Cinnamon Pumpkin Loaf! (And muffins)
2 cups all-purpose flour, spooned into measuring cup and leveled-off
teaspoon salt
1 teaspoon baking soda
1/2 teaspoon baking powder
3 teaspoons pumpkin pie spice
1/2 teaspoon ground cinnamon
1 and 1/2 sticks (3/4 cup) unsalted butter, softened
2 cups sugar
2 large eggs
1 (15-oz) can of pumpkin
preheat oven to 325
in 1 bowl, mix all dry ingredients in one bowl
in another, mix melted butter, eggs and pumpkin and whisk it together until mostly combined
pour combined dry ingredients into the pumpkin can mix and fold it in
BE CAREFUL TO NOT OVERMIX!!!!! Mix with a spatula until just combined
Butter your pan, or if you want to make muffins, put your cupcake wrappers into the tin
pour your batter into your container of choice
as you wait for it to settle, mix 2 parts sugar 1 part cinnamon and sprinkle it on top of the batter
pop them in the oven, for a loaf, 60-70 minutes and for muffins 30-35 minutes
everyone’s oven is different so always make sure to toothpick test your baked goods and it’s better to undercook something than overcook
