Cowboy!Tristan is a cowboy in a world of Holy Knights. Tristan’s cowboyism does not get questioned, he simply exists. He even has a southern accent that his parents don’t have but no one says anything about it.
Cowboy Tristan has a white hat with the goddess clan symbol on it, with a matching belt too. Instead of swords he uses lassos to fight, two at once obviously.
And of course he says yeehaw like any rational cowboy would

Cowboy Tristan has a thick, southern accent, chews on a straw at all times (like Nanashi), instead of swords he has lassos (two of course), and with a whistle he can summon Escanor, his noble steed and I mean literally summon, he just spawns in. He basically just acts like he’s in a Western Film (but exaggerated) and no one questions it.
Also he’s got a big ass white hat with the goddess clan symbol on it.
