SHOPPING LIST FOR TODAY:

big pot for fudge

look at rice cookers

corn chip

canned tomatoes

roommates and i are planning a family meal night this week and i gotta choose the recipe, so I'm making 'tamale casserole'. I'm vegetarian so I'm probably gonna DIY the chilli and have leftovers.

The recipe is from Sharing Recipes: A Book of Favourite Recipes, compiled by the Women's Social Club of Saddlebag Lake Resort!

Ingredients:

1 large bag corn chips

1 can chilli with beans

1 c. water

1/3 c. chopped onion

1/4 c. catsup

1 Tbsp. sugar

Spray crock pot with nonstick spray. Spread corn chips to cover bottom. Combine remaining ingredients; pour on top. Cover with corn chips. Cook on high one hour, turn to low and cook several hours. Any leftover can be used for filling tacos.
