It’s truffle season here in the Dordogne Valley Perched high above the Dordogne River in France, the Château de Beynac is one of the best-preserved castles of the Périgord Noir region. This 12th-century fortress has been meticulously restored, showcasing for tourists such delights as a dungeon, 13th-century toilets, and magnificent views of the ‘Valley of the Five Castles’ below.
The region is famous for its castles, its medieval villages, and its ... fungus. At least, the fungus considered by some to represent the apogee of French cuisine: the truffle. Every year from December to early March, truffle hunters and their truffle-hunting dogs (and sometimes pigs) take to the forests to sniff out these aromatic delicacies, which are then sold in village markets and restaurants. Come to the markets in January and you may rub shoulders with famous chefs from around the world, here on a hunt for their own perfect ‘black diamonds.’

CELTIC hero Stiliyan Petrov is hoping for a bumper turn-out at Parkhead this afternoon when he leads one of the teams in the Match For Cancer.
The game – with a 2pm kick-off – will see Brendan Rodgers and Liverpool boss Jurgen Klopp, in charge of two star-studded line-ups.
Petrov, who bravely battled through leukaemia after being diagnosed in 2012, and Anfield midfielder James Milner have selected the opposing squads from the worlds of football and entertainment.
Famous footballing faces playing for the Hoops side include Hoops legends Artur Boruc and Henrik Larsson, Jackie McNamara, who made more than 350 appearances for the club, and current captain Scott Brown, who has played almost 500 times for the champions.
Celtic-daft actor Martin Compston will also be pulling on a jersey to raise money as part of this unique event.
The Liverpool side is made up of icons such as Jamie Redknapp, John Terry and Dirk Kuyt while former Republic of Ireland goalkeeper Shay Given, who was at Parkhead as a teenager, will play a half for both sides.
All funds raised from the match and connected events will be donated to fighting cancer through Celtic FC Foundation, The Stiliyan Petrov Foundation and The James Milner Foundation.
The fans are invited to head to the ground as early as 12pm to enjoy a host of entertainment for the whole family, including dance lessons and interactive circus acts.
Fans will also have the opportunity to pick up a special edition matchday programme which includes exclusive interviews with those taking part in the game.
Tickets for the event cost £14 for adults and £6 for concessions and can be purchased from the box office on the day.

Construction sector to benefit as big contracts move out of the capital
A shift in construction contracts out of London and into the Midlands will help support a sector experiencing uncertainty amid a prolonged Brexit negotiation in the region.
That’s the view from Crown Group boss Gareth Emberton on a new report which shows major regeneration and infrastructure project work is moving from the capital to the rest of the UK.
Analysts for Barbour ABI and the Construction Products Association says investment in housebuilding, infrastructure and commercial property in Scotland and the West Midlands had the highest growth.
The total value of contracts awarded in London was £13.1bn last year, down 14.6 per cent  on 2015.
Gareth is the managing director of the commercial landscaping specialist Crown Group which works with construction giants including Bowmer & Kirkland and Galliford Try, on projects across the UK.
“There’s no doubt that construction firms are facing numerous challenges currently – such as finding enough people with the right skills and the fact that may are reliant on workers from overseas.
“But one of the biggest issues they may face in the coming months is the effect uncertainty over Brexit will have on decision-making in terms of big project development.
“We saw the slowdown ahead of the referendum and when the economy slows, the construction sector is one of the first hit,” added Gareth, who is also chairman of a regional organisation championing the sector, Shropshire Constructing Excellence.
However the shift to investment in the central part of the country is a good sign, he said: “I think it isn’t just down to HS2, but could also be as a result of the Government’s drive to grow the Midlands economy through the Midlands Engine and the £392m is has invested in the region to do just that.
“There was also some good news in the Queen’s Speech for the sector, which perhaps missed out on bigger headlines due to the Brexit focus.
“As well as the expected HS2 bill which will the construction of the Birmingham to Crewe connection fast-tracked, the Queen also confirmed moves to support more technical training which will undoubtedly benefit our industry. ”
Crown Group is experiencing significant growth in its facilities management and environmental management divisions as well as its core business of delivering integrated design, building and maintenance services for construction and landscaping projects.
The firm has doubled in size in the last year and now employs more than 60 people across the country.

Crown Group announces apprentice investment
Construction and landscaping specialist Crown Group has announced plans to increase its investment in apprenticeships as part of its strategic expansion of the business. The Shropshire based company says the investment will see it add up to a dozen apprentices to its workforce over the next three years in its long-term blueprint for future proofing the organisation.
Crown Group is experiencing significant growth in its facilities management and environmental management divisions as well as its core business of delivering integrated design, building and maintenance services for construction and landscaping projects.
It counts construction leaders such as Bowmer & Kirkland and Galliford Try and local authorities among its regular clients. It is currently working on a high profile landscaping project at the Warner Bros 150-acre Hertfordshire studios as part of its multi-million pound expansion.
The firm has doubled in size in the last year and now employs more than 60 people across the country. Managing director Gareth Emberton said he intended to introduce apprentice roles across different sectors of the business. “We know the success of our business is down to our people and, given the growth we are enjoying, we need to future proof the business and create a workforce that is ready to meet the demands of a growing organisation.
“There is a skills gap within certain sectors such as construction and horticultural services, and with an ageing population, we are looking to offer a career path for younger people within an ambitious business that is willing to nurture and support them as they climb the career ladder.
“This is not about securing cheap labour. As a company of integrity we pride ourselves on paying over the minimum wage and investing in people who want to learn and grow with our business. Creating a strong and dynamic workforce will support us to deliver the high quality service we have built our reputation on.”
Richard Moss is now working as one of the group’s estimating assistants following an 18-month business administration apprenticeship. He said the opportunity to learn while he worked had been the right approach for him. “I was 23 when I started my apprenticeship which is a little older than usual but I was attracted by the chance to learn on the job in a supportive organisation. For me, that has been a better option and I feel confident that I will be able to work my way up.”
Current apprentice 18-year-old Dominik Colbron was studying for A-Levels and had a part-time job in retail before joining the group’s accounting team. He said: “It’s an interesting sector to work in and I have found it easier to learn new skills while I work.”
Gareth added: “We would love to hear from anyone who is genuinely committed to making a career with us and wants to join a forward thinking and dynamic business.”

Wizard contract blooms for Crown Group
Construction and landscaping specialist Crown Group is to play a leading role in the expansion of Warners Bros studios – home to blockbusters including Harry Potter and Star Wars: The Phantom Menace.
The Midlands-based company has secured a major landscaping project at the sprawling 150-acre Hertfordshire site as part of the latest instalment of the multi-million pound studios’ expansion.
Warners Bros is constructing additional sound stages, workshops, a multi-storey car park and a state of the art graphics and design space at Leavesden.
A Landscape Planting Strategy, which includes substantial new planting along the western edge of the backlot and in and around the Studio Tour car park extension, will be delivered by Crown Group.
Managing director Gareth Emberton said the contract due to complete by spring 2017 was the latest in a string of business wins for the sub-contractor, which has doubled in size in the last year.
He said: “We are passionate about construction and horticulture working hand in hand and we’ve delivered commercial landscaping schemes successfully across the UK for some time.
“However, our long term strategy was always to expand our core business, developing more of an integrated approach to the design, building and maintenance of construction and landscaping projects.
“We’re seeing the result of this in the last year with a number of high-profile contracts, including this one at the home of cinema’s greatest movies, including Casablanca and of course, the Harry Potter films.
“The contract at Warner Bros supports the master plan for the next ten years for the site which attracts more than five million visitors a year.”
The Group is also seeing significant growth in its facilities management and environmental management divisions. And Gareth is convinced this is because top construction contractors, whether working on key infrastructure projects such as HS2 or private sector investments like Warners Bros, want contractors who can solve problems.
Gareth said: “Our focus is always on how we can innovate the process, to help the construction giants we work with, such as Bowmer & Kirkland and Galliford Try, save time and money.
“One of the key factors in our growth has been our ability to not just provide the materials and the manpower, but to work in partnership with leading contractors to plan properly.
“We understand how construction works, as the key is to deliver a living product, which both the clients and planners are happy with. This needs to happen during at times complex construction processes and site specific issues and constraints. The aim is always to deliver a high quality project, with a supply chain which spans Europe, nurturing the completed project through it’s establishment and ongoing maintenance through to maturity.”
