In conclusion.
Over the course of 10 weeks I’ve been attempting to learn how to cook by making one dish per week. Additionally, I aimed to spread awareness about how easy it is to make healthy snacks.
Throughout this journey I’ve made mistakes and learned from them. Sometimes I used the wrong ingredients, measured things wrongs, and even forgot to cook the dish of the week. But despite my various mistakes I’m glad I didn’t give up and kept at it till the end. Looking back to the beginning of summer I’m certain that I’ve improved my cooking skills. I’m not saying that I became a 5 star Michelin over the course of 2 1/2 months but at the very least I know how to make scrambled eggs now.
Overall, I glad that I did this and I’m glad I at least attempted to show people that you can make delicious healthy snacks too.

My Tenth and Final Creation: Strawberry milk
Although you wouldn’t think that strawberry milk would be healthy, most of the sugar comes from the strawberry’s. The recipe I used was from “Baking Mischief”. These are the ingredients I used. It should be noted that this is for 2-3 servings.
2 cups milk preferably whole milk
1/2 cup hulled and chopped strawberries frozen is fine
1/4 cup (50g) granulated sugar
1/4 cup water
To make the strawberry milk, I had to make strawberry syrup. This was pretty simple. After cutting the strawberries in small pieces and adding it with the sugar and water in a small sauce pan, I proceeded to stir on medium heat for 15 minutes. After that I strained the syrup. All that's left is to mix it with the milk and stir.
The end result was okay, I think I should have used more strawberries. The way I made it, it tastes like milk with a bit of strawberries in it. But overall I think its a nice healthy drink. Although I don’t recommend one person to finish it all at once.

My Ninth Creation: Banana Muffins
This week I made banana Muffins. They weren’t very good, but an attempt was made and that's what counts.
I got the recipe from “Kristine's Kitchen”. These were the ingredients I used
4 tablespoons unsalted butter
1/3 cup honey
1 cup mashed ripe banana
¼ cup milk
1 teaspoon vanilla extract
2 eggs
1 ½ teaspoons cinnamon
1 teaspoon baking soda powder
½ teaspoon salt
1 ½ cups white whole wheat flour all purpose
As you can see, I changed a couple of ingredients from the original recipe. I used all purpose flour and used baking power instead of soda. I thought it wouldn’t make a difference, but it very much did. The muffins turned out really dense and didn’t rise very much. I’m pretty sure this is because I didn’t use the soda. They also didn’t taste that good, maybe I should have used more honey  or another type of healthy sweetener. But I’m not too sad that the muffins weren’t good. One of the purposes of this blog is to learn how to cook, and with that it’s inevitable that I make mistakes along the way.
Overall I think banana muffins have the potential to be delicious healthy snacks, but only if made properly.

My Eighth Creation: Strawberry Frozen Yoghurt
Today I made strawberry frozen yoghurt, or at least an attempted to make it. I got the recipe from ‘Just a Taste’.
Here are the ingredients I used
2 cups of strawberries
1 1/2 teaspoons of honey
1/2 cup of greek plain yoghurt
1 table spoon of lemon juice
I sliced the strawberries to make it easier on my blender to process. The end result looked more like a smoothie than frozen yoghurt. I think I could’ve made it better if I used frozen strawberries, or at least added some ice to the mix. But either way it tasted really good. This recipe only gets its sweetness from honey. I would recommend it for anyone looking for a healthy treat or smoothie.

My Seventh Creation: Piña Colada Smoothie
I decided to make a smoothie since I’ve never made one, and Piña Colada is one of my favorite drinks (non-alcoholic of course).
I got the recipe from Paula Dean’s website.
Ingredients used:
1 cup of sliced pineapples
1 cup of unsweetened coconut milk
1/2 a banana
1/4 cup of crushed Ice
1 teaspoon of honey
You may notice that i used different amounts of honey and banana than the recipe. I did this since I don’t really like honey, and I was afraid that if I added too much banana it would take away from the pineapple taste.
After I blended all the ingredients, I decided to strain the smoothie for pineapple hairs.
Overall the smoothie wasn’t as good as I thought it would be. It was fine, but not something I would make again. I’m not sure what went wrong, or how to make it better. But despite this, I learned how hard it can be to make a good smoothie. You have to consider how all the ingredients will affect each other. Will it make it more watery? Will it be too sour? Will it cancel out this specific taste? It’s not just put random stuff in a blender and it’ll turn out good enough, you need to taste test and consider what needs to be added.

My Sixth Creation: Peach Crisps
Today I made peach crips. It’s basically a base of sliced peaches topped with a granola like mixture.
I got the recipe from the blog, “Once Upon a Chef”. And because i had half of the amount of peaches in the recipe, I also halved the amount of the other ingredients the recipe called for.
The Recipe:
FOR THE FILLING
3 pounds peaches, peeled, pitted and cut into 1/4-inch slices
2 tablespoons lemon juice, from 1 lemon
2/3 cup granulated sugar
2 tablespoons cornstarch
1/2 teaspoon vanilla extract
1/8 teaspoon salt
FOR THE TOPPING
3/4 cup packed dark brown sugar
3/4 cup all-purpose flour
1/2 cup old-fashioned rolled oats
2/3 cup pecans, chopped
1 teaspoon ground cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon salt
1 stick (1/2 cup) unsalted butter, softened
I altered the recipe a bit to make it healthier. I used less butter, sugar, and brown sugar when I made the dish. I also didn’t have any corn starch so I obviously didn’t use any.
After making the topping and the filling, I transferred both in a glass baking pan and had them cook for 40 minutes in the oven. After I let it cool for 20 minutes, I had a piece. It was pretty good, most of the sugar comes from the peaches, especially if they’re on the soft and juicy side.
The process of making the peach crisp was simple, requiring only peeling of the peaches and miking together the ingredients.

My Fifth Creation: Egg “Muffins”
Today I made egg “muffins”. I mixed eggs with tomato, onion, and a bit of cheese, then pored the concoction into a muffin pan.
The ingredients I used were:
3 eggs
half an inch thick of a slice of onion
1 plum tomato
one slice of American cheese
3 pinches of salt
I got the idea and recipe for this dish from “DOWNSHITOLOGY”. First I whisked the 3 eggs, then minced the onion and tomato, I also cut the cheese in small pieces. I poured the vegetables in with the eggs. Then I greased the bottom of the muffin tray and poured in the mixture so it was a few centimeters from reaching the top of the cup. I put it in the oven at 350 for 15 minutes.
Overall: It was pretty good. Although not as good as the scrambled eggs. A way to improve the dish is if I added more cheese. I was conservative with how much cheese I used, but in hindsight it would’ve added a nice creamy texture to the muffins.

My Fourth Creation: My Mom’s Scrambled Eggs
My mom makes really good scrambled eggs. Today I asked to to teach me  how to make them.
My mom’s recipe isn’t any thing out of the ordinary, it normal scrambled eggs but with onions and tomato’s mixed in. These were the ingredients I used:
1 egg
1 plum tomato
half an inch thick slice of onions
First I cracked the egg and whisked it. Then I put a little more than a pinch of salt. Next I diced the onion and tomato. I poured some olive oil on a pan and set that in high heat. Then once my mom told me the oil was sufficiently hot, I switched it to medium heat and poured in the tomato first. She told me it was because tomato’s takes longer to cook than onions. So after about a minute, I poured in the onion. I made sure to continuously stir the pan to avoid burning. After another minute, I poured the egg in a circular motion. I let it cook for about a minute or two, making sure to move stir and divided the cooked egg so it would have that scrambled egg look.
Overall: It was delicious. It tasted exactly like my mom’s, probably because she was always behind me telling me exactly what to do. An i’d say it was pretty healthy too.

My Third Creation: Applesauce
Today I made applesauce. It was surprisingly easy to make. This was the first time I made something unsupervised, and I was a little nervous I was going to mess up and burn something.
I got the recipe from Allrecipes.com and it’s called Sarahs’s Applesauce.
Here are the ingredients I used:
2 apples
1/4 cup of water
2 table spoons of sugar
I only had 2 apples instead of the 4 the recipe called for, so I just halfed everything.
I messed up a little bit when it came to heating and simmering the apples, and because of this I had to heat them for about 10 minutes more than the 25 minutes the recipe said.
Overall: The applesauce tastes good and it’s really healthy. Most of the sugar comes from the apples and if you wanted to make it sweeter it only requires a tablespoon or two of sugar.

My Second Creation: “Egg” Salad
Today I made “Egg” Salad. I put quotations on egg, because although it had eggs in it, there were also so many more ingredients. I also wouldn’t say that the eggs were the star of the dish despite being a major component.
Something else I should mention is that I didn’t use a recipe, instead I just followed my parents recipe
Ingredients:
3 eggs
3 small potatoes
A cup of elbow macaroni
1/2 cup of mayonnaise
Half an onion
A couple slices of Serrano Ham
A whole apple
How I made it:
I boiled 3 eggs then cooked the pasta. Then I peeled the potatoes and steamed them in the microwave using a steamer contraption my parents have. I then minced the ham, apples, onions, and later the eggs once they finished boiling. In a big bowl I combined everything together and mixed it so all of the food was evenly dispersed throughout the dish.
Overall:
I was a little overwhelmed by the amount of different components that were involved in the salad. Like I had to make sure the eggs and the pasta water didn’t boil over, and that both of them were taken off the heat and allowed to cool for enough time. And this may sound simple enough but I was also cutting the ham onions and apples at the same time. But at the end of the day I did it, and learned how to peel stuff, boil eggs, and cook pasta.

My First Creation: Crepes with Strawberry Cream Cheese Filling
I decided to do crepes since they’re relatively easy to cook and the filling was just mixing the ingredients together. I figured that this would be a good way to ease into cooking.
I got the recipe from Tastes better From Scratch. These are the ingredients from the website.
Ingredients for the crepes:
4 large eggs
1/3 cup butter , softened
1/2 cup granulated sugar
1 cup all-purpose flour
1 1/4 cups milk
1 teaspoon vanilla extract
1/4 teaspoon salt
For the filling:
2 cups fresh strawberries , sliced
4 ounces cream cheese , room temperature
1/4 cup powdered sugar
1/2 teaspoon vanilla extract
1 pint heavy whipping cream
3 Tablespoons powdered sugar
When I made this I used half of what the recipe said. I also used less than the recommended sugar to make it a bit more healthy. Example: for the crepes I was originally going to use 1/4 granulated sugar, but for the sake of making things a bit more healthy, I used around 1/5.
Actually cooking the crepes wasn’t too bad. The stove is a lot more simple to use than it looks. Once figured out how to adjust the heat, making the crepes became a breeze. Although I did put too much oil on the pan when making the first one. I wanted to make sure it wouldn’t stick but the end product was a greasy butter smelling mess. But I learned my lesson and considerably held back on the PAM spray afterwards.
In the end the food tasted pretty good while being pretty healthy.
Next week maybe I’ll make something with mangos.
