A Headcanon that I really wanted to write up and that's been living in my head rent free is the idea that Ace is cocky enough to know that nothing can hurt him because he's made of fire due to his Devil Fruit. But at the same time, he sometimes is a little too cocky and ends up getting injured, especially dealing with people who are stronger than him.
But he is also very stubborn. He's stubborn to the point where he's not going to ask for help because, why would he, he's the second commander! He has to make sure that he's strong enough to survive.
But behind the scenes, he wants help, he wants to know that he can get help.
Another Headcanon is that Ace will not hesitate to go after the food he smells. He is the older brother to Luffy after all. He sees food, smells food, and eats the food.
Heck his favorite pun is probably "I like see food" to which he cackles and says "I see the food, I eat the food"
The dude is a walking dad jokes galore.
