Tofu Veggies w/Peanut Sauce 1️⃣🥢Marinate firm tofu slices in soy sauce, lime juice, sesame oil for a few min or few hours 2️⃣ Cook some rice* (or use pre-cooked) 3️⃣🥜 Make Peanut Sauce* •equal parts peanut butter, soy sauce and plain rice vinegar + •Lots of minced ginger •A little crushed garlic •Dashes red pepper flakes •Blend with handheld or blender TIP: make plenty, it keeps in fridg! 4️⃣ Prep Veg •Shred carrots •Dice cucumber •Slice radishes •Dice red bell peppers •Chop any other veg you have, or sauté greens 5️⃣Brown tofu in a little oil 6️⃣Scoop rice into bowls.
