Flapjack and Evelyn
Okay, since some people still seem confused about this, here is how the episode spells out why Belos said "Goodbye, Evelyn" when crushing Flapjack:
Setup: "CALEB!"
"Caleb!?"
In the previous episode, Belos looks at Flapjack and, enraged, calls out the name of his dead brother.
At this point, the thing Belos associated with Flapjack was his dead Brother, "Caleb". But that will change over the course of the next episode.
Setup: The Haunted Hayride
"Local lore suggests that the Brother's Wittebane met a real witch from another world."
"Her name was Evelyn."
Masha gives us her name here.
"And the older brother was spirited away!"
"She dazzled him with magic and visions of a strange, yet beautiful place."
Here, the "dazzling magic" is represented by Flapjack. In a more literal reading, this could mean that Flapjack was a gift from Evelyn to Caleb.
After this, Belos is no longer thinking of Caleb when he looks at Flapjack. He's thinking of Evelyn.
Pointe: Goodbye, Evelyn
"But then again, I don't care what you want."
"Goodbye, Evelyn."
Flapjack is Flapjack, not Evelyn reincarnated. But as a gift from her, Flapjack does carry her memory.
Now look back at the context of the Haunted Hayride. To Belos, Flapjack represents the "dazzling magic" that Evelyn used to "bewitch" his brother and turn him against Philip.
And Belos wants to destroy Flapjack, destroy the magic that "took his brother from him" and also destroy the memory of Evelyn.
So he does.
