If I may ask, why do you think/headcanon why the Piglins turn aggressive to the Player if they break a gold ore block or are aggressive to the Player when they do not wear a piece of gold armor?
ok so. a few things actually
the player isnt exactly,,,, human. theyre an entire other thing, based on their superhuman strength and other abilities alone. whatever the player is, it isnt hypersocial like humans are, due to the fact that it lives alone in its own world as the only one of its kind.
piglins, on the other hand, are hypersocial. they have tightly bonded communities and find comfort in what they know. 
piglin society runs on gold. its got so many different purposes- building, decoration, etc. its something they cherish and almost worship. almost all piglins will wear gold on their tusks or ears or something.
i also think that piglins have pretty bad eyesight. maybe they kinda have a film over their eyes to protect from the gross Everything of the nether? idk they just cant see great so gold is very important bc they can see it shine
a human entering a piglin community is a HUGE breach from the norm. they dont know what it is, its an outsider, it has nothing in common with them and is therefore not one of them. most everything in the nether is hostile, so they assume the worst and start to attack. 
say that youre wearing gold, however. thats fine. youre one of them. but mining gold is taboo in most communities. normally, there are specific rituals to mine gold since its basically sacred. 
never rlly thought abt this before but!!!!! wonderful question thank u :]

My Nether theory:
The Nether used to be a beautiful land. There were forests, deserts, volcanoes, and quarries. There was no lava ocean, only a plains with intricate cities. Rivers and waterfalls flowed everywhere and glowstone lit up the ceiling.
Royals built brick castles, filled with treasures and a magical root that, when combined with the right stuff, could cure any disease. This root grew in sand.
The extreme pressure from the basalt volcanoes caused all of them to erupt at once, spewing extreme heat and ash. Forests burned. The ceiling and the cliffs melted. Cities filled with lava. The surviving bits of the cities turned into ancient debris hardened with lava and ash. The rock and dirt turned dark red.
The people knew the world was coming to an end. Many of them escaped using a portal told of in myths. Most could not escape before the portals melted. The heat spread a bit into the overworld. Between the millions that escaped and the billions that died, only a few thousand remained.
The people that escaped eventually evolved into villagers, pillagers, witches, illagers, and players.
The people who survived the apocalype also evolved. They gained boar-like snouts, ears, and tusks. They built large structures out of basalt and blackstone.
Some pigs and gentle beasts survived, too. The pigs evolved into boar-like creatures. The beasts evolved the ability to walk on lava, and in doing so, gained stringy antenna-like things on their heads (these sense danger).
The souls of those who did not survive met multiple fates. Some possessed the blocks of partially molten rocks. Others became fire elementals. The royals that lived in the castles possessed their own charred, coal-black skeletons and returned to their, now deep red, homes. Many came together to form giant ghost-like creatures that shot fireballs. Each of these creatures is made of 64 souls. The sudden stress and need to cooperate has taken its toll, and these creatures are doomed to eternal sadness.
Most of the souls got trapped in the sands of the desert. They are conscious, but cannot do anything. Their blue flames repel the boar-faced descendants of the survivors, known as piglins, because the piglins can sense the trapped souls of their dead relatives crying for help and it scares them.
Eventually some plants and fungi began regrowing, but they were unlike any plants and fungi anyone had ever seen. There were red forests and blue forests. Both were filled with odd mushrooms and strange trees. The red forests had vines growing from the ceiling, and the blue forests had vines growing from the ground. Some tall, dark, trans-dimensional beings with glowing purple eyes began residing in the strange blue forests. The descendants of the surviving pigs, known as hoglins, started to roam freely in the red forests. Hoglins despise blue mushrooms because they are lethally poisonous to them. The lava walkers, known as striders, however, love blue mushrooms as they are nutritious for them. Unfortunately, striders are very comfortable in the lava, and, if they are not in lava, get very cold (compared to their body temperature of 2560 degrees Fahrenheit) and will get sick if they do not get back into lava in time (about 8 Minecraft hours (5 real life minutes)). Gathering food can be dangerous for striders if blue mushrooms are far away.
Piglins and their ancestors always loved gold, but ever since the apocalypse, gold has been rarer and rarer to find. This has caused them to aggressively hoard gold. Their aggression grows larger every generation.

Why do you think that Soulspeed let you walk faster when you step on souls that normally are trying to pull you down?
As a start, I have a headcanon that soulsand is the physical manifestation of sentient (and sometimes unsentient) souls. Cursed with instead of going to an afterlife or whatever happens to a ‘soul’ after a person’s death, it gets trapped in the soulsand.
Because soulsand is an amalgamation of sentient beings, it believes its only purpose is to attempt to escape through a vessel which is nearly impossible as once a soul leaves a body it cannot return. So the souls of the soulsand drag down weaker willed individuals to take over their body. Though, this only kills the entity as they are dragged down and suffocated.
The reason most don’t fall to this tragic fate is that they are stronger willed, most humans are. The souls grab at your legs but the sheer power of one’s will keeps them at bay and they are relatively safe to tread through. But it’s best not to stay too long since the stronger ones can and will snag some threads and even rip clothing just to pull you down.
So by knowing that, the enchantment, soulspeed, is essentially a ward that repels spirits and souls, allowing the wearer to walk along the surface of the sand.
This enchantment doesn’t scare away souls, it only creates a barrier between the boots and the souls, leaving only a thick sandy surface that can be easily tread upon rather than constantly pulled down.
The reason some souls get kicked up when sprinting is that they try to get close, only to get flung away by the enchantment. It’s also this impact and the constant repelling puts the enchantment under high stress, which is then transferred to the boots, meaning the chance of cracking damage comes much quicker than regular boots.
Oh, and one more thing: Soulsoil is just soulsand but no souls have inhabited it yet. That’s why you don’t need soulspeed to walk across it.
Stories have been told by old adventurers, who have braved the soulsand valleys, of skeletons wearing these boots and even empty pairs, shattered, amongst the sand. Even if one’s boots repel the souls, sometimes a simple trip and lead to devastating results.
