Quick & Easy (boozey) Seafood Soup So this is a quick version of a seafood stew I make, excluding the muscles & shellfish as well as using a boxed organic tomato soup, so no need to stew for hours. Simply mash & heat garlic in EVO, I use a Dutch oven, quickly add fennel seeds, toast, add chopped and cleaned squid, octopus, then salt & pepper. Separately I seasoned & broiled the cod. Once the seafood had about 4 min in the Dutch oven I poured in a 32oz box of @pacificfoods tomato soup, and about 6oz of white wine. Bring to a boil while cod cooks (mine took 6 min), stir, simmer another 3 min then add your herbs to your soup. I'm so happy it's *that* time of year again! I love being able to grab things from my yard (in this case, asparagus, sweet potato greens, cashews, and pineapple sage) to put together for dinner. This chicken breast dish had those things, honey, tamari, red wine vinegar, butter, garlic, and black pepper, all just cooked and simmered together with corn starch as a thickener at the end. Ive been working my butt off, and I got all the gardening short of mulching done! I had @khamubro cut the edge flat, help with the sheet metal grass dam, he also hand mixed some of our red clay into the concrete for the corner posts. @comradb0ne had to help with the sheet metal some, but most of his work was putting the fence up with me. They both did some tilling too. I am so happy to be done with the first stage of the garden this year. @khamubro & @comradb0ne both had a pass with the little Earthquake push tiller. After that it was pretty much me with a garden rake, flat shovel, leaf rake, and a 3 claw cultivator out there shaping them myself. The guys both helped with picking out plants and getting them in the ground. Brown Butter & Grape Sauce over Pan Seared Salmon and Quinoa & Sautéed Sweet Potato Greens, Green Onions, & Garlic My take on a recipe by @blueapron where I subbed out kale in favor of sweet potato leaves (yes sweet potato vines are edible, no potato vines are not), I used cashews in place of almonds, red wine vinegar instead of rice vinegar, and I added green onions, lemon zest and honey to my greens in the cooking stage (and onion greens as a topper). I also cooked the grapes/cashews over heat a few minutes. Instead of farro I used Quinoa ( #glutenfree ) with a few added splashes of tamari, but most importantly, I ditched the tilapia for #salmon 🤤 Mmmmmmy favorite! 😋 This is one of the best dishes I've ever made.
