kitchen basics: quick artichoke dressing
this recipe was given to me by a dear friend. using marinated artichokes as a dressing proves to be a wonderful shortcut as the artichokes are already drowning in flavor. just a little yellow mustard and pepper for extra flavor and you're set.
ingredients:
1 jar marinated artichoke hearts (i use the one from trader joe's)
yellow mustard
salt and pepper to taste
method:
1. pour the jar of marinated artichoke hearts into a food processor.

2. add enough yellow mustard to cover the top of the artichoke hearts. then add salt and pepper to taste (looks appetizing, i know).

3. blend! it all fits conveniently back into the jar it came from.

the first time i made this i couldn't figure out the exact proportion of mustard, but trial and error guided by my taste buds did the trick. you can add as much mustard as you like, just be careful not to add too much as you'll lose the delicate taste of the artichokes. i like putting this on a simple romaine salad (more details on that later).

my name is yaamini and i just want to quit life and eat food.
i've always loved eating. my mom started feeding me traditional south indian cuisine the second i could eat solid food. it all went downhill after that as i tried more and more food. i'm at this point where i'll crave a specific dish from a certain restaurant. problem is, now that i'm in college i can't always get what i want.
