I added some sliced onions to the marinade and then caramelized those to serve with the steak along with blue cheese butter, freshly baked bread, lettuce, and tomato.
With the leftovers I made an appetizer of toasted bread bites, blue cheese butter, steak bites, and chimichurri.

Postcards from Snagglepuss (Minnesota State Fair edition)
Follow the crowds--and the smoke, for that matter
Perhaps one of the more fascinating(?) sights of the concessionaires at the Minnesota State Fair would have to be the smoke emanating from the vent in the Butcher Boy London Broil Sandwiches stand in a small plaza just off Dan Patch Avenue between the Visitor Plaza and the Grandstand as eye of the round broils away in service to such exceptionally hearty sandwiches--which, when you add barbecue sauce, can get to be a little on the messy side. Hence, make sure to have moist towelettes on the ready.
And the sight of such grilling smoke, believe you me, is enough of an attraction of its own, almost on a par with the fog--which certainly was enough to have Huckleberry Hound chuckling. Especially as sunset had passed and that rather wonderful sensation known as "the blue hour" had just made itself evident, thereby making the display a little more amusing.
And who could argue with the sheer delectibility of such overly tasty and juicy London broil which could make the roast been sandwiches at Arby's look cheap by comparison (though, when I go to Arby's, if at all, I prefer the French Dip sandwiches)?
As if that weren't interesting enow--
"Hello, Snagglepuss ... hello, Huckleberry Hound ..."
"Uh, Top Cat--", remarked Huck.
"Remember, you can call me TC, boys."
"Greetings ... and salutations, TC!" remarked I. "So how did you and clowder manage to make your way here?"
"Road trip, Snag; road trip. I suppose you're aware where I picked up a vintage Studebaker Avanti and managed to get it rebuilt ... and is it any wonder I can accommodate the entire clowder; I assume you know everybody in same ..." (As a matter of fact, the whole clowder--Benny the Ball, Choo-Choo, Fancy-Fancy, Brain, Spook and TC as well--were feasting on London broil sandwiches. Fancy-Fancy, for some reason, could not resist waxing almost poetic over the same, as if he were in the company of some romantically-inclined feline back in Hollywood.)
"I just have to admit there, Snagglepuss," Choo-Choo remarked between bites of his sandwich, "that you certainly manage to get around to the Minnesota State Fair every year."
"Taken as a complement, Choo-Choo," said I.
"Snag, you can just call me Chooch."
"Though I do have to acknowledge," TC was quick to point out, "that Chooch can tend to be a little on the sophisto side of things; it's just his nature, I have to admit."
"I can accept as much," Huckleberry Hound was quick to note.
"Like, Huck, Snag," Spook was quick to add, "with TC around, I have to admit things can get somewhat crazy by turns ... and doesn't this London broil at this time of the evening seem rather tasty?!"
"Spook," TC remarked, "I would have to agree, though oftentimes, back in La-La Land, we can't help but get fond of the delicatessen on occasion. Uniting us with our old 'home patch' back in Brooklyn, you might say."
You can imagine how deep the conversation went from there, with as much TC as his fellow clowder members. Lasting until pretty much the closing of the Fairgrounds just before midnight.
