A Hoppy Sunday at Bluebell Hopyard

Whether you love the citrus and pine flavors of an IPA or prefer the malty and roasty notes of a stout, the truth is that you can’t make beer without hops.
As a New York State Farm Brewery, we source our ingredients locally. That means finding high-quality, locally grown hops that help us brew the beers that you love.
This Sunday from 12 p.m. - 6 p.m., we’ll be at Bluebell Hopyard - one of our favorite local hop producers - serving up samples and pouring pints at their seventh annual Hopyard Tour and Tasting.
We use Bluebell hops in a few of our beers, but you’ll probably recognize the name from our Chinook Smash. This single malt, single hop beer is all-natural and made with 100% NYS grown ingredients. We chose Bluebell’s Chinook hops to give this brew an intense spice flavor along with pine and subtle grapefruit notes.
At the hopyard this weekend, you’ll be able to see where the hops we used in this beer came from and learn fun facts about how they were grown on a tour with Bluebell’s co-owner Kurt Charland.
A five dollar donation will get you through the door, and ten dollars will get you a branded pint glass, too! Kids get in to this family-friendly event for free, and a portion of proceeds will be donated to the Golisano Children’s Hospital.
“It’s totally chill,” Kurt explained, “It’s a great family event. We try to have some games - cornhole and things like that. It’s an outdoor venue right around the hopyard so people walk around and have a good time.”
While you’re walking around, you can listen to music by Panda Handstand and The Chinchillas, and participate in the raffles held throughout the day. Don’t be afraid to come hungry! Finger Lakes Food Cart will be on site.
When you get there, stop by our table where we’ll be serving up samples and pints of our locally-sourced brews.

Behind the Beer Featured Story: Reclaiming Taste

Back before we opened, there weren’t a lot of craft beer options in Rochester. Every week, we’d go out for guy’s night and taste the brews that the city had to offer. They were good, just limited. That’s about when Co-owner Dan Western started brewing beer himself.
Trying his homebrew one guy’s night, we realized that he had a knack for it. Soon, we were joking that we should open up a brewery.
“The next thing you know we signed up for the LLC, and did a tasting for people in the park,” Co-owner Dave Finger explained with a laugh. “We had a couple hundred people show up just from social media to try our beer and donate to the kickstarter, and we kind of went from there.”
While Dave was pretty nonchalant about “going from there,” it was actually a lot of hard work. We built our brewery the way we brew our beer - by hand using local ingredients. Only this time, the local ingredients were reclaimed barnwood and upcycled metal.
We reclaimed supplies to build our bar, and reclaimed taste to build our following. Stepping into his position as head brewer, Dan has a knack for knowing when a style should remain traditional, and when it’s ok to get creative. He also has a knack for knowing how to brew great beers with local, New York State ingredients.
As a New York State Farm Brewery, we’ve made a commitment to supporting the local agriculture industry by using a certain percentage of NYS ingredients in every beer we brew. This year, it’s at least 20% and next year it jumps up to 60%.
“I use a lot of New York State Cascade hops because they’ve got the nice aroma characteristics and a little bit of flavor characteristics, not a whole lot of bittering,” Dan explained. “And I use Nugget hops from New York State also which grow really, really well here.”
The current 20% requirement is really just a baseline. Some of our beers use 100% NYS ingredients like the Chinook Smash brewed with Chinook hops from Bluebell Hopyard in Farmington, NY and NYS 2-row grain.
Our tasting room has nine taps total. One is set aside for a dark beer served on nitro, and another is dedicated to cider. Currently, we partner with Embark Craft Ciderworks from Williamson, NY, and we’ve also partnered with Honeoye Falls Distillery for our craft cocktails and mixed drinks.
Next time you stop by our tasting room, you’ll know that you’re getting a truly handcrafted experience from the stool that you’re perched on to the pint in your hand. So sit back, take a sip, and feel good that you’re drinking local.

About the Beer: Single Malt, Single Hop, and 100% Local. Our first Smash Beer of the year is hopped to the max with locally grown Chinooks from our friends at Bluebell Hopyard, LLC in Farmington. For those that don't know, Smash beers are a relatively new concept which breaks brewing down to its basic elements and emphasizes the flavor of a single malt and single hop variety. This beer is based solely on NYS 2 row yielding a smooth taste with slight grain aroma on the nose. However, it's the hops intense spice flavor and pine characteristics imparting a subtle grapefruit note that makes this brew. Sometimes simple is better.
On tap starting today for pints, tastings, and growler fills. The weekend starts early again this week!
