Sourdough Discard Adventures: Brownies

After reading Farmer Boy, I am extra glad I bought that Little House cookbook from a garage sale this summer. Never has a book made me hungrier.

I am delighted to report that the recipe for Birds' Nest Pudding sounds just as delicious as Laura's description made it sound.

This summer I was fortunate enough to find a wild yeast bloom on one of my chokecherry trees. I harvested & dried those chokecherries, then soaked them in water til they fermented. Then I used that levain to jumpstart a buckwheat/sweet white rice flour gf sourdough starter. (The picture is literally day one, now it’s so bubbly it looks like hot air)

((If you don’t know what hot air candy is, oh my god run don’t walk to your nearest fancy candy store and try some NOW))

But the thing is? Right after I got this starter established, I needed to go overseas for 2 weeks and Mr61below already had far too much on his plate, so I put it in the fridge so he’d only need to feed it once. But the cold really did a number on it, and it took me two whole weeks to get it bubbly again. I was legit concerned I’d gone and fully killed it. But, now it’s happily churning away again, and this is my second loaf made with this baby.

Experiments in baking.

Brazilian cheese bread. Gluten free, made with tapioca flour. Not bad for a first attempt.

Next time, I’m making smaller buns. They’re a little big so the middle is slightly underdone? It makes for a gummy texture. But delicious!

tumblr keeps showing me fresh baked bread, so I'm going to cave and try to bake. Last time I made bread was early lockdown, so wish me luck, I guess.

In brains are so stupid sometimes department: I baked some cinnamon scrolls and took the pan out of the oven, placing it on the stove to cool.

I tucked the oven mitt back on the handle. Then, looking at the pan, I thought its handle was sitting a bit close to the edge, and I should move it further back on the stove. I reached out to the pan with my bare hand before remembering I just pulled this out of the oven a couple minutes ago.

I did not burn myself, but damned if it wasn't a close thing.

Today I made marshmallows from scratch!

I will update this post tomorrow morning whether they set or not!

I made the chamomile tea cake that someone on here torrented from the NYT. Thank you friend.

My toxic trait is buying muffins at a coffee shop because I deserve a little treat and then immediately thinking “oh. I coulda made these better” every single time.
