Neapolitan Overnight Oats…RECIPE
INGREDIENTS
For the Vanilla
1/3 cup rolled oats
½ teaspoon chia seeds
2 tablespoons vanilla Greek yogurt*
1/3 cup + 1-2 tablespoons milk, any kind (depending on how thick you like your oats)
¼ teaspoon vanilla extract
For the Chocolate
1/3 cup rolled oats
½ teaspoon chia seeds
½ tablespoon cocoa powder
1/3 cup + 1-2 tablespoons of milk, any kind
½ tablespoon maple syrup (or any kid of sweetener)
For the Strawberry
1/3 cup rolled oats
1.5 tablespoon vanilla greek yogurt*
2 large strawberries
½ teaspoon chia seeds
¼ cup milk (any kind)

I’m ready to start getting in the Christmas spirit but my housemates have been requesting this one for a while. I baked this at the start of term but never blogged it and it’s slowly becoming one of my favourites. Time to actually get on with some uni work before I get to into my Christmas baking lots of fun recipes on the way
180g Butter, Softened
180g Caster Sugar
2 Eggs
180g self-raising flour
2 Ripe Bananas cut into small pieces
1 tsp baking powder
50g Cocoa Powder
120g Dark Chocolate
Pre-heat the oven to gas mark 4. Line loaf tin with baking parchment.
In a large bowl cream the butter and sugar until light and fluffy, then slowly add the eggs with half the flour. Fold in the remaining flour, the cocoa powder, baking powder and chopped bananas.
Cut your chocolate into fine chunks, I chose to add 100g of white chocolate chips to along the way.
Pour into the cake tin and bake for around 50 minutes or until a skewer comes out clean.
Leave to cool on a wire rack the dust with icing sugar. I decorated mine with dried bananas and the reaming chocolate chips.

Easy Sweet Potato Pizza Crust…RECIPE
INGREDIENTS
Crust:
7 medium (4 oz each) sweet potatoes
1 tbsp olive oil, extra virgin
1 large garlic clove, crushed
1/2 tsp smoked paprika
1/2 tsp salt
1/2 tsp ground black pepper
2.5 oz low fat mozzarella cheese, shredded
Toppings:
1/2 red onion, sliced
1/2 bell pepper, sliced
1 cup small broccoli florets
1 lb ground turkey, extra lean
1 tsp oregano, dried
1/2 tsp salt
1/2 tsp ground black pepper
3/4 cup tomato sauce
2.5 oz low fat mozzarella cheese, shredded
Cooking spray (I use Misto)
