Keto Chicken Parmesan (serves 5)($16.50)
Once you try it this way you will never go back.
1 large package of boneless chicken breast that have been butterflied into 10 pieces (5 for this recipe, 5 for the stuffed chicken breast recipe)($11)
1 1/2- 2 cups ground pork rinds (breading) {grind pork rinds in your food processor until it resembles bread crumbs}($2)
1 egg beaten
a splash of milk or cream with a little water
1 large jar of your favorite sauce or canned make sauce ($2)
3/4 cup or your favorite shredded cheese ($1.5)
oil for frying
salt and pepper to taste
onion powder for egg mixture
Preheat oven to 350 degrees.
Take each breast and dip into egg, milk, onion powder, salt and pepper mixture.
Coat well.
Place coated chicken in the pork rind crumbs and cover both sides, patting the crumbs well to make sure they adhere well.
Set aside on a plate.
Heat oil in a pan for frying. (test oil temp after a few minutes by dropping a crumb or two into it and watching that it starts to sizzle)
One or two at a time, place chicken in oil and cook on each side about 3-4 minutes each side or until golden brown.
Place the breasts in a 9x13 aluminum pan or baking dish that has been sprayed with cooking spray.
Pour sauce over chicken making sure to coat the breasts well.
Top with shredded cheese.
Bake for 30-35 minutes or until the cheese has a nice golden brown color.
Remove from oven and allow to rest 5-8 minutes before serving.
Pro Tip:
Serve with zoodles (zucchini that has been spiraled into spaghetti strands, or with broccoli or green beans.
This may also be made with konjac pasta that has been washed, drained and then cooked in a dry pan until all the moisture has been removed.

Holy forking shirtballs - today's food was good! I really needed a full day of clean keto eating... Went to the post office, grocery store, and Starbucks this morning to make sure we got a few things on our to-do list checked off before lounging around the rest of the weekend rewatching GoT! Bacon and coffee not pictured, but lunch and dinner are! Lunch was a large salad with mixed greens, cucumber, tomatoes, parmesan cheese, and green goddess dressing with some cheddar cheese and mustard (yes, I know it's a weird combo). I've been craving both for days so this was super satisfying. Dinner was AMAZING 👌 chicken parm cooked in my new air fryer with @porkkinggood pork rind crumbs! It was so delicious and it will definitely be a regular meal in our home! It was also incredibly easy to make. Here's what I did: Pat chicken dry, dip in seasoned egg wash, dredge in pork rind crumb mixture (I mixed with oregano, basil, grated parmesan, onion powder, and garlic powder), air fry at 375F for 15-20 minutes and flip halfway through. Once done, remove and let so on paper towel until the chicken cools down a bit and then top with sauce and mozzarella cheese. Last step?
