Well I’m surprised. In my poll 74% of you said to make salad over cake with my beets!! So proud of you healthy people. 🤗 I heard you. I made you a salad and it’s delicious. I should probably tell you though... I’m still gonna make cake. 😜 • Roasted Beet & Avocado Salad with Pistachios and Herbed Cheese • This salad is really good. I ate it the day I made it, the next day, and yes, I’m probably going to eat it today too. You can adapt it with whatever greens, nuts & cheese you like. • Recipe-ish: • Add whatever greens you like to your bowl (I used kale and arugula). Add in chopped roasted beets, chopped avocado, pistachios and cheese (I used a creamy herb & garlic cheese the first time I made this and shards of shaved aged cheddar the second time. I call this my “I’m Too Lazy To Make Real Fried Chicken for the Picnic” Buttermilk Cornmeal Fried Chicken ✨ It’s still fried. It’s still chicken. But it takes a fraction of the time to make and will totally satisfy your fried chicken cravings. We still have a little picnic time left don’t we? • Recipe-ish: • Pound out chicken breasts until they’re about 1/2” thick and cut into smaller pieces. Place in a container and cover with buttermilk and a good splash of hot sauce. Refrigerate for a couple of hours. • When ready to cook, crack an egg into the buttermilk chicken and mix in well. In a large flat dish combine about 1 1/2 cups Panko, 1/2 cup cornmeal, 1 tsp pepper, 1 tsp salt, big pinch cayenne. Bread the chicken pieces with the crumbs. • Heat 1/2” oil in a cast iron skillet. Pan fry the chicken pieces in batches for about 2-3 minutes per side. Drain on paper towels. When life gives you all the herbs, this is what you do with them... ✨ Tabbouleh with Sumac, Chickpeas and Feta ✨ I love love love this salad. It’s an explosion of flavours and it keeps well so you can make a huge batch and eat it for days. It’s hearty and light at the same time, salty, tangy, herby... all the good things. Perfect on its own, but also good piled into a wrap with hummus or chicken and packed to go. • Recipe-ish: • Make the bulgur: Pour 1 cup bulgur into a bowl and cover with 2 cups boiling water. Little Applesauce Vanilla Pancakes with Brown Sugar Cinnamon Butter ✨ I am always messing with the ingredients in my pancakes. You would not believe the things I’ve thrown into them. Sometimes it works and sometimes they turn into hockey pucks. This has made my kids very suspicious of breakfast. 😬 So, when a box of buttermilk pancake mix came home from our vacation I couldn’t just follow the directions on the box... and this recipe was created... and it is so yummy. Not Sweet Green Chile Baked Beans with Beer and Smoked Paprika ✨ When you’re making ribs for a dinner party and you have a vegetarian in the family who reeeeeeeaally doesn’t like sweet baked beans, you get creative. • My daughter and I worked together to create a savoury baked beans dish that she would enjoy and omg it worked (despite the fact that I tried to sneak in a little maple syrup... and got shut down 😬). • These beans are delicious. Full of flavour, creamy and a little spicy. Pretty sure these will be making an appearance on our patio table regularly. • Recipe-ish: • Sauté 1/2 cup finely diced onion and one large minced garlic clove in about 2 Tbsp butter until soft. • Add in: 1/4 tsp smoked paprika 1/4 tsp cumin 3/4 cup dark beer 1 can green chiles 2 tsp green hot sauce 1/4 cup vegetable broth Stir and let simmer for a couple of minutes • Add in: 1 can black beans (rinsed & drained) 1 can navy beans (rinsed & drained) S&P Let cook together for about 5 minutes. • Stir in the juice of half a lime and 2 Tbsp butter. Cherry Tomato Radiatori with Fennel and Balsamic-Honey Roasted Sausages ✨ This is the kind of pasta dish I love. I also love all the other pasta dishes. 😬 The tomatoes are bright and fresh, the sausages are rich and flavourful, the fennel is just so good... and then we pile on the cheese. So much yum. • Recipe-ish: • Heat your oven to 450. • Place 4 Italian Sausages on a parchment lined baking sheet, coat lightly with oil and drizzle with about a Tbsp each honey and aged balsamic vinegar (the thick & sticky kind). • Chop a large bulb of fennel and toss with olive oil, about a Tbsp white wine, a pinch of sugar, the zest of half a lemon and S&P. Spread out on a baking sheet. • Put both baking sheets in the oven and cook for about 20 mins, turning/stirring about halfway through. • Make the sauce: pour 1/4 cup olive oil into a large skillet and add in 3 minced garlic cloves, cook over low heat for about 5 minutes. Add in one 28-oz can diced tomatoes, one 14-oz can cherry tomatoes, a pinch of sugar, a pinch red pepper flakes and S&P. Turn the heat up to low-medium and gently simmer while you make everything else. • Cook 1lb Radiatori in well salted water. • Stir about 2 Tbsp butter into your sauce and then add in the cooked pasta. Fresh Mint & Honey Jasmine Iced Tea With Lime (and Bourbon) • My Mojito Tree (aka mint plant) never fails me, but sometimes we run out of rum. 🤷🏻‍♀️ This little experiment turned out perfectly and is as good as a mocktail as it is when spiked. • Recipe-ish: • Add a handful of fresh mint and a couple jasmine green tea bags into a glass jar and pour in about 4 cups boiling water. Stir in 1-2 Tbsp honey. Let steep for at least 20 minutes and cool. Add in the juice of half a lime and a splash of bourbon if you like. Strawberry Rhubarb Vanilla Jam with Chia. Super Easy. Very Small Batch. Not Scary at All. • Making jam is super intimidating. You need cases of fruit, you have to make sure the proportions are right, you need to add pectin whatever that is... and you might already know how I feel about canning. 😳😵 • This has none of those concerns. You need some fruit, some sugar, a pot and about 10 minutes. And it’s so much better than any store bought jam. • I wish you could dip a spoon into your screen and taste this jam right now because it is THAT good. • Recipe-ish: • Combine in a medium sized saucepan: 2 cups diced rhubarb 2 cups diced strawberries 1/2 cup cane sugar 3 Tbsp fresh orange juice (or lemon) • Cook over medium-high heat for about 10 minutes, stirring often, until thickened (you can turn the heat down if it’s splattering like crazy). • Remove from heat and stir in about a tsp vanilla and 2 tsp chia seeds. Pasta with Kale Basil Walnut Pesto and Lemony Ricotta • So I have a bit of a problem in my garden. There are hornets all over my kale and they don’t seem to want me picking it. Now I’m not saying they ARE murder hornets, but guys they are quite mean, they are NOT SMALL and I think they’re close enough. So now every time I want some kale I’m out there in a frenzied sort of mission impossible operation with the hose in one hand (which they don’t seem to be scared of at all but it’s all I’ve got) while trying to snag kale leaves with the other. • Gardening is hard. • But it’s all worth it for the food. And this pasta is so good. Such a great way to use up greens and also a great way to get kale haters to eat kale. I’ll make you a batch if you come pick the kale. 😬 • Recipe-ish: • Make the pesto: • In a food processor combine 2 cups packed chopped kale and 1 1/2 cups packed basil leaves. Process until finely minced. Add in 1 tsp sea salt, 2 garlic cloves, 1/3 cup toasted walnuts. Turn the processor on and drizzle in about 1/2 cup olive oil. Blend until fairly smooth. Add in 1/2 cup grated Parmesan and pulse until combined. Set aside. • In a bowl mix about a cup of ricotta with a good squeeze of lemon juice and a good pinch of lemon zest. Set aside. • Cook whatever pasta you like in well salted water and drain, reserving about 1/2 cup pasta water. • Toss the pasta with some pesto and some pasta water to loosen it up. But these little guys are actually really, really good! Especially like this... ✨Patty Pan Squash and Green Beans with Browned Butter White Balsamic and Dill✨ • Top tip: Do not overcook these. That’s what makes them taste more “squashy”. Unless you like that. 🤷🏻‍♀️ • Recipe-ish: • Brown a few Tbsp butter in a small pan and set aside. • Place your green beans and squashes in a large, lidded skillet with a few Tbsp water. Crank the heat up, put the lid on and let them steam for about 2 minutes. Remove the lid and make sure the water evaporates. Turn the heat down to medium. Add in a splash of olive oil and some salt. Sauté for a couple of minutes and then stir in the browned butter, a splash of white balsamic vinegar, and about a Tbsp chopped fresh dill. Toss all together, add a bit more S&P. Ancho & Brown Sugar Rubbed Ribeyes with Whiskey Cream Sauce • Hoo boy was this good. I love steak. And to me, nothing beats a ribeye. I love the texture, the flavour, the fat. That’s right, I said I love the fat. I am not that person who carefully trims and slices all the fat off her steak. Bring it on! Get it all salty and charred and crispy. So darn good. • This rub is amazing. It’s my new fave. The Ancho has such a great flavour and the brown sugar caramelizes and tastes incredible. And the sauce... takes this completely over the top. • If you like steak you must try this. • Recipe-ish: • For 2 steaks • Make the rub: Combine 2 tsp Ancho Chili Powder, 2 tsp brown sugar, 1/2 tsp cumin, 1 1/2 tsp kosher salt, 1 tsp coarse ground pepper. Rub well all over both sides of the steaks and let sit for an hour or so (or refrigerate for a few hours). • Make the sauce: melt 1/4 cup butter in a saucepan and stir in 1/4 cup finely diced onion. Cook over medium-high heat until the onion has softened. Stir in 1/4 cup whiskey and cook until most of the whiskey has evaporated. Stir in 1/2 cup beef broth and simmer until the sauce has reduced by about half. Whisk in 1/2 cup heavy cream.
