I understand the comedic appeal and angst potential of Vex and Percy being taken by surprise by Gwen being a tiefling, but character-wise I think they had to be prepared for it as a possibility. Vex researches things to understand them, she buys a book about the Raven Queen before they go to the tomb and has memorised it by the time they go to the Feywild, in the year time skip she builds up her library and specifically looks into Orcus, and in both cases it's a way of making sure they're more prepared for what lies ahead of them. Meanwhile, after Percy realised his deal was for real he's been deeply pragmatic about what that means for him. Also, Zahra and Vex were pregnant at the same time so were absolutely in contact with each other.
I don't see them not doing research into the impact their lives might have on their babies, especially considering that Vex was very, very likely pregnant during the Vecna fight. And I don't see Percy not at least mentioning the possibility of a tiefling de Rolo to at least Cassandra, Vox Machina and the Whitestone Council to stop any accusations of infidelity pre-emptively and make sure any blame is on him not the baby (especialy given all the judgement Vex went through in Syngorn). He wouldn't be able to stop all gossip but being forthright about it would make it less of a big deal.
Also there is still comedic potential in them being really stressed over Vesper's pregnancy, Wolfe and Leona being high risk because they're twins, then, as half-elves age slower than humans, there probably wouldn't have been the same age-related risks with the final two pregnancies so they were able to relax and start thinking they got through all five completely fine, without all the research being needed - only for the very last one to catch them out
