 The dough is prepared from wheat flour (100%), water (100%), a pinch of salt, the same amount of yeast, some olive oil and bread flour, in order to obtain a bread dough that is around 50/50 in terms of water and flour. 

 After the work of the day, we go to the place where it was made. First we get a large block of wood (in Cantabria it is usual to find them in the basement of the houses). Then we cut two squares of equal size and at least 5 cm high. We also use the square and a knife to work the dough; but this is difficult and it is possible to mix some difficulties to have a perfect pizza. In order to have it in the oven we must use the top or the bottom of the block of wood, and we have to place the pieces of dough under the right size square. 

 The firewood in Cantabria is usually placed in the middle of the oven and we have to wait some time for the dough to take shape. This time is longer than in other countries, but it is enough for the dough to take shape. When it does, we have to place it under the block of wood and we let the bread to bake. After one hour or so, we have a pizza ready, then we eat it.

The one who prepares the pizza has to know the technique and this must be a speciality of the cantabrian area, which makes it unique in Spain. We do not know what has happened in Cantabria to cause such an old pizza to taste so good. Maybe the climate or maybe the firewood used.
