Thinking about Twilight as a horror, the story doesn't need to change at all, just the framing
More focus on when Edward is caught out in his animalistic moments, snarling about the men in Port Angeles; gazing at Bella, torn, mouth open slightly, occasionally having to suck back the venom pooling in his mouth; eyes blazing as he displays his speed and strength to Bella in the meadow, nearly, just nearly letting his mind slip into that of the hunter; sun glinting off his skin, reflecting harshly into Bella's eyes when he moves a certain way.
The Cullens as a unsettling, nearly clockwork imitation of human life. The blank way they enter the cafeteria every day, buy the same food, sit in the same spot, stare at the same corner of the wall, sit for a length of time, throw the food out, head to class.
When Bella visits their house, the clockwork is in motion; Esme is making food in the kitchen that they can't eat, her husband watching over her with a glass of wine he can't drink; Rosalie and Emmett are leaning against each other on the sofa, deadly still, watching the TV but not watching it; Alice and Jasper are slowly and robotically setting the long table in the dining room. When Edward interrupts their clockwork routine, they don't know how to act. Esme is over friendly, desperate to convey a sense of motherhood she lost when she died; Rosalie is angry, impatient with their act, fiercely protective of her cast of family; Alice is just plain unsettling, assuring Bella they are best friends, she's seen it, desperate to get some recognition out of Bella's eyes that she knows this too. Bella, for her part, responds to each of their needs, instinctively protecting herself by pleasing them.
The pack are the antithesis to the Cullens in that they are human incarnate; they are what the Cullens desperately try to imitate but can never achieve. They offer Bella a sense of home, and belonging; they eat together, they play together, they sit and mend clothes together. The sun is the source of life for all the earth, it brings food, love, and warmth to all lives. The moon can only ever reflect the light of the sun - it is, after all, just a rock with the face of a man.
But when Alice comes to Forks, her smell, the mystery of her fake family, their supernatural pull, drags Bella back up into it, away from the protection and influence of the pack, her family. And from there, the horror truly begins
