Salted caramel and dark chocolate are a marriage made in heaven (I’m sure you will agree). Having bore witness to my brother’s copious consumption of gooey caramel-filled chocolate bars week after week this summer, I finally caved in and set about making my own version. These glorious little tarts have a raw chocolate crust, filled with oozing salted caramel and a chocolate mousse that contrasts deliciously against the crack of the dark chocolate topping.
