[I see people wolf them down all the time. All right, what are we making first, Chef? We're gonna make the walnut patties. We got some pretoasted walnuts, nutritional yeast, Hungarian paprika, ancho chili, Morita chili, and cumin.]
tofu scramble :-). It's so hot you can see the steam coming off in the third photo 🤗. I used tofu nutritional yeast kale tomato a little bit of oil liquid aminos and garlic.
2 × large courgettes, cut in half and then into wonky triangles
8-10 cloves garlic
5 tbsp good quality extra virgin olive oil
Salt and pepper
2 × 400g tins of pre cooked organic butterbeans + their stock (the water in the can)
For the cashew cream, blend:
1 cup of soaked cashews or sunflower seeds
3 tbsp nooch
Juice of one lemon
1/2 tsp salt
Ground black pepper
2 garlic cloves
Around 60-80ml of water for blending consistency
To serve:
Crunchy nutty breadcrumbs (1 slice of bread and 1 handful of almonds whizzed up in a blender, fried in olive oil, salt and garlic powder until crispy. Let rest on a plate lined with kitchen roll until ready to use)
Heavy cream, butter, pasta water, parmesan, spices, nutritional yeast.
Used a bit of heavy cream for the sauce. Normally I stick to the traditional method of butter, pasta water, and parm, but I have the heavy cream (for a different recipe) and it's too expensive to let go to waste, so pasta every night until it's gone I guess.
Creamy vegan sausage-pasta
Impossible Italian sausage, shallot, garlic, spices, marinara, tomato paste, heavy cream, kale, olive oil.
I don't like Italian sausage. Whatever the spices they use in it don't mix with my palate. I'm so mad because it was supposed to be slices of the sausage, trying to slice it raw didn't work so I did crumbles. I can't pick off the crumbles so now I won't it and I used my favorite pasta sauce and it's so good I should've split it. Half wit/ half wit out.
