The Razor Crest is a beast! So the project was a Japanese Braised Pork…Kakuni. First I started with an amazing piece of Mugifuji pork belly from Canada, from the amazing guys @japanpremiumbeef Then the process was first searing then simmering for 3 hours. Then a second simmer with homemade dashi, saki, mirin, soy, sugar and ginger…another hour there…and the result, these beautiful nuggets. Slapped them inside some rice buns…BAM! It was 40 years ago last month that the legendary band Bad Brains performed at the iconic CBGBs in downtown Manhattan. This mural is across the street from the now defunct venue. Which made me think…a club like CBGBs probably could not survive in the current music world. Firstly, there’s really no such thing as a musical movement, or a genre defining band. Doesn’t exist really. CBGBs was a venue that existed in the right moment in time. Yeah, sure there are “underground” bands that are not a part of the mainstream, but are they going to break out and coin the next musical movement, like for example Nirvana? I don’t think so…but that’s my humble opinion.
