Recently I came across "aprendamos español". Why is it aprendamos and not aprendemos? Is it subjunctive?
Short answer: It’s “let’s learn Spanish” so it’s technically a command. 
The imperative mood (commands) and subjunctive mood share many similarities especially in conjugation so I don’t blame you for thinking that.
Longer answer: In Spanish most commands are “you” based; tú, usted, and ustedes [and in Spain vosotros]
But, there is another kind of command that’s a nosotros command or “we/us” command that often gets translated as “let’s” commands
aprendamos español gets translated as “let’s learn Spanish”
Hablemos = Let’s talk
Trabajemos = Let’s work
Vivamos = Let’s live
Seamos amables. = Let’s be nice. Seamos sinceros... = Let’s be honest... [or sinceras for all female]
Hagámoslo. = Let’s do it.
Digamos... = Let’s say... / Shall we say... 
I would say digamos is probably the most everyday of these since you can use it as “so to speak” or “as it were”, things like that
Es un tipo... particular, digamos. = He’s a... unique guy, let’s say.
La literatura española en la época “poscervantina”, digamos, es... = Spanish literature in the post-Cervantes era, if you will, is...
You also have reflexive commands; consider things like levántate “stand up” or siéntate “sit down” for tú commands. You can have reflexive nosotros commands:
Levantémonos. = Let’s stand (up).
Sentémonos. = Let’s sit (down).
Hablémonos. = Let’s talk (to each other).
Durmámonos. = Let’s go to bed.
Volvámonos locos. = Let’s go crazy. [or volvámonos locas for all female]
Conozcámonos. = Let’s get to know each other. [you’ll see this in youtube videos sometimes as sort of like an ask me anything or “get to know me” video]
Mudémonos. = Let’s move out. Mudémonos a Canadá. = Let’s move to Canada.
The most common nosotros command that’s reflexive is vámonos which is a shortened form of vayámonos (which no one uses so don’t worry about it). Typically, ir is weird in everything so as a command you’ll see vamos “let’s go” or vámonos “let’s go” interchangeably as a command. 
Even Spanish has no time for Spanish’s weirdness with ir
Side Note: aprendamos could potentially be subjunctive if it were presented in a subjunctive mood; esperan que aprendamos español “they hope we learn Spanish”... So, it can happen, but in this case, it’s a command
