This last week has been pretty active for me. I’m so tired, dudes.
Explanation under the cut.
Wednesday, I did a walk around my neighborhood for exercise. This place is geographically confusing and I was hoping walking around in it might help. It did not.
Thursday we went to Costco. I think it’s called Tokyo Bay on the map, so that’s what we call it. It has 2 floors and like 4 floors of parking on top of it. Did a bunch of shopping.
Friday we went to the doctor. He’s retiring because he’s old as fuck and he has a heart arrhythmia and he can’t really work anymore. He made a whole letter of recommendation for us that we had to pick up. Husband wanted to get him a gift, so he got one on the way home. Then he wanted to put it in something and the only gift bag we have in the house had some English on it that was way inappropriate, so we didn’t. Then we went out to eat at Hamazushi after scoping out the new doctor’s address. Got home late.
Saturday we got up early and headed to Tokyo on foot. Had our adventure. Got home like 10-12 hours later.
Sunday we tried to relax and were just grumpy and tired. Husband fed me pancakes and syrup from McDonald’s. This may have been bad for my PCOS. Or I’m tired and not getting enough rest.
Monday I spent all day doing something. Vacuumed the apartment. Not great, but it looked better. Made myself chicken and brussel sprouts and some brown rice. We got chicken for me at Costco, so I had to deskin and process all of it. That meant cutting them in half, seasoning them, putting them in bags. I also labeled the bags in case the husband ever wanted to share them for dinner. Had to do dishes, like, twice. Ate my lunch. Got back into the kitchen and made 12 breakfast muffins for my husband, 3 with cheese. This meant making a bunch of microwave bacon (20), and sausage patties and English muffins. Then I wrapped them in paper towels and put 6 in the freezer and 6 in the fridge. Then I munched on some bacon and left some for the husband to snack on.
Husband had to go to the pharmacy to pick up a prescription and they apparently are only good for like 3 days after issue so we had to go. I walked up to the store to meet him there. He picked up his pills and it was wildly more expensive than we thought. He proceeded to stress out the rest of the evening. We went to a place called Mega Donkihote (Don Quixote) and went shopping. It’s an old building, low ceilings, grubby and unclean looking, but I wanted to go to the Daiso that’s there and also do some grocery shopping. Off we went and did our shopping, but the husband was super miserable and I was trying to be accommodating of our money problems, but he kept saying things like “Your health is more important” and I kept being like Yeah, but would you rather spend $5 on spaghetti or $1 on twice as much spaghetti? But I didn’t say that and just picked up the low carb spaghetti. He doesn’t even eat spaghetti anymore since we found garlic knots at Costco.
By the time we got home, we were both so exhausted that I just made leftover pizza for him and a weird Korean rice cake thing for myself. It was Coco’s curry flavor but it was so strong and spicy I couldn’t eat it very fast. I explained to my husband that I was so nervous about getting comfortable because it meant I wouldn’t get up and do the things that needed doing. I was exhausted and my feet hurt and tired but I had to be at 11. It was painful.
Tuesday, I got up and did it again. Woke up knowing this was like my one good day to do laundry this week, so I got up to do it after getting my husband ready for work. Made a PB&J, put some snacks and coffee in his bag, kissed him goodbye. Tried to sit down and got nervous about the laundry, so I started it. Then I got hongry and had to wait. Wrote a little while I was waiting because I was tagged in a Last Line tag. Washer finally got done and I hung up all the clothes. Made lunch and tried to relax and couldn’t figure out how. Ended up doing a second load of laundry later. I will also end up having to make tonkatsu for the curry we’re having for dinner, but thankfully, the curry and the rice are all microwaveable. Slaving over a hot microwave is easier than the alternative.
Maybe I can sleep tomorrow.

This yr has been a disruptive one for most, so I’m hoping 2021 will be better *fingers crossed* December was a bad month, overall, for me. I wasn’t stressed but I think I suffered a minor PTSD in regards to a student. It was more frustrating/annoying, if anything. As a lead student person in the department, I have seen a lot of students but this one was special. .. There are so many things that I don’t understand about ppl, in general, in addition to why some regulations are in place. (lol makes me sound like a rebel, but I’m not)
... At the end of the day, my expectations are high. That’s all. :D

CURRY! I love this brand of ‘instant curry’!! You guys should all try this. There are several types/levels of spicy. This medium one was mild to me, but there is a mild one that’s like. .. very, very mild.

The package looks like this inside. Several options to heat it up... you can put the silver pack in a pot of boiling water; you can pour out on top of your rice or whatever & heat up (in microwave/oven), or what I like to do is actually squeeze out contents & cook.

Remember I told you one of my staple lunches/dinners for work is pasta? Well, sometime earlier in the month, I had a little bit of the rosee sauce left (wasn’t enough) so I looked in the fridge to see what else I can add.... I settled on cheddar cheese lol turned out great!

This was interesting!! My brother dropped off some mini soft taco shells for me & this was what I did with them. I put in some cream of mushroom soup & Swiss cheese, then microwaved them till it become one homogenous mixture. & then I put them into my toaster oven so I could ‘brown’ the cheese. The cheese-containing filling didn’t turn brown but the taco shells started browning lol fail! But it was good!

Following the success of the cream of mushroom soup + Swiss cheese combo.... I applied that to penne pasta!

Chicken thigh with Korean rice syrup + gochujang. I normally do a saucier version of this, which also contains soy sauce, but I decided to make a grill-like chicken thigh dish so the rice syrup + gochujang is more like a glaze than a sauce. Turned out well!

There was an evening where dinner was delayed, & so I ended up cooking a quick rice noodle dish for myself. This was thin rice vermicelli with oyster sauce-cooked tofu + a braised Chinese mushroom condiment + soup scallops. (The broth was chicken broth my mom had made with the Instant Pot so I just poured that over top.) So yes, this was a vegetarian dish haha which is unusual but it was getting kinda late for dinner so. .. less is more :P
