Toad-In-The-Hole
No not the egg in the bread, this is the classic European version.
It one of my absolute favourite meals and a godsent. It’s easy enough to cook and goes well with baked potato and veg. 
The recipe I use is actually from a book I’m pretty sure my nan used to own and it’s called Family Favourites By Marguerite Patten. We’ve only ever used the one recipe from this book but still the best recipe to date. 
Ingredients: 
1 Cup All-Purpose Flour
Pinch of Salt 
2 Eggs
2/3 Cup Milk 
6 Tbsp Water 
1/2 Tbsp Oil 
Cooking Oil 
6-8 Beef Sausages 
Instructions:
Add flour, salt, eggs and milk and beat on medium until air bubbles appear.
Gradually whisk in water and set let stand until ready to cook. 
When ready whisk in the oil (it gives the batter an extra crispness) 
(At this stage you can pour the batter into a muffin tray and bake until crispy and serve as a side to a roast) 
Heat the oil in a shallow oven-proof dish then add the sausages and cook for nearly 10 minutes in the centre of a hot oven. 
Raise the heat to 230c and pour the patter over the sausages. Cook for 10 minutes then lower to a moderate heat and continue cooking until batter is crisp and golden, this should take about 20-25 minutes depends on depth of batter. 
Serve hot.

Treasure Trove Thickshake
This is super easy and amazing on a hot day. 
Ingredients: 
1 Treasure Trove Ice-cream (Vanilla Ice-Cream with chocolate syrup and M&Ms through it) 
Milk 
Hershey’s Chocolate Syrup
Ice (optional) 
Instructions: 
Add everything into in a blender blitz until the m&ms are crushed into tiny pieces and the chocolate syrup is thoroughly mixed in.

Chilli Chicken Stir-Fry
I enjoy the prep of cooking the most, the cutting of the ingredients and stuff like that and this recipe is right up my ally because of that. It’s amazing. You can take it and run with it when it comes to the ingredients. I was actually taught this recipe at school and it’s become one of my go to. When I can find Choy Sum that is.

My version of the recipe under the cut line. 
INGREDIENTS: 
1/2 Tbsp Chilli Infused Olive Oil 
500g Chicken Breast, Cubed
2 Garlic Cloves, Minced 
3 Cm Piece of Ginger, Peeled, Grated 
4 Green Onions, Diced 
1 Long Red Chilli, Deseeded, Chopped 
1 Bunch Choy Sum, Trimmed, Chopped
2 Tsp Oyster Sauce 
1/2 Tbsp Peanut Oil 
2 1/2 Tsp  Soy Sauce 
2 Tsp Worcestershire Sauce 
1/2 Cup Thai Basil, Torn 
1 Packet Hoki Noodles
Instructions:
Heat pan/wok on high, add a small amount of chilli oil to coat pan.
Prepare Hoki Noodles according to directions. 
Add half the chicken until browned. Repeat with remaining chicken. Set aside 
Add a dash of more chilli oil, swirl to coat, add ginger, garlic, onions and chilli. 
Fry for 30 seconds, add choy sum.
Stir fry for a minute or until bright green. 
Return chicken with desired sauces. 
Stir through basil and serve with Hoki Noodles
Review/Tips:
I normally have trouble finding choy sum, don’t know why but they eventually turn in the store once again, but if i’m desiring it when I can’t find Choy sum, I substitute bok choy and it works out well enough. 
The thai basil I also got sick of struggling to find, so I grow that in my herb garden now which is cool.
 But yeah it’s an amazing recipe. I normally always forget to put the noddles on until after the stir-fry is done so i’m thankful that they don’t take long to cook. 
It’s good as well because you can grab basically any sauce and throw that in and it tastes great.

One-Pot Cheesy Ham Pasta
This is one of my  family recipes. It’s something easy, quick and tasty. 
Ingredients: 
500g Spiral or Shell Pasta 
100g Ham Diced 
1 Small Onion, Diced 
1 Level Tbsp Garlic Mince 
200g Cheese (Whichever you prefer) 
2 X 400g Heinz Tomato Soup
Instructions:
Cook the pasta to your liking and drain. Set aside in a strainer. 
Turn stove to medium. 
Add soup and garlic to the pan stir until it starts to boil. 
Add onion, Stir until tender. 
Add ham stirring for an additional minute. 
Add back the pasta and stir through the cheese until melted. 
Serve hot.

Homemade Fries

Ingredients: 
1 Kg Russet Potatoes, Peeled
1 Cup All-Purpose Flour 
1 Tsp Garlic Salt 
1 Tsp Onion Salt 
Salt and Pepper to Taste 
1 Tsp Paprika (Optional) 
Water, as needed
Vegetable Oil, For Frying
Instructions:
Chop your potatoes into sticks and place in large bowl of water so the potatoes don’t turn brown while you prepare the flour and oil. 
In a medium bowl mix together the flour, garlic, onion, salt, and pepper. Mix together, then add water until it makes a batter. 
Heat oil in deep fryer and coat the chips in batches, place chips carefully with tongs (I didn’t and was very lucky to not burn myself like an idiot.) into the oil and when the chips start to float there ready. 
Lay them on a plate with a peice of paper towel to soak up the excess oil. 
Continue until all chips are cooked. 
Tips/Review:
These tasted amazing and even though there was a lot it gave us something to munch on over the day. They stay tasty even after they go cold. 
The original recipe says to use a deep-pan but either way it’s still a little oily but that’s to be expected. 
9/10 amazing and you can adjust the flavourings to your preference.

Super Fluffy Sponge Cake
Today I made a test cake for a bigger cake I’m making in the future and it worked out rather well. This sponge cake i decided not to add the cream and jam but both can be added if wanted. 
This recipe make two cakes.
The Recipe I used is below. 
Ingredients: 
1 Cup Cornflour 
3/4 Cup Sugar
2 Tsp Plain Flour
1 Tsp Cream of Tartar
1/2 Tsp Bicarbonate Soda
4 Large Eggs, Separated
Pinch Of Salt
Instructions:
Preheat oven 180c. 
Prepare two cake pans with cooking spray and then if you want, line with baking paper. (I found my cake slipped right out of the pan with out the paper.) 
 Sift together the Cornflour, Cream of Tartar, Flour and Bicarbonate Soda 3 Times. 
Beat the Egg Whites and Salt in a separate, large bowl until stiff. Gradually add in the Sugar until combined. 
Add the egg yolks to the whites and beat until thickish.
Flour in the flour mixture gently, incorporating a little a first before adding the rest. 
Pour the batter evenly between both pans and bake for 15-25 minutes or until a skewer/cake poker comes out clean from the middle.
Review:
Tasted really sweet but also really good and it was super fluffy.  My younger cousin G loved helping me make it and then poking and eating it. I was surprised how quickly it cooked but my oven can be very dodgy at times but it worked well. 
So in the end 8/10. Too sweet for my taste but G thought it wasn’t sweet enough so depends on your own personal taste. Not so complicated but I ended up filling my sink, so not sure if that’s just the way i cook or what the recipe calls for. 
We iced one of the cakes with a strawberry buttercream frosting and at G’s suggestion we added sprinkles, Lot’s of sprinkles.
