Clover Club
With its bright, fresh raspberry flavour, the Clover Club, a pre-Prohibition classic created in Philadelphia, and apparently much-loved by captains of industry, is a delicious cocktail to sip on a Spring day; even when it's pouring outside! Happy Thursday!
Ingredients (serves 1):
5 fresh raspberries
15 millilitres/1/2 fluid ounce (1 tablespoon) Simple Syrup
60 millilitres/2 f7luid ounces (4 tablespoons) London Dry Gin
1/2 ripe lemon
1 egg white
8 ice cubes
3 fresh raspberries
Place raspberries at the bottom of a shaker. Pour Simple Syrup over the raspberries, and muddle until the raspberries have collapsed into a bright red syrup. Pour in the Gin.
Thoroughly squeeze the juice of the lemon halve, and pour into the shaker.
Add the egg white and the ice cubes.
Close shaker tightly and shake vigorously until well-chilled through.
Double strain cocktail into a chilled coupe glass.
Skewer raspberries onto a cocktail pick, and garnish the cocktail with it.
Enjoy Clover Club immediately.
