Chocolate Cups from Free2bFoods
On October 16th, I entered a giveaway on Instagram sponsored by @Plant-based snacks and @Free2Bfoods I won! I received a box of treats From the Ground Up on October 31st, just in time for Halloween. On November 17th, I received a box of treats from Free2b Foods. We received four bags of minis and two each of their full size chocolate cups. We’re very excited! Thank you so much.

Chickpea Coconut-Curry
2.5 Servings
Ingredients:
Veg. Oil (a few tbsp)
Garlic (5 cloves)
1 large Onion of your preference
2 Medium beef-steak tomatoes (400g)
Garam Masala (1 tbsp)—or Curry Powder 1 tbsp
Cumin (1 tbsp)
Paprika (1 tbsp)
Salt (1 tbsp)
15oz Chickpeas
14oz Coconut Milk (Full Fat)
Juice of half a lemon—or a whole lime*
Maple Syrup (a few tbsp or measure with your <3)
Notes:
*just a tip: squeeze over a sieve to catch the seeds and pulp
you can bulk this up with any vegetables you like, I find adding 1 lb of fresh spinach a very easy and delicious addition, I also recommend a splash of pickle juice if you have some available
This is the flat bread recipe I've enjoyed pairing this meal with but to keep it simple It's delicious with some rice as well
Supplies:
Cooking pan about 11”+ wide
Spatula/cooking spoon
Strainer
Sieve
Knife
Cutting board
Can opener
Tablespoon measure
Instructions:
1. Chop your garlic, dice your onion and dice your tomatoes—put the onion and garlic together and then the tomatoes in two separate bowls, prepare you’re ingredients and supplies so they are in reach when you’re ready for them
2. Sautée chopped garlic and diced onion in a few tablespoons of high heat oil on medium heat until sweated through.
(Now would be a good time to start washing and cooking your rice if you would like to have that as a side)
3. Add in the diced tomatoes, and all the seasonings, stir lightly and let sit for about 15 minutes, until tomatoes soften to mush
4. Drain your chickpeas (I like to give them a little rinse but that’s not necessary) and add them to the pan, pour in the can of coconut milk. Roll the lemon or lime on the counter applying pressure with your palm, this helps release the juices from the pulp so to get the most out of your squeeze. Now add in your maple syrup and just let it simmer until the chickpeas reach your desired softness.
