Tiropita (Greek cheese pie)
Most of the ingredients can be found at Sainsbury's. Unfortunately, I don't always find Filo pastry at the local Sainsbury's and that's why I advise you to buy filo from Waitrose. Prep Time: 20 minutes Cook Time: 20-25 minutes Total Time: 40-45 minutes
Ingredients:
1 Kolios Greek feta cheese in brine (package of 400g found at Waitrose)
or 2 packages of Sainsbury's Greek Feta (200g)
3 eggs
1 Sainsbury's Basics Grated Mild Hard Cheese (500g)
Some milk
1 Sainsbury's Basics Salted butter (250g)
1 Jus-Rol filo 6 pastry sheets (package of 270g found at Waitrose)
Preparation:
A square 9 inch baking pan will do. If you plan to use a large square baking pan, I advise you to buy two filo pastry sheets.
Preheat over to 180-190C.
Add feta to a bowl and use a fork to smash and make a paste. Blend and add the eggs to the paste. Mingle with the grated cheese and pour some milk to soften the mixture. Continue mixing until very well blended and creamy.
Brush the bottom and sides of the baking pan with some butter. Use a boiling pan to melt the rest of the butter.
Unfold the filo sheets. Use one sheet to cover the bottom of the pan. Put some melted butter on it and cover again with a new sheet. Use 4 sheets for the bottom.
Pour the cheese mixture into baking pan and spread evenly.
Now cover with the rest of the sheets using melted butter on top.
Use a sharp knife to cut into small squares, diamonds, or triangles.
Bake at 180-190C for 20-25 minutes until golden brown.
