I had some coconut milk to use up and was looking for a good Christmas cocktail, so this recipe really felt almost heaven-sent. Half-Baked Harvest's cocktail recipes are a bit elaborate, but that effort rarely disappoints.
I halved the syrup and made 2 actual cocktails, one for my mom and one for me. I ended up using 1/4 cup each vodka and Kahlua, 1 teaspoon molasses, and 2 tablespoons or so of the syrup, which was not quite cooled, but close enough after a brief stint in the freezer. I garnished with a cinnamon stick and dash of nutmeg each.
The syrup is definitely the best part of this recipe, and well worth making from scratch. I was so impressed by how much flavor it packed, truly a beautiful profile with a very light sweetness to it.
The drink itself was pretty good, kind of like a white russian crossed with an espresso martini, all with a honey vanilla chai twist. Definitely heavy and a little too sweet, but you do get such a nice richness of flavor here with both the syrup and the molasses. Not for everyone, certainly, but I enjoyed in the Christmassy moment.
