Eastern Redbud Tree
Cercis canadensis
This small tree in the legume family showcases lovely pink blooms in spring and is native to much of eastern North America. They grow in a variety of habitats, but prefer well-drained slopes in woods without many other plants to compete with. Its flowers are pollinated by carpenter bees and other bees with long tongues, and the leaves provide food for several caterpillar and moth species. The flowers on this tree are also edible and contain beneficial anthocyanins, a group of antioxidants.

So I never got around to making cookies with the redbud flowers, but I did keep tasting them, and the green bean taste definitely went away with time! They had just started blooming when I tried the first one, but by the time they were closer to done, the flavor was milder and slightly floral! They were pretty good. Love a good flower snack!

The stressful hot and dry summer followed by a near freeze and week plus of 40s followed by several weeks of 60-80 have led to this redbud (Cercis canadensis) tree flowering and setting new leaves.
It should be fine, but next year might not be a great flower show.

Beyond being a semi-native, moderately-sized ornamental tree, redbud blossoms provide a reliable early nectar source for insects! The blossoms are edible and have a slightly tart flavor, popular for jams, and the young seed pods can be eaten raw or sautéed! Bark can be boiled to produce a natural, non-toxic yellow dye, too. Between the blossoms, soft grey wood, and big, glossy heart shaped leaves, it’s no surprise that the redbud is a midwest favorite.
