Sonja was raised in a royal court of vampires, a veritable vipers nest where she had precious few that she could be honest and open with. She is accustomed to building up many walls to protect herself, out of concern for never truly knowing who she can fully trust.
Prove to her that she can trust you, be patient to her about opening up and that she will not be hurt by you if you allow her to vulnerable. If she can't trust you, or let her guard down completely around you she will keep you at a arm's distance for some time.
Be patient and keep trying, and she will come to trust you. Once that trust is earned it will be hard to shake it, and she will have no qualms to raze entire kingdoms to the ground if it means the protection and safe return of those she loves.

Gift her things. She isn't materialistic, it doesn't need to be something expensive. Any gift that was given from the heart and not to curry favour from her, is one she'll keep for centuries to come. But how to purchase a gift for someone who's immortal and able to procure just about anything that catches her eye? That's the trick isn't it, and a difficult question to answer.
Gift her your time, a nice dagger, a book that you enjoyed reading that you want to share with her, or even a thick blanket when the cold weather comes back around. You could pluck a dandelion flower from the ground and offer it up to her and she will cherish it, either press it between a book to keep it preserved or have it encased in resin and become a bauble on her dresser or bookcase shelves.

Do you have a deck of cards? Get ready to find out how someone can cheat at crazy eights. What about scrabble? Bring that out and challenge her to game if you're ready to have to run words through a translator on your phone, and argue over whether it counts as a word if it hasn't been in the dictionary or common lexicon for three or more centuries.
Ask what certain words mean only if you dare. Never, ever, attempt to play poker with her. You will loose all of your money. Don't play strip poker either, you'll loose all your clothing and she might shed only her jacket.
If you're brave enough to play monopoly then congratulations, you've found a game that she technically cannot cheat at. But it will be the longest game of your life. Games like battleship or Risk, play those if you're willing to forfeit all sense of pride and be emotionally devastated by the end of the game. She was a commander of vampiric armies for centuries, strategy games are where she excels. Have her stand in for you at a game night, release her unto others and revel in the destruction she will bring about.
She is banned from playing Uno ever again.

Sonja likes blacksmiths. Have you seen the muscles they have? But that's truly secondary to why she likes to watch a smith work. She finds it fascinating to watch a bladesmith craft a blade from nothing, or a silversmith craft a beautiful necklace from mere scraps of metal.
Go with her to markets or competitions where different smiths and artists gather to show their wares, compete against one another to show off the mastery or their talents. Keep an eye out if someone uses purely historical methods for their crafting, she will latch onto them to learn from them or offer what she knows and will come alive in a way select few ever get to see.
Arrange for the two of you to undergo a class or two to craft something under the eye of a bladesmith, you'll soften her up as smithing is one of the few arts that not even immortals can best humans with with endless time on their own hands. It's a great leveller between the vampiress and mortals.
If you are capable of smithing; be it jewelry means, blade smithing, or black smithing, then you have a leg up on others that you may shamelessly exploit.

Dancing is a skill all nobles and royals are expected to have, time has allowed Sonja to learn every means of it. Other than fighting and roaming the woods and letting herself be as wild as she pleases, it's one of the few instances you'll see her relax and simply let go and be herself in its truest form. It's her most private hobby that she indulges in, she enjoys travelling all across the world to learn new dances and methods she's never tried before.
Part of why she's so hard to defeat in battle is because she is a talented dancer, her strikes are incredibly precise and she knows just how hard she can push her body and fall into the rhythm of the war drums and become a living embodiment of Death herself. Sonja's skills in battle is what led the vampire army to being called deathdealers in more modern times--even if she herself was scrubbed largely from the coven history.
If she's out somewhere and she hears a tune she likes, you'll catch her subtly tapping along to the rhythm, or perhaps her fingers twitching as they move to the shapes of the chords being played (she can play most instruments as well). Ask her to dance, either take the lead and set her free--or have her take the lead and have her guide you through dizzying spins and turns of a complicated dance made easy from her centuries of honed talents.
You don't have to be a good dancer yourself. Ask her to lead, she'll make you look good. If you're already good at dancing, she will make you feel as if you're flying.
