Preparing vegetables will always demand some extra time and care. However, these days we're all trying to get more vegetables into our daily lives. Knowing more general ways to cook them only works in our favor.
The transformation from raw to cooked never ceases to inspire and once you learn the overall cooking processes, you can tackle any vegetable like a pro. Below is just a start of ways you can experiment with vegetables but hopefully this inspire more vegetable cooking in your kitchen.
Blanching
Blanching is a quick cooking process that involves submerging vegetables in boiling water for a short period of time. This process helps vegetables lose that extreme crispy bite that might be too much for some meals. Blanching works great for items like asparagus, broccoli and cauliflower but can also be great for greens.
How to blanch
To blanch, bring a pot of salted water to a boil with a bowl of ice water nearby. Drop in your prepped vegetables and let them cook for only a few minutes. The timing will depend on the heartiness of what you're cooking. Spinach will take around 30 seconds while broccoli could be minutes. You want them to still be bright, colorful, and crisp but not crunchy. Strain the vegetables and transfer to the ice bath.
How to use blanched vegetables
I like to use blanched vegetables for vegetable cakes, stir fries, or if I plan on pan-frying the vegetables after blanching. Getting blanching under your fingers is also a good thing to have in your pocket if you ever plan on freezing vegetables (which helps seal in color, flavor, and nutrients.)

One of my favorite ways to cook harder vegetables like squash is by tossing them in oil and salt and popping them in a 425˚F oven. Let them roast under high heat for 30, 40, 50 minutes - I never really set a timer I just check them occasionally with a fork to test for softness and some good coloring.

How to steam vegetables
For steaming, all the vegetables should be roughly the same size, to cook evenly. Place about 1” of water in the bottom of a pot. This water should not touch the steaming basket, though. Bring that water to a boil, add your vegetables, turn the heat to a simmer, cover, and cook until the vegetables are just-tender. The vegetables should be bright in color still (similar to blanching).
Remove the steaming basket and run the vegetables until cold water to stop the cooking process then season as desired! Steamed vegetables do well when finished with fats like olive oil, homemade aioli, or other types of rich sauces.
How to use steamed vegetables
Steamed vegetables make for great side dishes. I also like to use steaming if I plan on pureeing something into a sauce or soup. You could also use as a filling for enchiladas, frittatas, or grain bowls.

Coat them in the hot fat, and let the magic of fat and heat work wonders. Shoot for even coloring and frequent stirring until everything is tender and ideally caramelized or tastefully browned.

Sautéed vegetables work well if you're already making a meal on the stove-top. Tacos, grain bowls, and egg skillets are all great ways to use sautéed vegetables.

There is no canning required, just some vinegar, salt, sugar, and spices if you wish. There are many different variations on pickling, which can be found along with instructions here.
How to use quick pickles
Quick pickles are great on sandwiches, as a topping for salads/grain bowls, or as a simple snack. Many different vegetables work well as quick pickles- just play around and find what you like!

Preparing vegetables will always demand some extra time and care. However, these days we're all trying to get more vegetables into our daily lives. Knowing more general ways to cook them only works in our favor.
The transformation from raw to cooked never ceases to inspire and once you learn the overall cooking processes, you can tackle any vegetable like a pro. Below is just a start of ways you can experiment with vegetables but hopefully this inspire more vegetable cooking in your kitchen.
Blanching
Blanching is a quick cooking process that involves submerging vegetables in boiling water for a short period of time. This process helps vegetables lose that extreme crispy bite that might be too much for some meals. Blanching works great for items like asparagus, broccoli and cauliflower but can also be great for greens.
How to blanch
To blanch, bring a pot of salted water to a boil with a bowl of ice water nearby. Drop in your prepped vegetables and let them cook for only a few minutes. The timing will depend on the heartiness of what you're cooking. Spinach will take around 30 seconds while broccoli could be minutes. You want them to still be bright, colorful, and crisp but not crunchy. Strain the vegetables and transfer to the ice bath.
How to use blanched vegetables
I like to use blanched vegetables for vegetable cakes, stir fries, or if I plan on pan-frying the vegetables after blanching. Getting blanching under your fingers is also a good thing to have in your pocket if you ever plan on freezing vegetables (which helps seal in color, flavor, and nutrients.)

Let them roast under high heat for 30, 40, 50 minutes - I never really set a timer I just check them occasionally with a fork to test for softness and some good coloring.
How to use roasted vegetables
Roasting vegetables is a great way to lock in flavor and have a bit of char-flavor to the items. Roasted vegetables are perfect as a side but I love adding them to all kinds of meals including pizza toppings, tacos, pasta, and salads.
Example uses roasted vegetables:
Sweet Chili Roasted Sweet Potato Spring Rolls Roasted Tomato Sauce Einkorn Risotto with Roasted Asparagus Chili Roasted Broccoli

Grilled California Avocado Chicken | The Recipe Critic
Grilled California Avocado Chicken is tender chicken marinated in an amazing honey garlic balsamic sauce and is grilled to perfection! It is topped with a thick slice of mozzarella cheese and avocados, tomatoes and basil. This chicken is INCREDIBLE!!
The combination of chicken and avocado is one of my favorites! If you love California chicken and don’t have a grill try this delicious California avocado skillet chicken.
Grilled California Avocado Chicken
So, I could not wait to share with you this Grilled California Avocado Chicken!  Cue all of the heart eye emojis for the avocado, tomato, and basil combination!!!  My mouth was watering making this avocado salad of sorts to top off the chicken. It provides a fresh and delicious element on top of the moist, flavorful chicken. It also makes for a vibrant, colorful, and delicious presentation. So pretty!  In spite of looking too great to eat, this grilled California avocado chicken was quickly devoured by my family!!
Usually, when something looks and tastes this good, I know I am going to have to put in lots of ingredients and lots of time to make it.  However, this avocado chicken comes together so quickly and easily I was shocked!! I am telling you, this was one of the best things that I have ever thrown on the grill. I already can’t wait to make it again. The flavors came together so well and I know that this will become a family favorite at your house as well!
Avocado Chicken Ingredients:
First of all, this chicken marinates in a honey garlic balsamic sauce. I mean who doesn’t love that flavor combination? It marinates to perfection and honestly grills to tender and juicy perfection! The flavor is absolutely unreal in this chicken.
Balsamic vinegar: This is the acidic ingredient in the marinade that will act as a tenderizer.
Honey:  Part of the marinade that adds flavor and keeps the chicken super juicy.
Garlic: Cloves, minced
Olive oil: The oil in your marinade will penetrate the meat, and bring the other flavors of the marinade along with it.
Italian seasoning:  The perfect blend of flavors for most things, but especially this avocado chicken!
Salt and pepper: To taste.
Chicken: Boneless skinless breasts will grill best.
Mozzarella: I love how fresh sliced mozzarella pairs with the tomato and basil, but any good melting cheese will work to smother the chicken.
Avocados: Diced to bite size perfection.
Roma tomatoes:  Any tomato will work, just be sure to cut into bite sized pieces.
Basil: Fresh chopped basil is perfect on this chicken.
Optional: Balsamic vinegar for drizzling
How to Grill California Chicken:
And just when you think that it can’t get any better, top it with a thick slice of mozzarella cheese when it comes off of the grill. It gets so melty and ooey gooey. Then, JUST when you think it can’t possibly get any better with the ooey gooey cheese on top comes the avocado, tomato, and basil.  Mind blown!
Marinate chicken: In a medium sized bowl, whisk the balsamic vinegar, honey, garlic, olive oil, italian seasoning, and salt and pepper. Add the chicken breasts and coat. Marinate for 30 minutes.
Mix avocado topping: Meanwhile, in a small bowl add the avocado, tomato, basil and salt and pepper to taste. Set aside.
Grill: Heat the grill to medium high heat. Grill the chicken on each side about 6 minutes or until cooked throughout and no longer pink.
Dress chicken and serve: Top with mozzarella cheese and avocado, tomato basil mixture. Drizzle with balsamic vinegar and serve immediately.
Grilling the Perfect Chicken:
Make sure your grill is clean before you begin and rub some oil on the grates to prevent the chicken from sticking.
Thinly sliced chicken breasts won’t take as long to reach temperature. If your chicken breasts are really thick, pound them to thin them out.  It will reduce cooking time and help it to cook more evenly.
Basic rule is 3-5 minutes per side on medium to high heat, but will vary depending on the thickness of your meat.
You are aiming for a medium, indirect heat while grilling so that the outside of the chicken does not burn while you get the inside up to temperature.
Keep the grill closed while cooking. This will keep the heat in and allow the chicken to cook quicker and more evenly.
The chicken is done the temperature reaches 165 degrees or the juices run clear.
The chicken will continue to cook slightly even after removed from the grill.
Variations:
Marinate: Marinate in a combination of olive oil, lime juice, cilantro and garlic. (The longer it marinates the more flavor you will get, so if you have more time, let it sit in the juices for up to 24 hours.)
Add more flavor! If you want even more spice and flavor: Add garlic seasoning on the chicken and use pepper jack cheese instead of mozzarella.
Toppings: To change it up, you could even add black olives or bacon on top. Because let’s be honest.  Everything is better with bacon!
What to serve with it? Serve with rice, a fresh salad, or seasoned fingerling potatoes.
Bake instead of grilling: Cover the chicken with foil and cook chicken only at 350 for approximately 45 minutes depending on thickness of the chicken.  Then, uncover and add cheese and basil and place back in the oven for an additional 5 minutes or until the cheese melts.  Finally, top with the fresh avocado mixture immediately before serving.
Storing Grilled Chicken:
I am not sure you will have any leftovers with this delicious chicken but it is easy to store just in case. Here are a few steps to help keep your grilled chicken fresh.
Allow to cool after cooking no more than 2 hours before refrigerating or freezing.
Store in a shallow airtight container.
Grilled California Avocado Chicken will be good in the refrigerator for 3-4 days or in the freezer for 4 months.
To avoid freezer burn be sure to pack your chicken tightly with airtight heavy-duty foil, plastic wrap or freezer paper or putting it in a freezer bag.

3/4 cup balsamic vinegar
1/4 cup honey
3 cloves garlic minced
2 Tablespoons olive oil
2 teaspoons italian seasoning
1/2 teaspoon salt
1/4 teaspoon pepper
4 boneless skinless chicken breasts
4 slices mozzarella cheese
2 avocados diced
3 roma tomatoes diced (any tomato will work)
1/4 cup fresh chopped basil
salt and pepper
balsamic vinegar for drizzling optional
In a medium sized bowl whisk the balsamic vinegar, honey, garlic, olive oil, Italian seasoning, and salt and pepper. Add the chicken breasts and coat. Marinate for 30 minutes.

The combination of chicken and avocado is one of my favorites! If you love California chicken and don’t have a grill try this delicious California avocado skillet chicken.
Grilled California Avocado Chicken
So, I could not wait to share with you this Grilled California Avocado Chicken!  Cue all of the heart eye emojis for the avocado, tomato, and basil combination!!!  My mouth was watering making this avocado salad of sorts to top off the chicken. It provides a fresh and delicious element on top of the moist, flavorful chicken. It also makes for a vibrant, colorful, and delicious presentation. So pretty!  In spite of looking too great to eat, this grilled California avocado chicken was quickly devoured by my family!!
Usually, when something looks and tastes this good, I know I am going to have to put in lots of ingredients and lots of time to make it.  However, this avocado chicken comes together so quickly and easily I was shocked!! I am telling you, this was one of the best things that I have ever thrown on the grill. I already can’t wait to make it again. The flavors came together so well and I know that this will become a family favorite at your house as well!
Avocado Chicken Ingredients:
First of all, this chicken marinates in a honey garlic balsamic sauce. I mean who doesn’t love that flavor combination? It marinates to perfection and honestly grills to tender and juicy perfection! The flavor is absolutely unreal in this chicken.
Balsamic vinegar: This is the acidic ingredient in the marinade that will act as a tenderizer.
Honey:  Part of the marinade that adds flavor and keeps the chicken super juicy.
Garlic: Cloves, minced
Olive oil: The oil in your marinade will penetrate the meat, and bring the other flavors of the marinade along with it.
Italian seasoning:  The perfect blend of flavors for most things, but especially this avocado chicken!
Salt and pepper: To taste.
Chicken: Boneless skinless breasts will grill best.
Mozzarella: I love how fresh sliced mozzarella pairs with the tomato and basil, but any good melting cheese will work to smother the chicken.
Avocados: Diced to bite size perfection.
Roma tomatoes:  Any tomato will work, just be sure to cut into bite sized pieces.
Basil: Fresh chopped basil is perfect on this chicken.
Optional: Balsamic vinegar for drizzling
How to Grill California Chicken:
And just when you think that it can’t get any better, top it with a thick slice of mozzarella cheese when it comes off of the grill. It gets so melty and ooey gooey. Then, JUST when you think it can’t possibly get any better with the ooey gooey cheese on top comes the avocado, tomato, and basil.  Mind blown!
Marinate chicken: In a medium sized bowl, whisk the balsamic vinegar, honey, garlic, olive oil, italian seasoning, and salt and pepper. Add the chicken breasts and coat. Marinate for 30 minutes.
Mix avocado topping: Meanwhile, in a small bowl add the avocado, tomato, basil and salt and pepper to taste. Set aside.
Grill: Heat the grill to medium high heat. Grill the chicken on each side about 6 minutes or until cooked throughout and no longer pink.
Dress chicken and serve: Top with mozzarella cheese and avocado, tomato basil mixture. Drizzle with balsamic vinegar and serve immediately.
Grilling the Perfect Chicken:
Make sure your grill is clean before you begin and rub some oil on the grates to prevent the chicken from sticking.
Thinly sliced chicken breasts won’t take as long to reach temperature. If your chicken breasts are really thick, pound them to thin them out.  It will reduce cooking time and help it to cook more evenly.
Basic rule is 3-5 minutes per side on medium to high heat, but will vary depending on the thickness of your meat.
You are aiming for a medium, indirect heat while grilling so that the outside of the chicken does not burn while you get the inside up to temperature.
Keep the grill closed while cooking. This will keep the heat in and allow the chicken to cook quicker and more evenly.
The chicken is done the temperature reaches 165 degrees or the juices run clear.
The chicken will continue to cook slightly even after removed from the grill.
Variations:

Before making drastic lifestyle changes, you can check with your doctor, personal trainer, and dietician.
1. Eat enough protein
The rule says you need to consume protein in grams more than your body weight by 1-1.5 times.
For example, if your weight is 75 kg, you should eat 150 to 225 grams of protein daily if you want to build muscle gradually.
Bodybuilders can eat two to three of their body mass in grams of protein, sometimes more, but for most of us, this will be unnecessary.
If you are overweight, replace your ideal body weight and count in grams. Muscle-building proteins include:
Red meat: beef, pork, lamb, venison, etc.
Fish: tuna, salmon, swordfish, perch, trout, mackerel, etc.
Birds - chicken breasts, turkey, ducks, etc.
Eggs, especially egg whites. Egg yolk contains a lot of cholesterol, but one or two a day is not harmful to health.
Dairy products: milk, cheese, cheese, yogurt, etc.
2. Learn the difference between complete and incomplete proteins.
To build muscle, you should consume the high-quality protein found in eggs, meat, fish, cheese, milk, and most other animal products.
The Golden Rule: If you are bleeding or breathing, it is a complete protein. There is a mass of high-quality non-animal proteins, and this means that you can still build muscle while you are vegetarian. Whole plant proteins include:
soybean
Quinoa
black wheat
Chia
Hemp
Beans or beans with rice
3. Eat foods rich in PDCAAS (a protein that is digestible amino acid protein)
This is an indication of how well the protein absorbs different proteins, based on the solubility of amino acids in protein.
Think of PDCAAS as a protein quality rating, where 1 is the highest and 0 is the lowest.
4. Include carbohydrates in your diet
Carbohydrates are important for your body to use glycogen stores (energy) in your muscles during vibrators.
If you don't consume the right amount of carbohydrates, your body won't get enough energy and it will begin to expand your muscles!
Your diet should consist of about 40% - 60% carbohydrates or approximately 1500 calories a day.
Carbohydrates have received an unfairly bad reputation due to the different diets. Since complex carbohydrates slowly degrade and have a low glycemic index (not as large as sugar), it is okay to eat after exercise, especially in the morning for breakfast.
Try to choose healthy, low-sugar carbohydrates that release your energy more slowly. Good examples:
Basmati brown rice
Quinoa
oatmeal
sweet potato
Whole wheat bread
Whole wheat pasta
5. Eat healthy fats
Not all fats are the same. In fact, there is a reason to think healthy fats are really good for you.
You should get 20% to 35% of calories from fat. Eat monounsaturated fats and polyunsaturated fats. They are "good" fats and include:
Olive oils, peanuts, sunflower, rapeseed and avocado seeds
Fish
Nut
Flax and pumpkin seeds
6. Avoid saturated and trans fats
These fats are "bad." Ensure that saturated fats do not represent more than 10% of the calories you consume and that trans fats do not represent more than 1%. Bad fats include:
Ice cream, sweets, and packaged snacks.
The meat is rich in fat
Lard, margarine and processed vegetable fats
Fried food
7. Consumes large amounts of fiber.
Remember, it is important to include green vegetables in your meals, such as spinach or broccoli, to make sure you get enough vitamins.
In addition, green leafy vegetables are rich in fiber, which is important for removing waste products from the body.
8. Monitor the amount of salt you eat
It is possible that excessive intake of salt can cause high blood pressure, but when you sweat, you lose a lot of sodium.
Also, sodium (electrolyte) helps muscles contract, which is why they are found in many sports drinks. Soy products such as tofu or soy milk.

Campfire Cooking: A Primal Guide
For hundreds of thousands of years, humans had an unbroken tradition of evening firesides. It’s where we told stories, recounted the happenings of the day, sang, danced, and just sat in comfortable silence staring into the flames. It’s also where we graduated from desperate scavengers scooping half-eaten marrow and gnawing bone scraps for gristly morsels into legitimate cooks.
Now that line is broken. Now we sit around the television. We sit under the perma-glow of the LED, gazing into our phones. If we even cook, we do it under perfectly controlled settings. Which is fine, but it’s missing something: the wildness of fire.
Cooking over a campfire is more art than science. It’s feel. It’s intuition. It’s love. Every flame is unique, every piece of wood or charcoal providing a different amount of heat. No two steaks or slices of bacon are identical cooked over flame or charcoal, yet each is perfect in its own way. It always works out.
First of all, you don’t need to actually go camping to do campfire cooking. It certainly helps, and I highly recommend camping as often as you can, but you can cook over fire almost anywhere, anytime.

How To Get Set Up
Watch the Francis Mallmann Episode Of Netflix’s “Chef’s Table”
If you have Netflix, watch it. It’s from the first season. This trailer gives you a taste of what to expect.
Mallmann is an Argentine chef who cooks exclusively using wood fire. He’s a bit of a romantic, always wearing colorful cloaks and elaborate hats and quoting poetry and things like that, but somehow it works with him. He’ll have you wanting to start flirting with the “edge of uncertainty” that is campfire cooking.
Get a Fire Pit
Buy one if you like. I haven’t come across any great cooking commercial fire pits, but I’m sure they’re out there.
You can get some old steel drums and either cut the tops off, or lay them on their side and cut from top to bottom to create a “trough” style pit. Make sure to clean the inside and (this is important) only use unlined drums—you don’t want any toxic material coating the interior. Give it a good hot fire or two to burn off any unwanted residues.
You can find a metal fabricator nearby who’ll build whatever you want. Bring a sketch (or detailed description) of your desired fire pit and he or she will build exactly what you envision.
Horizontal smokers work, too, if the trough section is big enough for a fire.
A basic Weber-style charcoal grill can also work well, handling either wood fires or charcoal.
Or, for the most Primal experience, you could build one on the ground. Make a ring of stones, shape it into whatever arrangement you’d feel best cooking on, and get cooking. Have a source of water nearby (hose, huge bucket) so you can douse the thing if it gets out of hand.
Get Some Cast Iron
There’s something extremely romantic about cooking in black iron over fire. It feels Primal, elemental, and ancient. Plus, cast iron can handle the worst fire you can throw at it and turn it into something beautiful and delicious.
Get a grill, like this one: Raichlen’s Tuscan grill—a 14 inch by 14 inch square cast iron grill with screw on legs, so you can place it directly in the fire and either cook right on the grill or use it as a stand for your pan or griddle. I’ve used this thing to cook meat right in the sand as the sun drops. Nothing like it.
Get some pans: I like a 12 inch cast iron pan and a 15 inch cast iron pan—good sizes but still maneuverable (albeit heavy). If you’re feeding more people or need to cook 4-5 steaks at once, think about getting a really huge piece like this 20-incher or maybe the 17 incher from Lodge. You can often find better deals (and unique pieces) at garage sales, antique sales, or off of Craigslist.
Get a griddle: A big flat rectangular slab of iron is also pretty great, if you prefer that shape to the round pan. Your mileage may vary. Or get both!
Build a Fire
For cooking, I like the log cabin setup. You need a big fire pit to do this, and it consumes a lot of wood, but it really creates a hot flame and, if you plan on cooking over it (see the next section), great embers in a short amount of time. Start with two large pieces across from each other. Stack two more across the top on the other sides, forming a square. Continue until you’ve got a 1-2 foot structure. Then, place a small tipi inside the “cabin” and light it. Place small kindling-size pieces across the top of the “cabin” to increase the fuel.

Choose Hardwoods
Oak is probably the best to cook over. Almond and madrone are also great. Neutral taste, powerful heat.
Don’t cook over wood like redwood or bay or eucalyptus. Anything with strong resin or sap will flavor your food, and not in a good way. Although some Caribbean jerk recipes use bay for flavor, a little bit goes a long way.
Straight up charcoal is another option. It’s not as romantic or thrilling as building a fire and seeing it cook down into embers, but it does the trick.
You’re ready to go. Your fire is blazing. Embers are developing. What’s next?
What To Cook
Steak
The quintessential campfire meal is grilled steak. Or seared—read on. Some salt, some pepper, some fat, some fire, and some iron. It’s easy. It’s delicious. And it’s highly satisfying.
What kind of steaks?
They all work. I’d reserve the pricy stuff like NY strips, ribeyes, and porterhouses for a later date, for when you’re more skilled around the campfire, and stick with cheaper (but no less delicious) cuts in the beginning.
Skirt
Chuck Eye
Flat Iron
Picanha, or Petite Sirloin (a section of the sirloin with a big fat cap on it)
Cook this with salt and pepper on your cast iron pan, which should be screaming hot before you add the steaks. Flip once, press the center, and when it feels right, it’s done. Don’t use a thermometer. Go by feel. Trust your instincts. If they’re wrong, they will hone themselves and the next one will be better. You don’t want to be the person who’s fussing and fretting with fancy thermometers over the campfire, do you?
You can grill over the grates, but I really think a pan works better here. Any marinated steak, however, seems to work better over a grill.
And these all apply, of course, to other types of animal flesh: lamb leg steaks or chops, pork chops or loin, venison (preferably backstrap from an animal just killed).
Stews
I hereby declare that the category of “stews” includes chili, curry, pot roasts, and anything else you cook in a big old pot with liquid that’s hearty, rich, and thick and isn’t soup.
This is the best chili to make over a campfire.
This is a great lamb curry.
I love this German pot roast over the fire. Since the liquid will evaporate quicker than in the oven, you’ll need to keep some bone broth on hand to keep adding to the pot as it disappears. It actually ends up better and richer than the oven version due to the added gelatin.
I once came up with a stew using camp leftovers that I’ll probably never be able to recreate, but this was the gist:
Chop some bacon and render the fat in a dutch oven.
A whole chicken, salted and browned on all sides in said dutch oven.
Throw in a mess of chopped veggies—garlic, peppers, onions, leeks, carrots, lemon slices—and brown them in the fat.
Pour half a bottle of white wine in and half a hard cider or beer.
Pour in some vinegar and fish sauce.
Pour in some canned/jarred tomatoes or tomato puree. Paste would also work.
Then let it cook down. Put the wooden spoon in it and cover it, so that the steam can escape and the stew can thicken. It’s ready when the meat is falling off the bone, the broth is thick, and the bones are softening.
The beauty of this one was that we kept adding ingredients throughout the cook as we discovered them and went “hey, this might be good!” Yours might not turn out the same, but it will be great. Probably works well with any hunk of meat, as long as it has bone and connective tissue—think oxtails, shanks, legs, feet.
The problem with making dishes like this in the kitchen is that it’s terribly boring standing there for hours monitoring its progress. The beauty of making dishes like this over the campfire is that it’s not. You’ve got friends pitching in, taking turns with the spoon. You have a beverage. You’re laughing, chatting, talking. You can always just gaze at the trees. It’s a communal event. If you can, extend the cook time of all these dishes. Really let the fire and smoke soak into the stew.
Veggies
Veggies are to be cooked as the meat is resting, preferably using the same pan in the same fat. A few ideas:
Vegetable “Risotto”: Chop peppers (both hot and sweet and mild), slice onions, some green tomatoes, some leeks and shallots (basically all the alliums you can find), carrots, cherry tomatoes. Throw in a few whole garlic cloves (or a few dozen). Cook in the meat drippings and as it cooks down, add little scoops of hot bone broth. That’s the “risotto” part—continually adding hot broth to reduce down into syrup. Consider a splash or two of lemon juice at the end, if it needs acidity.
Crispy Asparagus: Chop asparagus up into four pieces, each about two inches long. In either avocado oil or the meat drippings, sauté the asparagus pieces until browned and crispy. Finish with sea salt and lemon juice.
Grilled Zucchini: Slice big vertical slices about a finger width thick. Brush with avocado oil and plenty of salt and pepper. Grill over a grate until you get char marks. Flip, repeat, eat. Zucchini is surprisingly low carb and very high in potassium.
Dessert
I tend to let loose with the sweet stuff a bit more when camping, reason being I’ve been incredibly active, my circadian rhythm is on point from lack of artificial lighting, and sweet stuff just tastes better when it’s a rarity. And even this “sweet stuff” isn’t all that sweet compared to what most people are eating daily.
Whipped cream: Keep metal bowl on ice, pour in cream, maybe add a splash of bourbon or rum, add a little sweetener (real sugar, monkfruit powder, honey, etc.—less is more), and whisk. Pass the bowl around the group for everyone to whisk, since your forearms are probably tired from hauling around cast iron.
Grilled Fruit:
Pears studded with cloves. Cut pears in half. Shove a clove or two into each half. Sear in butter on cast iron and sprinkle of salt. Serve with whipped cream.
Mandarin oranges seared with rosemary. Sprig of rosemary on top the orange, sear in butter. Serve with whipped cream.
Apples in pork fat. If you’ve been cooking pork or bacon, save the fat to cook apple slices in. Sprinkle cinnamon and maybe some cayenne. Serve with whipped cream.
Primal Chocolate Cake: This never fails to please. Cook a Japanese sweet potato by wrapping in foil and burying it in the coals and ashes, making sure to poke a hole down the middle with a chopstick first to provide an avenue for heat down the middle. When it’s ready, cut in half, stick some 85% dark chocolate pieces into the flesh, sprinkle with salt, and mash. Eat.
Dates Stuffed With Salted Macadamia Nuts: No explanation needed. One or two nuts per date half. Incorporate bacon if you like.
“Pumpkin Pie”: Take the winter squash of your choice (I like honey nut, a better, smaller, sweeter butternut) and bury it in the coals and ashes an hour before you need it. Once it’s done, halve it, deseed it, add a raw egg yolk to each half, sprinkle some ginger/cinnamon/nutmeg, add salt, and mash it up. Top with whipped cream.
The trick with campfire cooking is to make it sort of elaborate but not surgical. Rustic but not “empty can of beans into pot.” It’s a fine balance. It’s riding that edge of uncertainty. You can’t quite define it; you just know it when you taste it.
Take care, everyone, and get out of the city and go camping. Or crowd around the fire in your backyard. Or, heck, go to a park with BBQ grills and make a day of it. It’s not too late. Fall camping is my favorite. It’s the perfect time.

Once it’s done, halve it, deseed it, add a raw egg yolk to each half, sprinkle some ginger/cinnamon/nutmeg, add salt, and mash it up. Top with whipped cream.
The trick with campfire cooking is to make it sort of elaborate but not surgical. Rustic but not “empty can of beans into pot.” It’s a fine balance. It’s riding that edge of uncertainty. You can’t quite define it; you just know it when you taste it.
Take care, everyone, and get out of the city and go camping. Or crowd around the fire in your backyard. Or, heck, go to a park with BBQ grills and make a day of it. It’s not too late. Fall camping is my favorite. It’s the perfect time.

How To Style Curly Hair [Using Natural Products]
Many of you know that it’s been a journey for me in learning to love and embrace my curly hair. We live in a society that values perfectly coiffed hair without a single strand out of place and well…that just isn’t an option with curly hair.
For many years I straightened my hair thinking I looked more beautiful and would be more respected with straight hair. The former could not be more untrue. I feel way more myself and way more beautiful with my curly hair. The latter is still a work in progress. I do think we have a cultural bias towards straight, perfectly manicured hair and part of this is perpetuated by people with curly hair thinking they have to straighten it. I was in that camp for many years.
There are so few role models with curly hair who really embrace what they have and talk about actually loving their curly hair. I realized early on that if I couldn’t find those role models I at least had the opportunity to become one for somebody else. And that’s what the last two years have been for me. “How do you style your curly hair?” is now one of the most common questions I get.
I’ve wanted to write this post for a long time now but I’ve also been trying to learn and absorb as much as I can about curly hair because the answer isn’t so simple. Hair exists on a spectrum from pin straight to kinky curls. No person has the exact same hair as you. You have to account for hair porosity and texture. Curls also have their own designation and what you use for type 2a curls looks different from type 4c. Yes, there are different types of curls.
So today’s post isn’t just about how to style curly hair naturally, it’s also about educating and empowering YOU to understand and embrace the type of hair that you have so you can make the best decisions for it. Of course, I’m biased towards the products I use but I also recognize that what I use may not work for you, and vice versa. I’m also working against our North American preference for ultra-clean, perfectly styled hair and how you feel about that is up to you. In the end, I hope you can learn to be excited about what you have whether it’s curly, wavy, straight or anything in between. Self-love is about loving all of you, even the things you can change. Okay let’s jump in…
TYPES OF CURLY HAIR (TEXTURE)
As I mentioned above, no two curls are alike. Similarly, your curls can and will change throughout your lifetime. Some of this you control like heat and chemical exposure and some of this you don’t, like hormonal changes and pregnancy. Identifying the types of curls or waves you have now is the most important metric for figuring out how to style your curly hair. So what are the different types of curly hair?
Curly hair exists on a spectrum of texture from 2-4 and a-c. Someone with 2a “curls” has loose waves whereas someone with 4c curls has extremely tight coils. I have 3a-3b curls (depending on the day). You can figure out your curl texture HERE. More on how to style for your hair texture below.
WHAT IS HAIR POROSITY + HAIR DENSITY?
Besides texture, there are a few other metrics that help you better understand your curly hair and how to style it. One of the metrics that has had the largest impact for me has been hair porosity. Porosity is defined as your hair’s ability to absorb or retain moisture. Low porosity hair takes a long time to absorb moisture and can take hours to even days for hair to dry. Products tend to sit on hair rather than be absorbed. High porosity hair can easily absorb moisture to a point where you almost can’t use enough oils but because the cuticles are so open it can also easily lose moisture. Curls tend to be frizzier and on the drier side but can also dry quite quickly. You can also have medium porosity hair, which is what I have. None are better or worse than the other, it’s just a matter of knowing what you have and how to work with it. There are several different ways to determine your porosity included HERE.
Hair density refers to the thickness or coarseness of your hair. It’s basically how many strands you have on your head. Here’s how to test your hair density: part your hair in the center and let the strands fall to either side. Without pushing or forcing your hair, how much of your scalp can you see? If you can’t see any you have high hair density, if you can see a lot of your scalp you have low hair density and if you can see just a little bit, you have medium hair density (which is what I have).
HOW TO PICK CURLY HAIR PRODUCTS THAT WORK FOR YOU
1. Find out your texture
2. Find out your porosity
3. Find our your hair density
I truly believe that when it comes to picking products, knowing your hair porosity and density is more important than knowing your hair texture. Texture is affected more by washing and styling techniques than products themselves. More on techniques for hair texture below so let’s chat about porosity and density first.
Low porosity hair: Because your hair has a hard time being penetrated and retaining moisture, you want products that contain humectants, which attract moisture. Anything with honey or glycerin is a good idea for you. You also want products that add moisture through oils such as jojoba, apricot kernel oil, argan oil etc… Stay away from heavier oils that will just sit on your hair such as coconut or olive oil. Avoid proteins in your haircare products. Proteins in haircare include: hydrolyzed wheat, oat, silk, soy or any type of keratin.
Medium porosity hair: Because your hair is pretty consistent with moisture you should avoid anything with too much protein that may change or affect the porosity of your hair. A bit of protein is okay but not as part of your daily regimen. Anything with moisture is good but find that happy place between too much and too little.
High porosity hair: Because your pores are so open, you don’t want products that attract moisture, but actually seal it in. Too much moisture = damage and frizz. You want anti-humectants (opposite of low porosity hair) which will seal the cuticles rather than just laying one products on top of another, including avocado oil, raw shea butter, coconut and olive oil. Products with proteins in them (listed above) can also help repair dry and damaged hair which high porosity hair has a tendency to be.
Now onto hair density…
Low density hair: You might think of this as “fine hair”. You want to be careful about the weight of your moisturizers. Stick to lighter oils like apricot kernel oil, argan oil, almond oil and neem oil (sometimes coconut, jojoba and olive oil can be okay). You’ll want to style with mousse and anything that adds volume and stay away from creams and thicker gel styling agents.
Medium density hair: like goldilocks, not too much, not too little. You can do a little bit of everything but try not to go overboard with the oils or gels or opt out of them either.
High density hair: Stay away from anything that adds volume and stick to heavier products like creams and gels. You do well with thicker butters like shea and mango.

CURLY HAIR NO-NOs
Regardless of hair texture, porosity or density, there are some curly hair no-nos that all should avoid. Below I’m sharing some tips and ingredients to stay away from:
DO NOT BRUSH YOUR CURLY HAIR WHEN IT’S DRY. Repeat this 10 times. Most people with curly hair know this, however I find myself having this conversation with parents of curlies who themselves don’t have curly hair. The only time and place to brush curly hair is in the shower, with a comb while the hair is still wet with a ton of conditioner in it. This is why you don’t brush curly hair when it’s dry…
Don’t get your haircut by ANY stylist – if you’re ready to embrace your curls, find someone who knows how to cut curls. Not every hair stylist does so be sure to call and inquire. Also have them cut your curls to be styled curly (this often means dry cutting). People swear by Deva Cuts and while I love the technique, I personally am not the biggest fan of their products – they’re better for curly hair but certainly not natural FYI. So it may be a hard ask but try to find someone who uses cleaner ingredients AND can cut curly hair. I’m still on the lookout too!
Don’t straighten your hair often – I still straighten my hair from time-to-time (about 3-4x a year) and it’s nice to change it up though it will affect your hair so beware. When you heat style your hair you affect the curl pattern and it will take a few washes for it to go back to normal. As you transition back to your natural texture I recommend staying away from your heat tools and letting your curls find their natural pattern.
CURLY HAIR INGREDIENTS TO AVOID
Silicones – silicones are the arch-nemesis for anyone with curly hair. At first they help tame frizz but over time they weigh your hair down and will actually make your hair look limp and lifeless and eventually frizzier than before. Lookout for ingredients that end in “cone” i.e. cyclomethicone or dimethicone
Sulfates – another important one to stay away from with curly hair. Sulfates are what create that lather in most shampoos. It’s something we’ve all gotten used to, however it’s incredibly stripping for the natural oils in your hair and can dry out your hair and/or cause your scalp to produce MORE oil in return i.e. Sodium Laureth, Myreth, or Lauryl Sulfate (commonly referred to as SLS).
Alcohols – in general alcohols are just very drying for curly hair. You should definitely stay away from alcohols if you have high porosity hair that tends to be drier i.e. Isopropyl alcohol, ethanol etc..
Parabens + Phthalates – both of these ingredients are bad for any type of hair (curly or not). Parabens and phthalates are used in skincare/haircare products as an emulsifier and preservative. Both are harmful to our bodies and have potentially been linked to cancer later in life. i.e. synthetic fragrance and and anything that contains “paraben”.
HOW I STYLE MY CURLY HAIR
As I shared above I have 3b curls with medium porosity and density. That means I can get away with using a lot of different products though I do find if I’m in drier conditions I need to amp up the moisture. In the video above I walk you through how I style my hair and why I use the products I use, but for a brief overview I’m sharing some tips below.
1. Minimize shampoo and conditioner – I wash my hair once a week. I will often wet it and sometimes condition it more than once, but I don’t use shampoo more than once a week and sometimes up to 10 days. Your hair needs natural oils to thrive and shampooing it strips it of its natural oils. There is a lot of talk in the curly world of co-washing and the no-poo method. Cowashing involves combining your shampoo and conditioner together to help preserve the moisture as you wash. The “no-poo” method involves giving up shampoo all together and letting your hair do its thing. I personally use a sulfate-free shampoo so it doesn’t strip the oils as much as conventional shampoo. As a result I didn’t notice much of a difference when co-washing vs. using shampoo alone. I’ve also tried the “no-poo” method and had too much product build-up so that’s just my preference.
2. Use a shampoo and conditioner specifically designed for your hair – Since I have 3b curls with medium porosity and density I can use just about anything but I tend to reach for things with a bit of protein and heavier oils since my hair can get quite dry. I personally love the Shea Moisture Coconut and Hibiscus Shampoo and Conditioner. But if I am straightening my hair (which I do a few times a year), I will use the Evolvh Ultra Shine Shampoo and Conditioner because I need a a shampoo that is more cleansing to remove any product build-up. It contains Disodium Sulfosuccinate which is NOT a sulfate but is a foaming agent to help cleanse the hair. I do get some build-up with the Shea Moisture products but I find these natural oils are good for my hair and actually make my curls look better…it just doesn’t look so good when I straighten it.
3. Seal the cuticles in cold water – because I have medium porosity hair that is somewhat dry, I always do one final rinse in the shower under cold water to seal the cuticles after conditioning. This closes them up and ensures they retain their moisture. Note: if you have low porosity hair, you do not want to do this – make sure you use heat to help oils and moisturizers penetrate your hair.
4. Use a microfiber towel or cotton t-shirt – Terrycloth towels can damage your cuticles and make your hair frizzier. Use a microfiber towel (such as this) to scrunch out any water and protect your hair as it dries.
5. Style using the right products for your hair – leave-in-conditioner is my best friend and I’m obsessed with this Smart Curl Leave-In Conditioner from Evolvh. As soon as I’m ready to style I spray is all over my hair. I then use the Evolvh Wonderbalm gel to style my curls by using roughly 3 pumps for each side of my head, lightly spreading over my curls and then scrunching at the bottom.
6. Airdry when possible – I know some people love using their diffuser and drying their curls but after years of straightening, I do my best to stay away from any heat tools. Also I’m lazy and find my hair air dries just fine. It usually takes a few hours for it to dry at which point I try to touch my hair as little as possible to prevent frizz.
7. Protect your curls overnight– some people use a cap but I find a scrunchie or non-kink hair band (not sure what the name is but I use these!) does the trick. I tie it up on the very top of my head so that I look like a pineapple and it stays in place overnight. If I do this my curls usually last for 3-4 days before they start to get dry and frizzy.

I realize this post is exceptionally comprehensive, however there is SO much more I could add. Having curly hair is a journey and honestly, that’s what keeps it fun! You never know what you’re going to get and learning to embrace the unpredictability is the only way to enjoy that journey. I so wish that I’d had a role model growing up telling me that my curly hair was beautiful and something to celebrate but if I can be that person for you that is good enough for me.
