Point was on point. Probe went in and came out like butter. Flat did the same and was pull apart tender but was a little dry for my taste. Every time I smoke a brisket I try to learn something from it. I think next time I'll be wrapping a little sooner into the stall. Flavor was great and of course the very tip piece my daughter wanted.
