mexican style spiced rice (190c) 🍚 🌶️
serves 2 = 380c
one serving = 190c
spice scale ✿ ❀ ❀ ❀ ❀ (not spicy)
~ vegan friendly | oil free
Tumblr media
ingredients
100g basmati rice ~ 315c
1/4 tsp turmeric powder ~ 4c
1 clove of garlic ~ 7c
1 large green chilli ~ 7c
1/4 tsp sea salt ~ 0
1 tsp tomato purée ~ 4c
1/4 tsp cumin powder ~ 5c
1/4 tsp dried fenugreek ~ 0
5g fresh coriander ~ 1c
method
boil a kettle of water and rinse the rice in a pot until the water is mostly clear then drain
add the rice, water and turmeric into the pot, stir and cook until for about 8 minutes until the rice is mostly cooked through
whilst the rice is cooking chop up the rest of the ingredients ~ drain the rice and set aside, in the same pot add in the chilli, garlic, a little bit of water and the salt
sweat the chilli & garlic then mix in the tomato paste and a little bit more water, stir and cook for a few minutes
add in the rest of the spices and the rice ~ mix together, turn the heat to low and cover the pot
steam for another few minutes until the rice is fully cooked, make sure to stir in between so it doesn’t stick
stir through the coriander before serving :)
HIIIIII i know i haven’t posted in ages oops honestly i haven’t been cooking as much as i used to due to it being very stressful and more time consuming having to measure everything out, count and track but this was super easy to make so i thought i’d post anyways ~
this is definitely not an authentic mexican rice recipe however it is inspired by the tangy flavours of arroz rojos (mexican red rice) ~ it’s quick, simple but has good flavour and tastes great beside taco style meat (vegetarian for me ofc) also similar to my yellow rice recipe ! <3

Broccoli and Kale Couscous
Couscous is a North African dish made from small steamed balls of semolina flour. It is a staple food in many countries in the region, such as Morocco,Algeria, and Tunisia. Couscous is known for its versatility, ease of preparation, and its ability to absorb the flavors of the ingredients it is cooked with. This makes it perfect to pair with kale, as leafy greens tend to lose their moisture as they wilt and get soggy. When added to couscous, steamed kale maintains its flavor and texture. Veggie couscous is also a great source of carbohydrates and fiber, making it a healthy addition to any meal.

Vegan Sources of Omega 3
Omega-3 fatty acids are essential nutrients that play a vital role in maintaining good health. They are important for brain function, heart health, and reducing inflammation in the body. However, many people get their omega-3s from fish, which is not an option for vegans. Fortunately, there are plenty of plant-based sources of omega-3 fatty acids that vegans can incorporate into their…

These Veggie Tacos Will Make You Fall In Love With Mushrooms All Over Again
We all know that mushrooms are good for health. They are rich in vitamins, antioxidants as well as minerals like selenium. But their benefits cannot always make up for their suspicious appearance. Let’s be honest: some of us cannot believe that something that looks like that can be eaten! When cooked right, mushrooms can be so delightful that you will forget all about how they originally looked.…

I know that it's a bit stupid but I don't like the taste of meat since I was a child, so playing a game where someone actually cared if I liked such a common food or not made me feel oddly delighted. Tysm 😊
Aww this is honestly so sweet! I do try to keep dietary differences in mind when coming up with the food options for the game but I'm aware it's not perfect haha. But nevertheless I'm glad to know that!

Something that strikes me as I'm planning on hosting some visiting relatives (BTW if I have any New Zealand followers can you please reblog or comment with details about what type of tea is considered standard or a little better than average in New Zealand?) is how much comfort and joy I've given vegetarian and vegan travelers in the past by just serving them some good tasty normal calorie levels vegetarian/vegan food, as unfortunately that can be hard to come by as a traveler in the US and so several of the people I've hosted were obviously running a calorie deficit because they were struggling to find enough food suitable to their diet.
And, I am not vegetarian! I'm low-key ideologically Not vegetarian! But I also believe that 1. It's immoral to intentionally trick someone else into violating their own morals even if you don't share them and 2. Hospitality means serving people good food that they like and can eat.
I've gotten a lot of shocked responses from people in the past when I would say something like, "This recipe can be made vegetarian/vegan if you swap the meat broth with vegetable broth/swap the cheese for vegan cheese or omit it" and then they'd assume that I must be vegetarian/vegan myself, and not understand why I would care about tracking which recipes could be vegetarian or consider it a valuable thing. Other people have dietary restrictions and sometimes I want to make them something nice to eat! It's shitty hosting to invite someone to Thanksgiving and then have like two things out of twenty they can eat, you know?
