these are. Extremely Good. Like, my friend who doesn't like muffins said these are the best he's ever had and ate two of them. As a person who does like muffins, I would also say these are also among the best I've ever had. They get top marks for ease of making, texture, and flavor.
I did 1/2 cup of brown sugar and 1/2 cup of white sugar, just because I think pumpkin and brown sugar are a great combination. I wasn't super-wprried about the amount of extra moisture involved in the small amount of brown sugar, but to be safe, I put the pumpkin puree in a paper-towel-lined sieve for a couple of minutes while I prepped the other ingredients, to leech out a little water content, and it turned out great.*
