideas and green gift substitutes for this holiday season. I think that the holiday season can be more memorable and enjoyable if we can take the time to focus on our families and our community. When we keep things small and simple we feel healthy in our minds and our bodies. Our community and earth benefit as well with less waste products filling land and air.
Green Present Ideas
Try to upcycle toys with neighbors and extended family. Most toys in your own home are in great condition but are maybe not age appropriate. If you have a neighbor who has a daughter a few years older than your daughter see if there are some toys that you could either trade for or buy to save money and landfill space. If you have a friend who's son is obsessed with trains contact her and let her know that your son has outgrown all his.
Look around your house for objects that can be made into toys. Try making a doll house out of a large sturdy cardboard box, take your time cutting out windows and doors, attach wallpaper from leftover wallpaper from your dining room, use extra fabric to make bed coverings and window curtains. Children love getting gifts from the heart not just from the toy store.
If you know how to wood work ask for free leftover wood at a lumber store or construction site. Check out the internet for instructions to build wooden toys like trains, cars, toy guns, and even action figures. Any boy would love to play and imagine with something that was made just for him.
Green Gift Substitutes
For older children who have grown out of toys a great idea to enjoy the holiday season while being green is volunteering at homeless shelters and soup kitchens either during Christmas season or even on Christmas day. Have them look for gently used toys and clothes that they have outgrown that they would like to donate. Or try a road side clean up activity where all cans collected could be exchanged for money and donated to a cause.
Another great idea for gift giving within the family is gifts of service. A foot rub for mom, doing dishes for one week for brother, shoveling snow for dad. Gifts of service often say more than a watch or new CD.
If you do buy toys try to look for toys that are made from recycled plastics. Check out Etsy for homemade gifts that are made in a more homemade green way.
There are lots of ways we can teach children green living and gift giving and the holiday season is a perfect way to incorporate both.

The vibrant city of Newcastle-upon-Tyne is known for its nightlife, its numerous bridges, its distinctive “Geordie” accent, and of course, brown ale. But if you prefer your beverages hot and caffeinated, you will not be disappointed with this northern city’s diverse and growing coffee culture.
Whether you are just visiting Newcastle, or already live here and are after a new place to get your coffee, there is no lack of great cafes in the city. There are also several roasteries based in the North East region, including Ouseburn Coffee Co., Tynemouth Coffee, Pink Lane, and longstanding classic Pumphreys. Furthermore, the many cafes and coffee shops in the area are varied in their atmospheres and approaches, resulting in a unique coffee scene and a lack of overt competitiveness. Newcastle offers everything from cozy hangouts with a focus on local produce, to sleek, minimalist, Aussie-inspired multi-roasters.

Anyone visiting Newcastle by train is lucky enough to have Pink Lane to greet them almost as soon as they step out of Central Station. Conveniently located on the eponymous cobbled lane, the shop has been open since 2012.
Pink Lane is recognizable by a copper sign adorning the exterior. Inside, you place your order at a simple white and grey tiled bar, garnished by a range of cakes (and often donuts!) and lined with white metal bar stools. The walls are adorned with illustrations including a coffee-sipping badger. The shop has plenty of smaller tables, popular with laptop-users, as well as some larger spaces and a much-Instagrammed pink neon sign towards the back.
The shop offers a range of filter brews, as well as the usual array of espresso-based choices and other hot drinks. Despite being a multi-roaster shop, Pink Lane is known for the coffee produced by its very own roastery. Using responsibly-sourced beans from around the globe that are roasted on the lighter side, this roastery produces stunning, unique coffee favored by baristas for miles around. The company has been known to support new and local businesses and is a perhaps the highlight of Newcastle’s independent coffee scene.

  BLK
There is no shortage of cafes in Heaton—a suburb popular with students and families—but BLK stands out. This place would be easy to underestimate, not least due to its compact size. However, visit BLK and you will see that it is well worth straying from the center of town for. I have never had a coffee from BLK which I could fault, and it is clear that effort goes into every drink.
While many of Newcastle’s coffee shops are understandably loyal to local roasteries, it is refreshing that BLK has chosen to go the multi-roaster route. During a recent visit, the espresso on offer was Round Hill Roastery’s Costa Rica Unit Fourteen, while the range of filter offerings included Has Bean’s Ethiopia Tadess Roba (v60) as well as options for Kalita and AeroPress. Past guests have included beans from Berlin’s Five Elephant.
The minimal-styled shop has just a few seats and offers a small range of cakes and pastries. However, if you choose not to sit in, there are worse ways to spend a sunny afternoon than strolling through leafy Heaton Park and exploring Chillingham Road’s quirky shops with a perfectly-poured flat white in hand.

Located above Start Fitness on the city center’s Market Street, Camber Coffee is the definition of a hidden gem. Once you reach the stairs through rails of fitness gear and sportswear, you will find yourself rewarded by a spacious cafe with friendly staff.
Camber seems to have found the halfway point between minimalist and cozy, embellishing their tables with books and plants without creating a cluttered feel. With its generous seating and laid-back atmosphere, it is the ideal place for larger groups to meet up. Framed cycling jerseys adorn the walls, but you might just forget that you are in a fitness store once seated.
Camber offers a simple coffee menu, focusing on espresso-based drinks. The beans come exclusively from Pilgrims Coffee of Holy Island, showing their loyalty to local providers. Pilgrims is a small, rural roastery offering seasonal, sustainable, and ethically-sourced products. Camber’s food is all vegetarian and/or vegan. A new menu was recently introduced, and the kitchen now offers regular specials such as a black bean udon noodle bowl.
Despite being hidden in plain sight, Camber’s unusual location is a big draw, making it the ideal sanctuary from the crowds of shoppers in nearby Eldon Square.

  Backyard Bike Shop
By the River Brew Co opened in 2018 in Gateshead, just across the Tyne from Newcastle. Identifying as a “creative container community,” the waterside complex includes a street food market, a microbrewery and concept restaurant Träkol. In amongst all of this is Backyard Bike Shop, which has the capacity to both fix your bike and serve you some of the best coffee either side of the river.
The atmosphere is cozy and welcoming with a slight rustic edge. The space doubles as a cocktail bar by night, but during the day you can sit back with a coffee and enjoy a view of either the lively scene over the Tyne or the warm bike workshop, complete with fireplace. The container complex is a short walk away from cultural hotspots, including the famed BALTIC contemporary art center.
Backyard Bike Shop sources its beans from Pink Lane, and the coffee is consistently good. During my recent visit, the espresso was a creamy Peru Cajamarca San Ignacio, while the filter option was the floral Ethiopia Adado. A brunch menu consistent with the warm interior features dishes such as ricotta pancakes with berries and walnuts. Patisserie-standard cakes are always available too.

Hidden away down a quiet cobbled street, this shop mingles with a range of independent stores and restaurants including vintage store Retro and gin-drinker’s paradise Pleased to Meet You. This street certainly stands out in a city largely dominated by big-name brands.
In addition to its location, Laneway’s stylish white and wooden interior and laid-back soundtrack make for a relaxed spot to grab a coffee. They are laptop-friendly and the staff could not be more welcoming or knowledgeable. There are impressive cakes, pastries and several breakfast choices to enjoy. The house espresso is from Allpress and the filter options are usually via the excellent Origin.

This homey bar is based in the artistic Ouseburn area of Newcastle. The unique, quirky decor is clearly heavily influenced by Star Wars and it serves up some of the best brunch in the city. However, it is also a great place to grab a coffee, with beans from local roasters Ouseburn Coffee Company (OCC).
Pumphreys
Established in 1750, Pumphreys is by far the longest-established roastery in Newcastle. This family business offers training, equipment, and wholesale beans, but also has a “coffee centre and brewing emporium” located in the city’s indoor Grainger Market. While their beans are generally roasted a lot darker than those you would find in many third-wave shops, Pumphreys is certainly dedicated to the trade and are the beans of choice for cafes and tearooms all over the North East.
