Chicken Carbonara
Chef’s Note: Thirty, maybe forty minutes total?

Ingredients
12 oz fettuccine
4 slices bacon
3 garlic cloves, minced
1 boneless skinless chicken breasts, cut into strips
Kosher salt
4 large eggs, beaten
3/4 cup shredded Parmesan
3 tbsp dried parsley
1 1/2 tsp onion powder
1 tsp dried oregano
1/2 tsp dried basil
1/2 tsp dried thyme
Instructions
0. Cut your chicken breast into strips (across)
1. In a large pot of salted boiling water, cook pasta according to package directions until al dente. Drain, reserving 1/2 cup pasta water, and return to the pot.
2. Meanwhile, in a large skillet over medium heat, cook bacon until crispy. Transfer to a paper-towel lined plate.
3. Add chicken to the skillet and season with salt. Cook, flipping halfway through, until no longer pink, about 10 minutes.
4. Add minced garlic and cook until fragrant, about 1 minute. Turn heat to low.
5. Crush the bacon into pieces. Return bacon to the skillet. Add cooked pasta and toss until combined.
6. In a small mixing bowl, beat the eggs
7. To the eggs, add Parmesan, parsley, onion powder, oregano, basil, thyme, and a dash of salt. Stir until combined
8. Pour egg mixture over pasta and toss until coated. Add a couple tablespoons of the pasta water until creamy.
Add more pasta water by the tablespoonful as necessary.
9. Serve warm

November 2022: My National Day Of Mourning Side Dish
I’ve mentioned before that, for our National Day of Mourning (aka Thanksgiving) dinner, my queen usually gives me a special ingredient & tells me to make it the star of my side dish. This year, I chose the ingredient. We had a lot of nice sweet potatoes this year but we also have a lot like the one below so I decided to make them the star:

I wanted to do a savory sweet potato dish & used this recipe as a starting point:

I largely stuck to the recipe but here is how I modified it - 
I replaced the 1/2 teaspoon of chili powder with 1/2 teaspoon of harissa seasoning. I broke the 1/2 teaspoon of paprika out into 3/8 teaspoon of regular/sweet/Hungarian paprika & 1/8 smoked paprika. I changed the 1/2 teaspoon of onion powder to 1/4 teaspoon onion powder & 1/4 teaspoon of garlic powder.
I was concerned about getting the sweet potatoes done all the way through so I cooked them on a lower rack for 20 minutes (Checking & flipping every 10 minutes). I then moved them to the middle rack for browning for 20 minutes (Checking & flipping every 10 minutes). I also melted 3 tablespoons of butter & mixed that with what remained of the herbs & olive oil used to coat the potatoes. I used that to baste the potatoes at the 4 ten minute checks mentioned above. In hindsight, I would have cut the sweet potatoes into large pieces and when I make this dish again, and I will, I’ll do that:
